Turned out like every other recipe I’ve tried in the past. They definitely aren’t bad, but I didn’t notice anything outstanding about them either. Oven was screaming hot, adjusted the rack to a lower position, fries were spread out evenly on pan… had to broil a few minutes toward the end to get them to crisp up at all, but they still got soggy as they cooled. They soaked, they dried, dried, dried… still mediocre results. Seasoning was ok; a little too much garlic for our liking. Glad everyone else had such great results with this recipe. I think I’ll just stick to pan fried potatoes instead.
I’m sorry to hear that, Bobbi. The amounts, flavorings and timing have worked well for myself (and others) so I wished it would have been a hit for you too! I know it can be so disappointing to try a new recipe and it does not turn out for you.
Perfect! You don’t even have to be super conscientious about the steps. I cooked in an oven air fryer at 450 for 20 mins, then 400 for 10 more. Hubby is groaning in ecstasy while I write this. It’s the recipe for fries I’ve been looking for. Thank you so much!
Way too salty! I can’t believe you got so many stars! I followed the recipe exactly and even used a lower oven temp. These were burnt beyond recognition even after I lessened the cooking time by 1/4. I am a baker by trade. I read your entire content. Not impressed, but would be interested in learning more about how this works for you.
I’m sorry to hear you had trouble with the recipe, Robin. Did you use kosher salt or table salt? That makes a big difference! It sounds like maybe your oven runs hotter than mine, I would definitely watch them closer to make sure they don’t burn.
This recipe works! I have always ended up with soggy/soft fries when baking them in the oven at home, which never really felt like fries. But these were crispy, held their shape, and felt like true fries! I think soaking them in the hot water first made all the difference. :) I’ve never commented on a recipe before, but I thought this one was worth it! Thanks!
The instructions for the heating part wasn’t clear so l boiled them for 7 mins. Then followed the recipe. Absolutely the hit of the dish. Did them with left over roast shredded in gravy and heated in pan. Then made toast, heaped on the meat and gravy. Surrounded by fries, omg.
Thank you for this great easy recipe.
WOW!! My husband and I made these fries and they are unreal. My husband goofed on a few steps (rubbing the water completely off) and they still turned out phenomenal
The recipe itself is great. However, the treatment of the pan just allows for the fries to stick to them. I tried it again while using parchment paper and another time using foil. Parchment worked fine, but they didn’t crisp how they should. The foil was the best option because you could oil the foil and the fries didn’t stick. Additionally, it’s best to lay the fries out on a tray and blot them dry as best as you can and let them air dry for another 10 or so minutes for an easier cook
Hi Nick, glad you enjoyed the recipe! I’ve not had a problem with them sticking to the pan I use, but glad you found another method for the pan you use.
Hi Tegan! Yes, you can! We have the directions to freeze them in the blog post under the “Refrigerator and Freezer Storage Tips” section. Hope this helps!
So glad you enjoyed them, Sydney. We covered this a little in the blog post: “Spread the fries in a single layer on a parchment-lined baking sheet, and place them in the freezer until solid. Transfer the frozen fries to an airtight freezer-safe storage container for up to 3 months. Reheat from frozen as directed above, adding about 3 or so extra minutes to the cooking time. How long you bake frozen French fries can vary, so keep an eye on them.” Hope this helps!
Beware of this recipe – it does not work at all. I followed instructions to a T and the fries actually needed about 1 hour and 30 minutes of cooking at 450, not 20 minutes like this recipe calls for. Pretty disappointed but learned my lesson about trying internet recipes. Wasted over 2 hours on this.
I’m sorry to hear you had trouble with the recipe, Sarah. I know it can be so disappointing to try a new recipe and it does not turn out for you. It has worked well for myself (and others) and I wished it would have been a hit for you too.
Hi Candy, I’m not sure how long these can sit and soak. Another reader did her’s up to 30 minutes. I normally do the 10 minute soaking. If you decide to try it out, let me know how it goes!

Surprisingly good for baked fries.
The key was a well-written detailed recipe like this.

The first fries I’ve ever enjoyed w/o some kind of dip. Yum and all you promised!
Yay! Thank you Marianne!
Have been making these fries for quite some time now and they never disappoint, my family of five devour them every time, thank you for the recipe
Makes me so happy to hear, thank you Robert!
Wow, bookmarking this. Usually homemade fries suck. These did not. Reminded me of 5 guys. Thanks so much
Glad you enjoyed them, Luz! Thank you!
Good taste and yummy recipe

So glad they still worked out for you, Tony! Could you tell me which step it was in the recipe card that wasn’t clear for you? Thank you!

Any thoughts on pre-cutting the fries and storing in freezer for future meals? Would I add anything to them before freezing?
Hi Tegan! Yes, you can! We have the directions to freeze them in the blog post under the “Refrigerator and Freezer Storage Tips” section. Hope this helps!
Great recipe! Followed exactly except for a quick pass under the broiler for a little more color! No leftovers!
Thank you Nancy!
I can’t get enough of these fries! So good!!
Thank you Laura!
Love these fries! To make frozen, do you cook them entirely and then freeze and reheat or do you leave uncooked and freeze?

Can I cut up potatoes and store them ahead of time? Or will that affect their consistency and crispness?

I love this recipe! Its my go-to for oven fries! Thank you!
Great to hear, thank you Katie!
