Peanut Butter S’mores Pizza
With its pastel heart-shaped candies, endless shades of pink, and baby’s breath-strew bouquets, Valentine’s Day can be rather dainty. Forget Cupid and the doves—let’s faceplant into giant gooey slices of Peanut Butter S’mores Pizza instead.Peanut Butter S’mores Pizza is not cute, pink, or sparkly, but it is everything I want on Valentine’s Day. Yes, I’m all for torching crème brulee, baking heart-shaped dark chocolate sandwich cookies, and serving ruby red risotto, but that’s because I like excuses to make fancy desserts and eat carbs. Being frilly is fun, but on Valentine’s Day (or any other Friday night), rather than stressing over whether or not my chocolate soufflé will rise, I’d rather shovel a monster slice of melting chocolate-marshmallow-peanut butter glory directly into my mouth.
Peanut Butter S’mores Pizza is unpretentious, outrageously delicious, and destined to be smeared all over my face in the most unattractive manner imaginable. This is love.
I’ve had a mini obsession with dessert pizza since I first encountered it at a Pizza Hut buffet 20 years ago. We never ordered dessert pizza at home, so when I first saw it radiating beneath the glowing buffet lights, I was stunned. The concept of taking one of the greatest meal concepts of all time (cheese + sauce + more cheese + crust = dinner) and transforming it into dessert was to my 7-year-old psyche all necessary proof of beauty and goodness in the world.
As an adult, I’ve raised my standards. My dessert pizza must include chocolate and a super-sloppy peanut butter sauce. Nothing. But. Class.
The “graham cracker” base of our Peanut Butter S’mores Pizza is a honey whole wheat pizza crust. Soft and fluffy on the inside, but lightly crispy and buttery on the outside, this lovely homemade pizza dough is one tasty vehicle for our sweet toppings. Though there’s not actual graham crackers in the pizza, the buttery, honey flavor of the crust creates the same effect. (If you are a s’mores purist and feel this doesn’t count, feel free to break some graham crackers over the top once the pizza has baked.)
Chocolate, chocolate: We’re keeping it big and chunky with hunks of milk chocolate and a heap of semi-sweet chocolate chips. They’ll melt into gooey chocolate lava all over our honey crust. It’s messy and epic.
Marshmallows: We scatter a cloud of mini-mallows all over the chocolate, then pop our creation into the oven so that they puff and caramelize. All the benefits of open-fire toasting, minus the hazard of the mallow falling into the fire. Win!
The crowning glory: A thick drizzle of creamy peanut butter sauce and crunchy smattering of honey-roasted peanuts. It’s a throwback to the fluffernutter sandwiches I obsessed over as a kid, and it makes me just as happy. The entire ordeal is a sticky, chocolaty, peanut butter-oozing mess. You’ll probably wreck your manicure and find marshmallow clinging to your cheeks the next day. It’s magnificent.
Whatever your agenda this Valentine’s Day—a shi shi fixed-price dinner; group wine pajama party + reruns of The Bachelor; champagne, Celine Dion, and a bubble bath—S’mores Peanut Butter Pizza can only improve your plans. Pink cupcakes are cute and chocolate mousse is fancy, but steadfast Peanut Butter S’mores Pizza will love you forever, even if you have holes in your sweatpants and chocolate on your face. And isn’t unconditional love the best Valentine’s Day gift of all?
Peanut Butter S’mores Pizza
For the Honey Whole Wheat Pizza Dough
For the Pizza:
- 1 tablespoon unsalted butter — melted
- 1/4 teaspoon kosher salt
- 1/2 cup semi-sweet chocolate chips
- 1/3 cup chopped milk chocolate — or milk chocolate chips
- 1 cup miniature marshmallows
For the Peanut Butter Sauce:
- 1/4 cup creamy peanut butter
- 2 tablespoons confectioners’ powdered sugar
- 1 tablespoon unsalted butter
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon kosher salt
- 1/4 cup chopped honey roasted peanuts
Prepare the dough: In the bowl of a standing mixer fitted with the paddle attachment (or a large mixing bowl), combine the warm water, yeast, honey, and olive oil. Add all of the white whole wheat flour, 1 cup of the all purpose flour, and salt. Mix on low speed (or by hand with a wooden spoon) just until dough comes together. Add remaining 1 cup flour a little at a time, just until the mixture forms a soft dough (you may not need the full cup.)
If using a stand mixer, switch to a dough hook and mix on medium-low speed for about 10 minutes until smooth, adding a little flour as needed to keep the dough from sticking to the bowl. If kneading by hand, turn the dough onto a well-floured surface and knead for 12 minutes, incorporating additional flour as needed to keep the dough from sticking. Place the kneaded dough in a well-oiled bowl and turn to coat lightly with oil. Cover the bowl with a damp kitchen towel or plastic and allow it to rest in a warm, draft-free place for 30 minutes.
Place rack in the upper third of oven and preheat to 450 degrees F. Line a large baking sheet with parchment paper or dust with cornmeal or flour. Turn risen dough out onto a lightly floured surface and roll into a 10-inch circle (it will be a little thick). Transfer dough to the prepared baking sheet, then press lightly all over with your finger tips to create “dimples.” Brush crust all over with 1 tablespoon melted butter and sprinkle with 1/4 teaspoon kosher salt. Bake until pale golden and lightly crisp, about 20 minutes.
While the pizza bakes, prepare the peanut butter sauce: In a small saucepan over low heat, combine the peanut butter, powdered sugar, butter, vanilla, and salt. Stir until the butter melts and the sauce is smooth and pourable.
Remove pizza from oven and immediately sprinkle with semi-sweet chocolate chips and milk chocolate chunks. Scatter marshmallows all over the top, then return to oven for 1 minute, until the chocolate begins to melt and the marshmallows turn lightly golden. Drizzle with peanut butter sauce and top with honey roasted peanuts. Slice and serve immediately. Share with friends. Or not.
