Just delicious! Warm, comforting & filling! Very generous portions. I had such a craving for potato soup, but I’ve been dieting and really didn’t want to blow it to pieces. I searched for lightened up potato soup recipes and found three of them were well rated and looked good. This recipe looked to be the best of the bunch nutrition-wise so I gave it a try and I’m so glad I did! It certainly satisfied my craving and without heavy cream! Definitely a keeper! Thanks for a great recipe.
This was delicious – best potato soup I’ve made. I did substitute half and half for the evaporated milk – perfect for a cool fall / winter night. Thank you for sharing this recipe!
Tried this recipe tonight… I think I must have done something wrong since it turned out a bit orange (maybe a bit too many carrots? lol) but tastes AMAZING! Will happily make this many more times in the future, thank you!
Another delicious recipe! I was short on time so made this on the stove top in my Dutch oven and it was wonderful. I had never used the yukon gold before and so glad I tried them!
Hi Lee! While you can use almost any variety of potato for potato soup—including russet potatoes, red potatoes, or Yukon gold—Yukon gold potatoes far and away have my vote for producing the creamiest potato soup. Hope this helps!
Erin- this was beyond spectacular! I followed the recipe precisely, despite some concern about the evaporated milk. Concerns gone. You REALLY know what you’re doing and I so appreciate you! I did buy your first book, and will likely buy the second! ❤️
This soup was delicious! My son ate three giant bowlfuls. I cooked the bacon first and then sautéed the onions in the drippings (and butter) and also sautéed the rest of the vegetables before adding them to the crockpot. This probably affected the healthiness factor somewhat, but boy, was it good! I’m making it for the second time in one week today.
Delicious, filling, easy, and used ingredients I pretty much always have stocked. Yet another amazing recipe from Well Plated! Thank you Erin, I am HOOKED on your recipes!
I absolutely loved this crockpot potato soup! I did add some cooked bacon bits and shredded cheese before serving, which made it even better. The soup was smooth and flavorful, and I appreciated how easy it was to prepare. It’s perfect for lazy weekends when you want something warm and satisfying. Thank you!
My kids aren’t always excited about soup, but they liked this one because of the potatoes. I added extra shredded cheese on their bowls and extra bacon and they loved it. Everyone is happy with this one. Thank you!
I love using the crockpot on busy days, and this soup is definitely one I’ll make again. I didn’t have to spend much time in the kitchen, and the whole family enjoyed it. My husband especially liked how hearty it was. Thank you!
Such a comforting soup! I didn’t have much time, so I threw everything in the crockpot, and it did all the work. It’s creamy, warm, and perfect for a night in. I’ll definitely be making this again.
A delicious and satisfying soup! I’m a vegetarian so I used vegetable broth. Love the tangy kick of the Greek yogurt and cayenne combo. Two yums up!!
So glad to hear, thank you Trish!
Very good!
Thank you Chelsey!
I do not have a large crockpot. How could I make this on the stove?
Hi Kathy! I don’t have the stovetop version but I have something similar that may help guide you: https://www.wellplated.com/potato-leek-soup/ Enjoy!
I don’t use a 6 quart Crock-Pot for mine. I just put mine in a standard 3-4 and it does well
Great to hear! Thank you for letting us know, Jenn!
Very flavorful, the cayenne pepper gives a nice kick. It’s a keeper
Thank you Julie!

Carrots will definitely do that! Glad you enjoyed it Victoria!
If I double this batch can I use the same size Crock-Pot still?
Hi Jennifer! We’ve had other readers say they doubled the recipe with great success. You’ll need to make sure your crockpot is 6qt or larger. Enjoy!
Another delicious recipe! I was short on time so made this on the stove top in my Dutch oven and it was wonderful. I had never used the yukon gold before and so glad I tried them!
So glad it worked well, Alicia! Thank you!
Can you use other types of potatoes?
Hi Lee! While you can use almost any variety of potato for potato soup—including russet potatoes, red potatoes, or Yukon gold—Yukon gold potatoes far and away have my vote for producing the creamiest potato soup. Hope this helps!
Hi Erin! I do not have cornstarch, is flour a good substitute? Or any other suggestions?
Hi Rachel, flour should work. Let me know how it goes!
I’m making this soup in a couple of days, looking forward to it. Just wondering if it would be okay to shred the carrots instead of dicing them.
Hi Beth, if shredding they will be cooked faster than intended. Let me know how it goes!

Absolutely delicious comfort soup for a cold January night. Perfectly seasoned and textured. This one is a keeper for sure.

I never cook but I wanted soup like I got at a sandwich shop. Tried this and was BETTER. Am about to make this recipe again!
