Now that spring is in bloom, I wanted to reshare one of my and YOUR favorite healthy desserts, fresh Strawberry Oatmeal Bars!

These Strawberry Oatmeal Bars have become one of the most cherished recipes on my site over the years. I love hearing the different ways you’ve stumbled upon it, often through word of mouth, but equally as much because you were looking for healthy desserts under 100 calories, healthy desserts for kids, easy oatmeal bars, or (and perhaps best of all) healthy strawberry recipes you could feel completely justified eating for breakfast.

This Strawberry Oatmeal Bars recipe has a special meaning for me too. Since starting my blog, every year on Ben and my wedding anniversary, I’ve shared a strawberry dessert recipe, because strawberry was the flavor of our wedding cake.

Plus, I never turn down a good excuse to add more healthy fruit desserts to my life.

I originally baked strawberry oat crumble bars on our four-year anniversary, and I still bake them often. They’re unbelievably easy (one bowl, no mixer!), work with fresh or frozen strawberries, and, as the reviews attest, they are wonderful: scrumptious, buttery, fruity, and sweet—everything a strawberry dessert can and should be.

As it so happens, tomorrow is Ben and my SIX YEAR wedding anniversary! SIX YEARS. When did that happen???

We’ll be spending a romantic day celebrating exactly how I’m sure Ben always imagined it: with his in-laws.

We’re in Kansas City for Easter weekend with my family, and while I didn’t get around to baking a special strawberry dessert (or feel up to carrying one with me on the plane), I have full confidence that what we’re doing instead—a family beer and BBQ tour—won’t be regretted by either of us.

So, while a new, fresh strawberry dessert will have to wait until our return (I’m thinking maybe a new spin on a frozen strawberry pie like this Strawberry Frozen Yogurt Pie?), for today, I’m happy to relive the delicious magic that is this easy Strawberry Oatmeal Bar recipe.

The Best Strawberry Oatmeal Bars. EVER.

A bewitching cross between a soft bar cookie and a streusel-topped crumb bar, these sweet treats are the perfect use for the fresh strawberries that are finally starting to make their way into grocery stores in big, juicy quantities.

The top and bottom “crust” of the oatmeal bars comes together in a single bowl, and since the recipe calls for melted, not softened, butter, you don’t even need to wait for the butter to come to room temperature first.

Speaking of “I do,” in keeping with prior years’ anniversary post traditions, here is a brief excerpt of what I learned about marriage this year. A few of these are from the prior post (I should take my own advice more often), and a few I just added. I’m sure that to many, these lessons will seem trite; however, they are sincere, and as all good lessons should be, they are practical too.

  • Leave three things a day unsaid. I owe Gretchen Rubin for this nugget. That little critique you are dying to utter or grievance you want to air? Don’t. It will feel good for all of two seconds. A pleasant, positive atmosphere feels good all night.
  • Put your phone away. I don’t mean face-down on the table “away.” I mean, AWAY. During dinner or another shared activity (reading in bed, watching Netflix, etc.), put your phone somewhere where you can’t get to it without physically standing up and walking. Maybe I’m supremely lazy, but placing my phone where I’d have to go to the trouble to haul myself up from the chair/couch/pillow and walk over to pick it up removes the temptation. No matter how quickly I glance at my notification screen or check to see how many Instagram likes my most recent post received, looking at my phone silently says to Ben, “What I’m looking at is more important than what we are doing together right now.”
  • Say thank you when your spouse completes shared household tasks, like unloading the dishwasher or taking out the trash. It’s nice to be appreciated, even for the chores that are “expected.” I may have mentioned this one in years past, but it is worth repeating. Gratitude never goes out of fashion.
  • Say yes when your spouse asks you to look at something, even if that “something” is YouTube video of a hockey goal that you can’t possibly hope to follow despite your spouse’s detailed, five-minute explanation. It’s an opportunity to share an activity that’s important to them, so let it be important to you too.

Healthy Strawberry Oatmeal Bars

The easiest, best strawberry oatmeal bars with butter crumb topping. One bowl, simple ingredients, and 100% whole grain—perfect for a snack or dessert!

