This was delicious. I made three pans using the vegetables I had on hand. Now I can eat them with eggs or on flatbread with cheese on top, mixed with rice… The possibilities are endless!
Delicious. I am trying to add more veggies in my diet. I chopped, added olive oil and balsamic vinaigrette. halfway through I sprinkled with Parmesan cheese. When I served it,
I drizzled balsamic reduction on it. It was wonderful!!
Recipe was ok except the vegetables do not cook well at 400 degrees. It takes too long to cook. I turned the temperature up to 425 degrees and it made the veggies crispy and cooked through.
Hi K! Sorry for any confusion. This is oven roasted, so we will be baking it. Under tips for roasting, we specify “use the bake setting” If it was a recipe that needed to be broiled we would definitely specify as that could burn easily. Hope this helps! Enjoy!
I was looking for a healthy, tasty recipe to suit a variety of food allergies at my daughter’s bridal shower brunch. I needed to roast quite a few trays at home and transport them in a slow cooker to the site. The recipe worked well–good procedure, and everything was delicious! Many people complimented me on your oven roasted vegetables! Many thanks!
We absolutely loved it! Let me tell you…this just became a staple in my house!!! Sooo delish!! I couldn’t stop eating it raw even, before the first round came out of the oven. Lol. Thank you for posting this new found love.
Used this recipe for roasting to make a veggie casserole with a bit of roue and milk and parm cheese topped with a sprinkle of mozzarella and panko crumbs. Was like Mac n cheese without the pasta. Kids loved it. Used broccoli, cauliflower, butternut squash and mushrooms. Definitely will make again! (Used hidden valley lemon pepper ranch seasoning)
Awesome and delicious
Thank you!

Great flavor! I didn’t use peppers, peeled my sweet potatoes and added a shallot. Thank you, your recipes are staples in my home!

Your article doesn’t state specifically set oven to Bake. Confused could it be broil?

Love making this! To calculate the nutritional info how many cups would you say is a serving size?
Hi Kaitlyn, so sorry, but I didn’t measure this out in cups.
