Fresh summer peaches are one of the most precious gifts of summer. Like my other favorite peach recipes (Peach Crisp, Peach Jam, and Baked Peaches), this rustic peach cobbler does them the justice they deserve.

  • This is a ridiculously easy cobbler recipe. I can’t overstate this enough. The batter is made with milk, flour, and sugar. You pour it into a hot baking dish with melted butter, then spoon the filling over the top and bake. SO. EASY.
  • The crisp lid the cobbler forms on top; the sticky (in a good way), buttery topping; the sweet peaches beneath. This cobbler is so delicious, my sister asked for it in place of birthday cake.
  • I learned this old-fashioned peach cobbler recipe from my grammy. Three generations have made it, and it’s as wonderful now as it’s always been. It’s a tried-and-true recipe that won’t let you down!

My Tips and Tricks for a Perfect Cobbler

  • Use Ripe Peaches. Make sure your peaches are ripe and slightly soft. Ripe peaches make a better cobbler and are definitely worth the wait. To help move things along, place them in a brown paper bag on the countertop for a few days.
  • Let it Rest. While it may be tempting to serve the cobbler as soon as it leaves the oven, you need to allow it to rest before serving it. As it cools, the juices from the peach filling will thicken into sweet, syrup-like perfection.
  • Choose Your Own Adventure. As my Slow Cooker Triple Berry Crisp can attest, combining an array of fruits can create something truly magnificent. So, make it your own! Substitute some of the peaches for blueberries, blackberries, or other fruits that you love.
  • Time for Toppings. While this easy peach cobbler recipe is delicious enough on its own, you can’t beat a piece of warm cobbler with a scoop of vanilla ice cream on top. Or, try my family’s favorite: a pour of heavy cream! A little sprinkle of cinnamon would add a fun twist too.

How to Make My Peach Cobbler Recipe

Sift. Sift the flour, baking powder, and salt.

Add the Sugar. Mix until incorporated.

Stir in the Milk. Watch the batter form.

Melt the Butter. Butter makes the cobbler so delicious!

Pour in the Batter. Right over the butter. Do not stir!

Peel the Peaches. Cut an X onto the bottom of each peach, then drop them in pot of boiling water for 1 minute. Transfer to an ice bath to cool, then peel.

Make the Filling. Stir the peach slices together with sugar.

Spoon in the Peaches. Put them right on top of the batter.

Bake. Bake easy peach cobbler at 350 degrees F for 1 hour. Top as desired and ENJOY!

This quick peach cobbler recipe has a simple batter made with sugar, flour, and milk. A reader favorite that takes minutes to stir together!

  • Preheat oven to 350°F. Sift together flour, salt, and baking powder.
  • Mix in 1 cup sugar.
  • Slowly stir in milk to make a batter.
  • Melt butter in a deep casserole dish (about 3 quarts).
  • Pour batter over melted butter. Do not stir.
  • Bring a large pot of water to a boil. Carefully add peaches (I use tongs) and boil for about 1 minute.
  • Remove peaches from the pot and plunge them into a bowl of cold water to stop cooking. Skins can now be easily removed with fingers. Slice peaches into bite-sized pieces.
  • In a clean bowl, Mix the peeled, sliced peaches and 3/4 cup sugar thoroughly and carefully spoon them over the batter.
  • Bake for 1 hour. The batter should be golden brown on top before removing from oven. Top with heavy cream or vanilla ice cream.

Notes

  • *Ingredient tip: Be sure peaches are ripe and slightly soft—place in a brown paper bag on the countertop for a few days to ripen if necessary.
  • TO STORE: Refrigerate cobbler in an airtight storage container for up to 4 days.
  • TO REHEAT: Rewarm leftovers in a baking dish in the oven at 350 degrees F or in the microwave.
  • TO FREEZE: Freeze cobbler in an airtight freezer-safe storage container for up to 3 months. Let thaw overnight in the refrigerator before reheating.

I am baking it right now with 20 minutes to go! I only tweaked it a little adding cinnamon and a touch of vanilla extract, Thanks for sharing this recipe!

  2. I made this in the spring when peaches were available here in California, so amazing! I loved the switcheroo part because it really infused the flavors of peaches into the “cake” part. I’m thinking of trying it with apples just to see if it has the same magic.