Ingredients
  

For the Strawberry Bars:

  • 1 cup old-fashioned rolled oats gluten free if needed
  • 3/4 cup white whole wheat flour or substitute all-purpose flour or 1:1 baking flour to make gluten free
  • 1/3 cup light brown sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon kosher salt
  • 6 tablespoons unsalted butter melted (or substitute melted coconut oil to make vegan/dairy free)
  • 2 cups small-diced strawberries about 10 ounces, divided
  • 1 teaspoon cornstarch
  • 1 tablespoon  freshly squeezed lemon juice from about 1/2 small lemon
  • 1 tablespoon granulated sugar divided

For the Vanilla Glaze (optional but delicious, especially if you prefer a sweeter bar):

  • 1/2 cup powdered sugar sifted
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon milk any kind you like

Instructions
 

  • Place a rack in the center of your oven and preheat to 375 degrees F. Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.
  • In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.
  • Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and 1/2 tablespoon of the granulated sugar. Scatter on the remaining berries, then the remaining 1/2 tablespoon sugar. Sprinkle the reserved crumbs evenly over the top. You will have some fruit showing through.
  • Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely (you can speed this process along in the refrigerator).
  • While the bars cool, prepare the glaze: In a medium bowl, briskly whisk together the powdered sugar, vanilla, and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment-paper handles, lift the bars from the pan. Drizzle with glaze, slice, and serve.

Notes

  • The recipe can be doubled and baked in a 9x13-inch baking pan. The bars will be a bit thicker but will still be delicious. To make them gluten free, substitute the white whole wheat flour with a 1:1 baking mix.
  • Store leftovers in the refrigerator for up to 5 days.
  • To freeze, let the bars cool completely and do not glaze. Wrap tightly in plastic before placing in the freezer. Let thaw in the refrigerator and top with glaze before serving. (Bars can be frozen already glazed if needed.)
  • If you want to use frozen strawberries, let them thaw completely and pat them dry before making the recipe.

    1. Thank you for the kind note Elisabeth! Honestly, I would be nervous that frozen strawberries would get too mushy once they thaw. The amount of juice in fresh strawberries is just right for the recipe, and you also have to dice them fairly small, which I think would be a challenge with frozen berries, since those come in larger pieces. If you do decide to experiment with frozen though, I’d love to hear how the recipe comes out!

They cool down so fast that I tried it practically straight out of the oven and so delicious warm – my initial sample taste of just the corner piece grew to take over an entire side of the pan..it happens, what can I say. They are crumblier than I thought they’d be but I think it’s because I reduced the butter a bit. Will be great with a dollop of yogurt for breakfast – I was looking for some variety for my breakfast and this is going to hit the spot! 5 stars

I made these on Saturday morning, after breakfast was made, I had some strawberries that needed to be used and I had all the other ingredients on hand.     1. Hi Lisa! The bars are a little moist vs. crispy, but should not be wet. My guess is that your strawberries were particularly ripe, since they are freshly picked. Next time, I would suggest sprinkling on a little extra cornstarch. I hope that helps!

  33. Just wanted to say I made this today and it turned out great!! So tasty! I have one question though which may be dumb but just have to ask! How did your glaze stay so white? After adding the vanilla mine turned a very light brown color  and although the taste was perfect I like the look of the white over the browned oats and was wondering if you know what may have gone wrong?     1. Raj, I’m so happy you loved the taste of the bars, and this isn’t a dumb question at all! You made the recipe perfectly. Pure vanilla extract (which is what you should ALWAYS use while baking) can make a glaze look slightly brown, since it is brown in color. The taste is totally worth it though! I used a clear vanilla extract for the photos only, because it comes out a more true white.

  35. I made your strawberry oatmeal bars tonight and they are delicious! My only regret… is I didn’t make a double batch! Have you tried freezing these? I would love to make a couple batches and freeze them for a quick and delicious breakfast on the way to work.5 stars

    1. Stephanie, I”m so happy you loved these so much! You can certainly freeze these. If time allows, I’d suggest freezing them without the glaze, then letting them thaw in the refrigerator. You can then add the glaze right before enjoying (otherwise, the glaze tends to “disappear” when frozen/thawed).

    1. Hi Lauren! Old fashioned oats usually refer to “rolled” oats which are less processed than quick oats. I used the old fashioned (rolled) oats. You can use quick oats, but the texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking.

