• I wanted something simple and quick to make for dinner tonight and I discovered your page. It’s great when you have all the ingredients on hand. Thank you for this recipe!5 stars

  • This recipe is definitely a keeper. I made it for myself and a friend, and used mushrooms along with the bell pepper and onion. Delicious! I ate leftovers for two more nights. It went really well with salad and corn on the cob. I even froze some of it for later.5 stars

    1. Hi Lee, this recipe is really meant to be a way to use up leftover chicken. But we give 4 different methods and about 9 recipes within the post on how to cook the chicken. Hope this helps!

  • I’m glad I tried it! My daughter has always been a VERY picky eater; crazy kid doesn’t even like typical kids dishes or those smothered in cheese. This is the first food review I’ve ever given… when my daughter ate the entire thing and gave it a thumbs up I couldn’t believe it. To reheat I preferred using the oven on Low Broil, and so did my daughter. Winner, winnner, chicken… Quesadilla!5 stars

  • These look sooo good and I’m definitely going to try them. One question, could they be made in the air fryer?5 stars

  • You can also use low-carb whole wheat tortillas (Walmart has them in all sizes) to greatly bring down the net carb count for those of us who are low-carb only.

  • Just what I was looking for! I had about this much leftover rotisserie chicken, half an onion, and a red pepper that was approaching it’s “best by” date. :) All I needed from the store was tortillas and cheese. Came out great! I did use larger tortillas, I’d say 8 inch ones, and stuffed them to make three, which is fine because I was cooking for three. A tip is that an 8-ounce package of shredded Mexican cheese blend saves needing two types of cheese and the time grating.5 stars

  • I made your recipe using chipotle powder and chili powder. Also sautéed crushed garlic with onions. I had some Tostitos medium Mango salsa in the fridge so I added it to the quesadillas I the pan. Superb and delicious was this recipe.5 stars

  • Come on people, read the recipe! The ingredients list calls for COOKED chicken, shredded or diced. For novice cooks, each ingredient will tell you, if necessary, how to prep it for the recipe (i.e. 2 cups cooked chicken. 1 onion chopped, etc, etc). If it doesn’t call for “cooked” chicken, it will include a cooking suggestion in the recipe.5 stars

    1. Hi gcraig! Thanks for your feedback, also you are correct that we try to be very consistent with how we write our recipes and if it doesn’t call for cooked (chicken in this case), we will give those instructions or link to where it can be done. Hope you enjoyed the recipe!

  • Outstanding. My family asks for this all the time and know it’s on the rotation after a Costco chicken dinner. I cook the veggies and add the chicken for a few minutes just to warm it up. Fabulous.5 stars