    1. Kelly, this is one of my all-time favorite recipes! I’ve never tried it with apple, but I imagine it would be delicious. My only suggestion would be to sauté apples a little bit first with butter and cinnamon, so that they go into the oven a little soft, just like a ripe peach.     The man that gave me amazing peaches..,I made this cobbler for him as a thank you…he loved it, and brought me more peaches!  So I found out another neighbor was in the hospital, the day she came home, I dropped off a cobbler for her.  Then my closet neighbors that watch our house when we on vaca…made 3 more for them, and of course, I made one for myself! It is so delicious,  especially served warm with vanilla bean ice cream on top!  The only thing different I did was add 1/4 cup of dry tapioca to the peaches, before pouring them into the crust, .it made the juice a little thicker, not that it needed that, we just like tapioca.  Thank you for sharing this wonderful recipe…It is a KEEPER!!5 stars

    1. Hi Mark! You should be able to use a gluten free 1:1 baking flour substitute. I would not recommend something like almond flour. Hope this helps!

  6. This is a very nice recipe – but I perfer the one that I have made for years in my crock pot in 3 hours with fresh peaches and bisquick. Took it to a church pot luck and people were literally salivating as it was cooking the last hour in the foye of the church. Sorry, but I think I will stick with my tried and true bisquick and crock pot recipe.4 stars

  8. I really struggled with this (my fault, not the recipe). I was out of milk (substituted fat free half & half), unsalted butter (just used regular, but only about 2/3 stick), and only had 2 pounds of peaches. It seemed like a lot of sugar to add to peaches (even reducing the amount based on the smaller amount of peaches I had), so I used less. Then when I went to put it in pan, it didn’t seem like enough stuff for a 3-quart dish. So, after trying 3 different size dishes, I put it in an 8X8 baking dish. When I was assembling it, I couldn’t believe you didn’t have to stir the butter and the batter, but I did refrain (even though I did try to even out the batter over the butter). I had serious doubts about how it would turn out. Anyway, an hour later, this was a beautifully browned, crispy-topped, delicious-smelling concoction!! And one more direction I didn’t follow…I didn’t let it cool before trying it! It was too irresistible. And the taste? Simply amazing!!!5 stars

  21. The best cobbler EVER! I first saw this recipe in Domain magazine in August 1989 where it was named Gourmet Gals’ Hill Country Peach Cobbler. I’ve been making this cobbler for over 30 years and it never disappoints. Requested by family and friends and I have never said no.

    The cobbler is easy to prepare and reheats in the microwave if you are lucky enough to have leftovers. Five stars plus.5 stars

  22. I love this peach cobbler recipe. Not only is it super simple to make, it tastes great. I have made it 2 times this month! First time for 4th July picnic, it was a big hit. Second time so we could have it again. Absolutely delicious. So far I have shared the recipe with 3 others .
    I used fresh fruit the first time around and drained canned peaches in fruit juice the second time. Both bathes were excellent. I froze the cobbler in portion sizes for future desserts. Two nights ago I thawed the cobbler out, covered, in a 325* oven. My goodness, it was just as good as fresh baked.
    This dessert is going on my picnic, carry in rotation for the summer. With the canned fruit we can now have peach cobbler year round! Peach cobbler is my husbands favorite cobbler. He was really surprised when it came out of the freezer!!!

  24. I made the recipe with canned apricot pie filling I previously had made and it was super yummy (especially with vanilla ice cream). My only complaint was that it said to cook for 1 hour and when I pulled it out of the oven, the edges were a little burned. I would definitely start checking it about 10 minutes before that.4 stars

  26. This is a firm favorite. With a bit of edit to cut back calories here and there which I do in any recipe, I followed this. I had lots of peaches so used about 28 ounce peeled pitted peaches. I cut the sugar back to .5 cup in the batter and in both batter and peaches used swerve sugar replacement. I used light butter and half the amount. I used my large cast iron skillet. I only had white whole wheat flour too and it worked fine. We say this is a favorite dessert. I see there is a recipe for “easy peach cobbler that is about the same, not sure how different it comes out? but I think this is my go to from now on for a “cake type” peach cobbler.   31. I made this and I am so happy I did! I came across some peaches and thought, let me turn this into cobbler. I found this recipe on Instagram and figured I would give it a try. While making it, I questioned myself and read the instructions no less than 10 times, but it is true, the peaches and the batter switch places in the oven making the most delicious peach cobbler. Science! The only problem I experienced really has nothing to do with the recipe and just that I started making it at 11pm, so I had to enjoy midnight peach cobbler, which was honestly rather enjoyable and actually not problematic. I brought the rest to work the next day and my colleagues finished the whole thing by 10am. All of this to say, make. this. cobbler. You won’t be disappointed!5 stars

