3medium yellow onions,thinly sliced

4teaspoonsfresh basil,chopped or 2 tsp. dried
2-3ouncesgoat cheese
Instructions
Preheat oven (and pizza stone if using) to 500ºF. If you are not using a pizza stone, grease a large baking sheet and set aside.
Place sliced onions in a medium skillet on medium heat. Cover and let cook, stirring occasionally, until the onions are dry but not yet sticking to the pan, about 20 minutes. Add olive oil, then cover and reduce heat to low. Continue to cook, stirring infrequently, until onions turn a deep caramel brown, at least 20 minutes and up to 40 minutes more. Stir in balsamic vinegar, salt, and pepper. Turn off heat and add spinach, stirring gently until it begins to wilt.
After dough has initially risen (through Step 4 if using 100% Whole Wheat Pizza Dough place on a lightly floured surface and knead a few times. Shape into a ball, cover with a little flour, then let rest 20 minutes. Roll dough into a 12 in. circle (perfection is not a necessity here). Take your time. If the dough retreats (shrinks back to a smaller circle), just let it rest for a minute and then continue.
Carefully place dough on preheated pizza stone or prepared baking sheet. Poke holes all over the surface to allow air to escape. Lightly brush or drizzle with olive oil. Bake for 6 minutes, then remove from oven. Top with caramelized onion mixture and dried basil. Crumble goat cheese over top.
Bake an additional 5-6 minutes, until the crust is golden and the goat cheese has begun to brown. Remove pizza from stone or baking sheet. Slice and serve immediately.
