YOUR favorite recipes of 2016!
Of the 150+ recipes I posted in 2016, these 16 stood out among the rest. I can’t tell you how much joy it brings me to think of these recipes shooting invisibly through the internet to your computer or phone, then BOOM. Some minutes, measuring, and inspiration on your part later, they come to life in your kitchen. It’s cosmic, humbling, and delicious all at the same time.
I’ve been blogging nearly five years, and it still astounds me that the recipes I post here are made by real people, spending their real time and real ingredients, every day. I take the fact that you invest your time and resources in making my recipes very seriously, and I want you to love what I post. Seeing these recipes succeed and hearing from you after you’ve tried them means more to me that I can say.
Thank you for trying my recipes, for sharing them with your family and friends, and for making this site (and thus, my job!) possible for another year.
I’m already hard at work cooking up more goodness for you for 2017, but before we turn the calendar page, let’s take a look back at your favorites from 2016, including comments that you had to share.
Blender Banana Oatmeal Muffins – More than 1.3 million views, 750,000 repins, and 300 comments!
I don’t bake. But when I saw that this was just like making a smoothie, I decided to try it. No fault muffins – fabulous!! I have tried various combos now with apples, carrots etc, always great. Best thing, my 6 year old knows how to make them now. Fresh muffins every week. This has turned our snack life upside down ;) – Joanna
Healthy Strawberry Oatmeal Bars – I never comment on recipes. That said, I logged back onto my computer after making these bars, because I simply had to tell you how awesome they are. I didn’t even do the glaze—they’re plenty sweet, as is! And I just plain love them. Even better— my kids both love them, too. Many thanks for a fabulous recipe! :) – Debbie
Slow Cooker Broccoli and Cheese Soup – We made this last night for dinner and I ate a bowl for breakfast. If that doesn’t tell you how good this is I just don’t know what does! :) This is a keeper! – Annie
Harvest Chicken Skillet with Sweet Potatoes, Apples, and Brussels Sprouts – I made this last night. YUMMY! I then told my husband that I am starting whole 30 on November 1st and tried to explain it to him. His response was “If this is what I get to eat I am in.” He loved it as much as I did. Even better he got leftovers for lunch. Thank you for the tasty, colorful, beautiful meal last night. – Stephanie
Slow Cooker Turkey Quinoa Chili with Sweet Potatoes – I found this recipe a few months ago, and I can’t tell you how many times I’ve made it since! I’ve sent it to all my family and friends, and we are all obsessed with it! … It’s pretty darn amazing. I even shared the recipe with a lady in the grocery store when she asked what I was making!! I can’t wait to try more of your recipes! <3 – Jessica
Crock Pot Baked Potatoes – I can happily report that I made this dish and it may become the only way I will be making baked potatoes from now on…I put on potatoes in the morning, went to work at my cake studio and when I got home all I had to do is to prepare toppings…Thanks Erin. – Joanna
Lemon Layer Cake with Lemon Cream Cheese Frosting – I made this for my daughter’s first birthday party, and luckily made 2 batches. There wasn’t a single piece left, and I gave the recipe to 4 people! So light, and perfectly described as sunshine- just the right amount of lemon. Thanks Erin! – Rachael
Crock Pot Low Carb Lasagna – Erin, I rarely write reviews beyond giving a 5 star rating! This was the best lasagna I have ever eaten or prepared….Thank you for taking time to recreate this dish until you got it right. It was PERFECT! – Sarah
Copy Cat P.F. Chang’s Vegetarian Lettuce Wraps – Oh my lanta. I don’t often leave feedback on recipes I found online, but I have to tell you how freaking impressed I am by these lettuce wraps. The appetizer was always my fav at P.F. and since going meatless a couple years ago, I pretty much resigned to the fact that I’d never enjoy them again. I made them tonight and… Wow. Just wow. Chocolate Chip Paleo Zucchini Bread – Saw this on Pinterest and made it half an hour later. Lol. They came out very moist and delicious! I am constantly craving chocolate, so this curved my sweet tooth beautifully. I liked that addition of zucchini and how it wasn’t overly sweet. I’ll have to test out your other recipes now ;) – Morgan
Banana Bread Overnight Steel Cut Oats – I ate this again this morning and have everyone at work questioning me about what I’m eating and how can I eat it every single day? This banana recipe is wonderful. I don’t remember ever eating the same food every day before, but each time I have my oats they still “taste great and no desire to eat something else”. You know your hooked when you pass up the donuts at work, and other junk food…My clothes are fitting better, less muffin top. :) – Cynthia

Avocado Chocolate Mousse – Hi there, just wanted to let you know I made this mousse and it was absolutely AMAZING! Is a cookbook from Well Plated in the future? :-) Absolutely LOVE your recipes, stories, and insight. I get the most compliments on my dishes that are from your blog. But about that cookbook…I think I would buy one for all 9 siblings of mine!!

Wow what an incredible year. My favorite would have to be the lemon layer cake.
That chocolate zucchini bread is so dangerous! I made it over the summer, and promptly ate more than half of it in one sitting. I justified it to myself that it was OK because, hey, I was eating veggies! But I still haven’t trusted myself to make it again, and I know a recipe is good when I can’t be trusted with the result! :)
The harvest chicken skillet is also a really winner!
