This is my FAVORITE Asian slaw!! I usually use another recipe that calls for sugar for the dressing. I’ll try honey next time. Now, for the vinegar: seasoned or unseasoned? So glad you told readers to TOAST that ramen & almonds!! Ten times better that way!
Love the salad!!! Made a few adjustments to my taste: crumble the ramen noodles and lightly brown noodles and almonds in 1 tbsp butter; replace 1 tbsp evoo with 1 tbsp sesame oil; replace honey with 1 tbsp sugar; add 1 tbsp or maybe a little more soy sauce; didn’t need or use salt or pepper. Forgot to add sesame seeds.
I always love a crunchy Asian salad at pot-luck’s.
If I made this for my work lunches (I would likely add a protein, such as chicken), how long will it last in the refrigerator?
I found this recipe while searching for potluck ideas. Being from the southeast (land of cole slaw and potato salad), I had never even heard of this. From now on, it will go with me to every potluck, and into permanent rotation in my own home. Cannot express how much this stuff ROCKS! It’s quick, healthy, yummy, and has the most perfectly crunchy texture. I would give this one more than 5 stars if I could.
You never said toast the almonds in the instructions… the vid yes but I jump to recipe being somewhat of a cook. Knew to do it ) and it’s solid. Add the line to toast em tho for rookies.
Hi! It’s actually there in Step 1 of the recipe card: “Crumble the ramen noodles onto a baking sheet and spread them in a single layer along with the almonds. Bake for 5 minutes” Hope this helps!
Hi Susanne, I stopped including sodium info because it can vary so much depending upon what products you used, and I found a lot of conflicting info online, so ultimately I didn’t feel comfortable publishing it because sometimes it wasn’t even in the ballpark. If you’d like to calculate it yourself, there are lots of free tools online (myfitnesspal.com is popular). I hope that helps! Also the dressing already contains low-sodium soy sauce.
This is a question before I try this–never did a ramen salad before as wasn’t really sure what to do with the noodles–you eat them uncooked? just toasted in oven?
This is SO delicious and refreshing! Full of flavor and texture! Followed the recipe except toasted the ramen, almonds and seeds in a pan instead of the oven.
Kind of blah for me. I followed both recipes except I subbed fried wonton strips for ramen noodles and I didn’t have sesame seeds so I used roasted sunflower seeds.
The dressing was too vinegary so I added more honey and mandarin juice but it still didn’t taste like a good dressing at an Oriental restaurant.
I love this kind of salad and it was very refreshing. I’d give it 3 1/2-4 stars.
I’m sorry to hear the recipe wasn’t to your taste, DJ. I know it’s disappointing to try a new recipe and not enjoy it. I (and many other readers) have enjoyed it, so I really wish they would’ve been a hit for you too!
Made this just as the recipe called out… DELICIOUS! All the flavors work perfectly! This will be on my potluck rotation and husband’s lunch rotation for sure! Thank you!
Have made this many times and enjoyed it. Made it for a big family gathering and they actually took the balance of it in the car on the way to the airport and ate it on the way. What a tribute to a great salad. Thanks for the recipe. I wouldn’t add another thing to it!
It was ok at best. I guess giving the great reviews I was expecting something REALLY REALLY good. Followed instructions to a T. Glad I like edamome (?) because could only find large bag in frozen food section if store.
I’m my own worst critic.
I’ve cooked for years and usually impress myself if the dish turns out great. Unfortunately, this one didn’t make the repeat list

HI Pamela! It would last up to 3 days. Enjoy!

Can you use mandarin oranges in 100% juice and then skip the rinsing? Never heard of this weird salad, lol, I gotta try it!
Hi Amy! I guess you could but make sure to still drain it. Enjoy!
Yum!
Thank you Margaret!
Can you tell me sodium / nutitional value ? Any suggestion if i need lower sodium – maybe a food switchout for soy ?

Has anyone substituted toasted sesame oil for the olive oil? I feel like it would be amazing.
That should work!
Delicious salad! Light, flavorful, easy, and perfect for a summer dinner. Thanks for all the great recipes you share!
Glad to hear you enjoyed it, Ann! Thank you!

Hi Frances, you’ll see in Step 1 of the recipe directions, that you’ll be toasting them. Enjoy!

Glad to hear, thank you Judi!
Made this over a year ago and am still getting requests to bring to work potlucks!
Love to hear that, N! Thank you!
Are you using plain (no flavor added) ramen noodles? This looks absolutely delicious, I know my family and I will love it 🩷
Hi Rena, you’ll use ramen noodles without the seasoning packet, yes. Enjoy!
