Healthy Peanut Butter Yogurt Fruit Pizzas

Yield: 4 - 6 large rice cake pizzas, about 2/3 cup sauce

A perfect healthy after-school snack! Rice cakes spread with a creamy peanut butter yogurt "sauce" and topped with fresh fruit.

Ingredients

  • 1/2 cup non-fat plain Greek yogurt
  • 2 tablespoons natural peanut butter, — creamy or crunchy
  • 1 tablespoon honey
  • Rice cakes — (plain, apple cinnamon, or any size/flavor you like)
  • Toppings: — bananas, blueberries, strawberries, apples or any of your favorite fruits; granola; extra honey; chocolate chips

Instructions

  1. In a medium bowl, stir together the yogurt, peanut butter, and honey until smooth. Spread over rice cakes. Top with sliced fruit, granola, additional honey or chocolate chips, as desired.
