Instructions
Place the potatoes in a large bowl and top with the oil, paprika, dried herbs, garlic powder, salt, and black pepper. Toss to coat.
Preheat your air fryer to 400°F. Add the potatoes to the basket and air fryer for 15 to 18 minutes, shaking the basket two to three times throughout, until the potatoes are a nice golden brown and fork tender (if you love extra crispy potatoes, cook 1 to 2 minutes more, until they are done to your liking).
Transfer to a serving bowl or plate. Immediately top with a pinch of additional salt and Parmesan and chives (if using).
Notes
TO STORE: Place leftover air fryer potatoes in an airtight storage container and refrigerate for 3 to 4 days.
TO REHEAT: Reheat the potatoes in a 400ºF air fryer or oven for best results, or in the microwave if that’s your only option.