    1. Hi Doris! I’ve never tested this recipe with either less butter (I think it would turn out too crumbly/dry) or a lower fat margarine. Overall, the recipe really doesn’t have a significant amount butter compared with similar bars. If you don’t mind the taste of lower fat margarine, you could try that swap though!

  42. Made these tonight! Excellent flavor but like a few others, mine fell apart. I think my berries may have been extra ripe. I did use some of the suggestions and doubled the cornstarch hoping it would firm up the bars. I’m going to make another batch with store bought strawberries and 1.5x the crumb mixture. They were sooo good with some strawberry Greek yogurt. Have you ever added protein powder to increase the protein content? These would be perfect for breakfast if I could find a way to up the protein. Thanks for such a wonderful recipe!5 stars

    1. Hi Sarah! I’m glad you liked the bars and think your suggested tweaks sound like a great way to play around to get the bars to be just to your liking. I’ve never tried these with protein powder, so this would be an experiment on your part. Definitely keep an eye on the batter to make sure it’s not overly dry. You can always top with with more Greek yogurt for protein too!

    1. Katie, I’ve never made these with coconut sugar, so I can’t give you specifics. Coconut sugar is a lot drier than granulated sugar, so I would be concerned about the bars drying out—you might want to think about adding extra butter, some Greek yogurt, or applesauce to off set this. I’d suggest searching online for tips to swap regular granulated sugar for coconut sugar. Coconut sugar also acts more like brown sugar vs. white, so the color, flavor, and consistency of the bars would be different too. If you decide to experiment, I’d love to hear what changes you make and how the bars turn out!!

    1. Denise, you certainly can, though the bars might come out a bit dryer and they will have a more pronounced “wheat” taste. I’d suggest trying half whole wheat flour and half all purpose if you prefer not to purchase white whole wheat flour, which is softer and milder in flavor.

  46. Hello! I tried this recipe last night and wow are these bars good! Not too sweet and perfect for summer. The bars do get softer as they sit but I bet it’ll be great in a bowl with Greek yogurt.
    The only changes I did was I used coconut sugar and drizzled in a some molasses to mimic brown sugar. I used probably around a tablespoon. Also, I skipped the lemon juice since I didn’t have any. Great recipe.5 stars

I prefer the taste and seasoning qualities of kosher salt which is why you’ll see it listed in all my recipes (letting you know in case you try others), but you can certainly use table (regular) salt in this recipe if that is your preference. You’ll want to use a reduced amount, because the grains of kosher salt are larger than table salt. If you do try them, I hope you enjoy the bars!

  51. I just made these last night with the help of my 3.5 year old daughter (she cut the strawberries in an egg slicer). I used coconut oil and regular whole wheat flour. I did not find them to have a strong “wheat” flavor with the whole wheat flour. They tasted just fine without using the “white” whole wheat flour. I thought the bars tasted great, and even my super picky eater (she must be at least 75% mac and cheese by this point) gobbled the bar up for breakfast this morning. I prefer this method over a simple “fruit crumble.” I guess because you get more of the yummy crumble. :) Thanks for this super easy recipe!5 stars

I had to use coconut flour because I am gluten free, and instead of using butter I used coconut oil. Could this be the reason?     1. Hi Sarah! The coconut flour is definitely the reason, because it is so much drier than wheat flour. I’d suggest using a GF flour blend like this one instead of using coconut flour. http://amzn.to/2bwCkkl  Others have done that with great success! 

  55. I tried the recipe and it didn’t work out for me.  My mixuture looked like it had too much flour and not enough butter ratio to make everything ‘wet’.   It tasted good when I mixed it all together but the oats and flour were raw and the strawberries cooked.  Bummer. 

    1. Hi AJ! That IS a bummer. As you can see from the other reviews, this recipe has been made quite a lot with others being happy with it. This sounds like it could be an issue with either measuring or the bake time. Regardless, I’m sorry it didn’t work out for you!

    2. I agree with you! Not enough butter ratio. I baked for 40m and even gave it extra time in hopes it would brown or stick together. I found the strawberries cooked by the oats and flour stayed uncooked. Good tasting but they fell apart. Was not happy with this recipe and I do bake a lot.

