This was the best soup I have ever made – made it for a group of friends and all of them said it was their favorite soup and have asked for the recipe!! Turkey sausage was perfect too because it was good protein but didn’t have heartburn after haha! 10/10 Recommend!!
I LOVE this recipe! I used regular turkey Italian sausage, because I couldn’t find the hot variety. But the red pepper flakes give it a nice little zing. I’m definitely making this soup again!
Have been making two different versions of Kale Soup. 1) Vegan with Kale and Cannellini beans. 2) The other with Beef Neck Bones, Kale, potatoes and carrots.
Made this recipe today with the Italian sausage. Very quick and easy to make. Used regular Spicy Italian sausage instead of turkey Italian sausage. Excellent flavor.
One thing regarding the recipe directions. If the Italian sausage is used, the first step is to brown and then transfer to a bowl. It is never mentioned when to add the Italian sausage back into the pot with the other ingredients. I added with the broth and beans.
I just made this kale soup, and it’s fantastic! The combination of flavors is perfect, and the kale adds such a nice, healthy touch. I love how the soup is both light and filling at the same time. It’s the perfect comfort food, and the recipe was so easy to make. I’ll definitely be making this regularly.
I’m delighted with how this kale soup turned out! The kale is cooked just right, and the broth is full of flavor. It’s hearty and satisfying without being heavy. My family definitely enjoyed this soup. Thank you so much!
I made this kale soup for lunch today, and it exceeded my expectations! The kale is tender but still has a bit of texture, and the broth is incredibly flavorful. I love how easy it was to prepare and how hearty it is. It’s the kind of soup that warms you from the inside out. I’ll definitely be making this again soon!
This soup was amazing!! I will definitely be adding it to my go-to recipes(which are mostly your recipes! lol)
FYI, one thing that another commenter pointed out is the directions never mention when to add the sausage back in…?
Hi Emily, I haven’t tried it using the frozen ones, but maybe the last 5 minutes. I don’t know how well those cook up in soups but would love to hear your feedback on it! Thank you!
This soup is a family favorite. I make it exactly as written, the only thing I add is I massage the kale for about 5 minutes to remove any bitterness and to soften it. It is so delicious, especially when paired with a loaf of homemade sourdough bread.
I wasn’t sure how this would go over with my husband because he’s not a big veggie guy, but he actually liked it. The broth had more flavor than I expected, and the kale mellowed out as it cooked. I served it with some bread to make it feel more like a meal.
I like how low-effort this soup is. I made it while cleaning the apartment and barely had to pay attention to it. It tasted clean and wholesome, and the kale didn’t overpower everything like I thought it might. I added a squeeze of lemon at the end and it really brightened it up.
This soup was a nice way to use up extra kale from my garden. I liked the mix of flavors, and it came together quickly. I didn’t expect my kids to like it, but they actually ate it (after I added some shredded cheese on top). I’ll probably add beans next time to make it more filling, but I’m definitely keeping this in rotation. Thank you, Erin!
Delicious! Very hearty without feeling heavy. I followed the recipe exactly and wouldn’t change a thing! I was hesitant to add the lemon juice at the end because my family doesn’t like lemony tasting soups but I’m glad I did! You couldn’t detect any lemony taste but it did add a certain finishing touch that was perfect. I will be making this again!
I made this soup this weekend and loved how easy it was to throw together. The kale stays vibrant and tender, and the broth is packed with flavor. I will probably add other veggies next time just to make it a little more colorful and hearty. It’s definitely going into my regular rotation.
I like how this recipe feels wholesome without being bland. The combination of vegetables makes it feel balanced, and the kale holds up well instead of turning soggy. It’s a nice change from heavier soups.
The flavor is really nice and fresh, especially with the lemon at the end. It’s a light yet satisfying dish that’s perfect for any time of year, and I find it’s just as good reheated the next day.

Hi Shelbe! Thank you for letting us know. It goes back in in Step 5 with the kale! Thank you!
Looking forward to making this! Could I add frozen diced (hash brown style) potatoes? If so, at what point should I add? Thanks!

I would make this recipe again! Everything delicious – love the red pepper flakes and Parmesan block. So rich after a few days, too!

Love that tip! Glad you enjoyed it, Rebecca!
I LOVE this soup! Have come back to it many times! Sometimes I add a little heavy cream, and it’s also delish!

I made this for our church supper and for the first time people requested the recipe from me!!! I think Erin may get more followers from this.
Yay! Love to hear that, Yosh! Thank you!
This worked exactly as written, thanks!
So glad to hear, Marisol! Thank you!
