Such a delicious recipe! I didn’t see your recommendation for doubling the sauce in the event of a peanut sauce loving husband, but I will definitely do that next time :-). Loved this easy weeknight dinner idea that’s healthy as well. Thanks for the recipe!
Hi Shari! The peanut butter adds creaminess and substance to the sauce, so I would be hesitant to recommend that swap. I haven’t experimented with PB2, so if you’ve successfully swapped it in similar recipes, you could try it here too.
This meal was AWESOME! Even my husband (who doesn’t like peanut sauce) agreed. It was very easy and adaptable. Buying Costco’s rotisserie chicken meat saves a ton of time. The chopped nuts on top make a big difference. I’m excited to make it again!
This was so ? good ? and ? easy! My boys devoured it. I had a rotisserie chicken and brown rice. Helped that I had everything on hand. Thanks for saving dinner!
Delicious and adaptable to your pantry/veggies on hand! This is yummy, we had over cauliflower rice. Thank you for sharing – approved by mom, dad, and 9 year old!
Erin, is it possible to make this with my own homemade peanut butter? AlsoD, I buy virginia peanuts which are so much better than the standard runner peanuts. I assume I would process the peanuts as smoothly as possible.
Hi Dawn! I’ve never tried using homemade peanut butter in this recipe, but you could experiment with it. If you decide to try it, I’d love to hear how it goes!
I will use a small amount of peanuts chopped rather small and offer on the side like you do with parmesan cheese. Then my guests and family can control the crunch factor.
I’ve been making peanut sauce for years and thus is by far the best recipe. I’ll be using this as my go-to recipe from now on! So glad I discovered it!
Hi Lauren! Ground ginger won’t have the same liveliness and punch that fresh does, but if you don’t mind losing some of the flavor in the name of ease (which I totally get!), you can use 1/3 the amount of ground. I hope this helps!
I thought this was good . The only change I will make next time is to thin the sauce WAY out and just drizzle it over the plated ingredients rather than mix it with the chicken. I did add quite a bit of water to it this time but when I combined it with the chicken still way too thick. Still, it tasted good!
I didn’t have all of the ingredients so I improvised. I didn’t have fresh ginger so I used bottles Ginger and use some of the juice that was in there. I also put apples cut up small Ann’s some celery cut up small. I put peanut butter sesame oil low sodium soy Ann’s some water and I cooked it down to a nice smooth Miss then added the apple and the celery and also I only use a half a piece of garlic cut a very small cuz I don’t like garlic. I really didn’t have anything to cook in my house so the one chicken cutlet that I had I cut that up very small I put it in the oven with some paprika over it and Browns it and then I just put it into the peanut sauce I just created and let it simmer slowly of course adding water to it but it sickens very quickly I also added more sesame oil cause I like it but I must tell you I did cut the recipe for one person and did it fabulously. Great recipe. Tonight I don’t have any peanut butter but I have the combo peanut butter and jelly and I am going to with the peanut butter and jelly from the jar. To be continued. I love cooking. Sorry about any words that shouldn’t be long but I’m speaking into a Google microphone and of course it doesn’t hear what we say correctly.
I forgot to add the ginger, subbed peas for edamame, and left out the carrots because I got lazy and didn’t feel like cutting them. This was a win! My son said the sauce would go great in a burger too, I agree. Luckily I doubled the sauce because he really loved it (and so did I). I’ll be adding this in regular rotation to use with my Costco Rotisserie chicken.
This dish is sooo good! And kid approved. I also recommend using your cooking shredded chicken tips!??? Thanks!!
HOORAY! I’m so happy to hear it was kid approved. Thanks so much for trying it out and reporting back, Laura!

Thanks for taking the time to report back, Ana! I’m so glad to hear the recipe was a hit—good tip about doubling the sauce. ;)
Could we sub PB2 for this recipe to reduce the fat content?