    1. Hi Alyson! It’s hard for me to say without being in the kitchen with you. My guess is that it is a case of mis-measuring. Did you lightly scoop the flour into your measuring cup, then level it off, vs. just reaching it down into the bag? This is actually the best way to measure flour to make sure you don’t end up with too much. Also, did you use the full 6 tablespoons of butter? Those are my best guesses. I’m sorry the bars didn’t turn out!

  59. Sounds delicious! I have a ton of frozen strawberries from the summer. Have you ever tried baking with frozen strawberries? I’m struggling to find recipes that use frozen which leads me to believe maybe it won’t turn out well. Maybe too watery? 

    1. If you’d like to try frozen strawberries, I’d suggest thawing them and then blotting them dry before using, or tossing them in a little bit of cornstarch before adding them. Many readers have tried this with good luck!

    Second, I just finished and taste-tested two batches of this recipe, one with strawberries and one with blueberries, and both were DELICIOUS!

    I somehow managed to make one crust drier than the other, but they both worked out fine! I think I might have lost focused and either added an extra tablespoon of coconut oil or forgot one, but it worked out just fine.

    The only thing that ‘fell apart’ for me were the crumbs on top, but I expected that and patted them down with a spatula to make them stay a little better.

    For anyone who wants to try it with blueberries, what I did was take a pint of blueberries and put them in a saucepan over medium heat, then stirred (occassionally) for 10 minutes. After 10 minutes, I used a potato masher to flatten them a bit, but I didn’t aim to hit every blueberry. Then, I just followed the recipe and used my mashed blueberries instead of strawberries. I concentrated more corn starch on parts that were juicier.

    I cooked the blueberry bars for 35 minutes and the strawberry ones for 40, and then stuck them in the fridge after they cooled down a bit. My boyfriend and I shared a piece of both, and again, they are so good!!!

The apples would likely be quite a bit firmer and less jammy, because they aren’t juicy like the strawberries. You might want to try cooking them on the stove in advance first to soften them up.     1. Hi Lauri! A good amount of the cholesterol comes from the butter. I would suggest swapping it for coconut oil. The flavor will be different, and the texture won’t be as crumbly on top, but I think that it would still turn out. If you decide to experiment with the swap, I’d love to hear how it goes! I would be very unlikely to make the strawberry bars, but I love reading about things like the lessons on marriage.  Since I didn’t get married until late in life, I regularly spend time thinking about how amazing it is to be married and about what’s important in marriage.  One of the things we do is to spend time cuddling at night and we always make sure to tell each other “I love you”.  It’s amazing how that defuses any of those little things that don’t deserve mention, and helps to maintain a high level of peace in the marriage.

      1. Hi Carol! I haven’t heard of anyone doing only rhubarb, and I don’t think the rhubarb would break down like strawberries. I’d suggest cooking the rhubarb into a jam-liike filling on your stove (adding sugar and lemon juice to taste, and a bit of water as needed) first, then layering it over the oatmeal crust OR seeing if you can find an alternative rhubarb recipe online. If you decide to experiment, I’d love to hear how it comes out!

  83. I used coconut sugar in place of all the sugar with no problems. We find most treats to be too sweet and I was itching to do the icing layer so I only put two tablespoons of sugar in the crumble. I forgot to put sugar in with the strawberries, but found it didn’t need it and they set quite well. I did sprinkle a tiny bit extra cornstarch for good measure and it seemed to do the trick. I could have gotten away with 1/3 cup icing sugar (made with coconut sugar powdered in my coffee grinder) so I think I will do that next time. Love this recipe and how easy it was and cant wait to make it again. Just wanted to mention what I did in case anyone isn’t big on sugar like we are.5 stars

I mixed the strawberries, cornstarch, lemon juice, and sugar all together before just dumping it out on the crust (easier than layers and sprinkling).  I made it with super-fresh strawberries, so I used close to 2 tsp cornstarch. Added maybe 1 Tbsp extra brown sugar to the crust. Once assembled, I pressed the top part down gently to keep it from being too crumbly once cooked (it was for my kids–they’re not super-careful about crumbs). It was a hit! And a great way to use up some of the giant flat I picked yesterday. Thank you!5 stars

  85. I tried making these today and they turned out pretty good! They taste floury and are very crumbly, holding together when cut but not when picked up. I’ll do some experimenting to make the crust firmer like a Graham cracker crust. Probably replace some flour with almond meal. The cornstarch made the berries into a great jam-like consistency.4 stars

