Crispy outside, and creamy and cheesy inside, these Air Fryer Buffalo Chicken Taquitos are a fun, easy finger food appetizer that’s perfect for game day!

Taquitos: tacos in their most snackable form.

cookbook author erin clarke of well plated

Taquito literally means “little taco,” and I, for one, am glad they exist because taquitos are a lot easier to eat while sitting on the couch than traditional tacos. Flank Steak Tacos piled high with all the fixings on your off-white sofa? No bueno!

These air fryer Buffalo chicken taquitos are the ideal game day snack, with all that Buffalo chicken deliciousness tidily wrapped into a crispy tortilla. (Bonus: cooking them in the air fryer instead of deep frying means no greasy fingers on your couch either.)

A lot of the ingredients here overlap with my Game Day Crack, so I highly recommend making both together for the best game day party EVER.

Key Ingredients

You’ll find the full list of ingredients in the recipe card below, but here are some notes to keep in mind.

  • Shredded Chicken. I like to use this Crockpot Shredded Chicken or Instant Pot Shredded Chicken.
  • Buffalo Wing Sauce. I like Sweet Baby Ray’s.
  • Ranch Dressing. I use Ken’s Ranch Dressing, or you can use my Greek Yogurt Ranch Dip.
  • Seasonings. Salt, garlic and onion powder, and cayenne—but only if you want your taquitos spicy.
  • Cheese. I use Monterey Jack cheese, which has a nice, smooth melt.
  • Tortillas. You can use flour or corn, whichever you prefer.

How to Make Air Fryer Buffalo Chicken Taquitos

Make the Filling. Stir together the chicken, Buffalo sauce, and seasonings.

Roll the Taquitos. Divide the filling onto 6 tortillas. Roll them up and secure them with toothpicks.

Cook. Place the taquitos in your air fryer with the seam-side down. Mist with cooking spray and air fry at 380ºF for 8 to 12 minutes. Serve with ranch and ENJOY!
