Scrub the sweet potatoes and cut into 1/2-inch cubes (peeling is optional; we leave our peels on).
Place in a large bowl and toss with the oil, salt, smoked paprika, garlic powder, and black pepper.
Place in the air fryer basket and air fry at 400°F for about 12 minutes, shaking the basket halfway through. The potatoes should be dark in spots on the outside and tender inside; check a few minutes early just to be safe as all air fryers are different. Serve warm, with a sprinkle of salt to taste.

TO STORE: Refrigerate leftover air fryer sweet potato cubes in an airtight container for up to 4 days.
TO REHEAT: I recommend reheating these air fryer sweet potato cubes in the air fryer at 350ºF, but the microwave also works or you can eat them cold in salads and wraps.
TO FREEZE: Store in an airtight container or freezer bag for up to 3 months. Thaw in the refrigerator before reheating.