Made this for her earlier in the week and when I tasted a slice, I was SO tempted to keep them for myself instead! I did find the crumble mixture a bit dry so I cut up some butter and pressed it into the mixture (I’d already pressed the mixture into my pan). I made it without the glaze as I didn’t want it to be too sweet for my niece and it was still delicious! They can be soft because of how little butter and sugar are in the recipe, and they can also get softer depending upon how juicy the strawberries are.   110. Hi, made this recipe yesterday with frozen strawberries and it was soooo good. I read all the comments so I was aware of any issues. When using frozen strawberries it is easier to cut them while still frozen. I used the recommended amount of cornstarch. Also did what another reader suggested and that was to put the lemon juice and cornstarch on all the strawberries , mix and then add all the strawberries at the same time and spread them evenly in the pan. I baked them for 35 minutes . Had a hard time waiting for them to cool because they smelled so good. Never made the frosting . YUM ! They were a little soft but I didn’t mind that. Just served it on a plate and ate it with a fork. Going to have to freeze them so I don’t eat the whole batch!! Thanks for a great , health recipe.5 stars

I added more berries than 2 cups; I did not measure, just kinda eye-balled them in the bowl and I KNOW there were more than 2 cups.     Temp was 375 Convection bake For 40 mins. They are now cooling. But from the way then look

Instead of alternating sliced strawberries, sugar, cornstarch, lemon, (used honey instead of sugar), I combined all in a pan and simmered for a few minutes. Came out great! Was there another adjustment I needed to make?     We did add 1tsp vanilla to the oatmeal once the butter was added. We did feel we were short on topping for the final layer so added crumbled corn flakes to the top and then sprayed with canola oil so they wouldn’t burn. Would love to add some pecans to it another time and try with different fruit.

For my firmer ones, I think it would have bee a good idea too mix them with the cornstarch for a more even distribution. and then to add a little more liquid to the berries before putting them into the pan.   176. Been making this since I discovered it in 2018 and wow is it good and easy to tweak. I usually double it and cook it in a 9×13 that’s how much my 4 person household likes this!

    My double batch tweaks:

    2 cups of quick oats
    1 cup of flour
    1/4c golden flax meal
    1/4c almond or PB protein powder
    2/3 cup light brown sugar (sometimes I use 1/3 light brown and 1/3 coconut sugar)
    2 chunky pinches of salt
    12 tablespoons of butter (or half it with coconut oil)

    also! When I double I use 3 1/2ish cups for the bottom and only save 1/2ish for the topping but we like our crust thicc hahaha!

    Lastly, instead of fresh fruit (cause that’s my personal mehh), I use a half or sometimes full jar of cherry jam (bonne mamam is GOAT!), also used with great results, peach jam and lemon curd!5 stars

I then used a combo of dairy-free butter and coconut oil instead of butter and used coconut sugar instead of granulated sugars. This recipe is so good and since my oven broke and I can’t bake until I get a new oven I baked this in the bottom of my air fryer without the grate, on 350 for 15 minutes. Since I have frozen ripe strawberries that had turned very soft I sliced them up and cooked over the stove with 2 tablespoons of brown sugar instead of using fresh strawberry. I added 2 tablespoons of orange zest and fresh orange juice with a little bit of strawberry jam before topping up with the remainding oats mixture. I sprinkled half of it with chocolate rice & omitted the glaze. It turned out very nice.4 stars

      -doubled the crumb mixture, I like lots of crunch and needed more for the top
      -added one super frothy egg white to bind it all since I was reading comments about it being crumbly
      -doubled the brown sugar
      -quadrupled the sugar in the fruit filling
      -used a tablespoon of cornstarch for extra creaminess
      -Doubled the vanilla icing

      They turned out great!! The egg white kept everything firm in bar form. Loved extra sweetness from the added sugar and icing on top. I will make these with every fruit filling imaginable. Huge hit with the family!!!!!5 stars

    1. Hi April! I actually would not recommend the honey swap. The bars are about as low in sugar as I could make them, and I worry that the crumble wouldn’t hold together since honey is liquid. I’m so happy that you’ve enjoyed the bars!