  34. This is exactly what I want from a cobbler. It was perfectly crispy and gooey and so fruity. In fact, I substituted some blueberries (because we eat some peaches before I made this) and I think I might have used TOO much fruit? (Is there such a thing??) It wasn’t as pretty as the pictures because the crust didn’t completely rise above the fruit — but it was still so so delicious that we ate it all up!   36. Delicious recipe. So simple and quick. I did not have enough fresh peaches so I added thawed peaches. It worked out great. I half the recipe and cooked it in an 8″by 8″ baking dish. 1/2 of the measurements for each ingredients worked out well. It is so good that now I regret not making the whole recipe. Since thawed frozen peaches are around all year, this is a recipe I can make any time of the year even when fresh peaches are not around. I served the cobbler with homemade whipped cream. I’m cutting down on my sugar, so I used one cup in the batter, and sprinkled some cinnamon over the batter before adding the peaches. Once the peaches were in, I just sprinkled about a tsp of turbinado over them. It was perfectly golden after 1 hour and the sugar caramelized around the edges!     1. Hi Peg! I haven’t tried with frozen peaches but other readers have with success. They thawed theirs first. Also I’m not sure about the size of the packaging frozen peaches come in so can’t really advice on how many packages. You want to make sure you still have 3 pounds once they are thawed.   21. The best cobbler EVER! I first saw this recipe in Domain magazine in August 1989 where it was named Gourmet Gals’ Hill Country Peach Cobbler. I’ve been making this cobbler for over 30 years and it never disappoints. Requested by family and friends and I have never said no.

    The cobbler is easy to prepare and reheats in the microwave if you are lucky enough to have leftovers. Five stars plus.5 stars

  22. I love this peach cobbler recipe. Not only is it super simple to make, it tastes great. I have made it 2 times this month! First time for 4th July picnic, it was a big hit. Second time so we could have it again. Absolutely delicious. So far I have shared the recipe with 3 others .
    I used fresh fruit the first time around and drained canned peaches in fruit juice the second time. Both bathes were excellent. I froze the cobbler in portion sizes for future desserts. Two nights ago I thawed the cobbler out, covered, in a 325* oven. My goodness, it was just as good as fresh baked.
    This dessert is going on my picnic, carry in rotation for the summer. With the canned fruit we can now have peach cobbler year round! Peach cobbler is my husbands favorite cobbler. He was really surprised when it came out of the freezer!!!

  24. I made the recipe with canned apricot pie filling I previously had made and it was super yummy (especially with vanilla ice cream). My only complaint was that it said to cook for 1 hour and when I pulled it out of the oven, the edges were a little burned. I would definitely start checking it about 10 minutes before that.4 stars

  26. This is a firm favorite. With a bit of edit to cut back calories here and there which I do in any recipe, I followed this. I had lots of peaches so used about 28 ounce peeled pitted peaches. I cut the sugar back to .5 cup in the batter and in both batter and peaches used swerve sugar replacement. I used light butter and half the amount. I used my large cast iron skillet. I only had white whole wheat flour too and it worked fine. We say this is a favorite dessert. I see there is a recipe for “easy peach cobbler that is about the same, not sure how different it comes out? but I think this is my go to from now on for a “cake type” peach cobbler. When I found out it was the new monthly recipe challenge, I was excited to make something I’d already made and really liked! My entire family loves this dessert and it is so easy to make. It’s moist, just the right amount of sweetness, and quick to put together for a nice dessert for weeknight or when company comes! We’ve had a surplus of peaches and I’ve canned, made up desserts for the freezer for this winter, made sauces and preserves, and peach ice cream a few times! This recipe is a keeper for sure!   29. I just made this and it was easy and delish! I have a peach tree loaded with white peaches where I’m vacationing in California. They don’t need to be blanched. Pulled them ripe off the tree and the skins practically fall off. Such an easy recipe.

  31. I made this and I am so happy I did! I came across some peaches and thought, let me turn this into cobbler. I found this recipe on Instagram and figured I would give it a try. While making it, I questioned myself and read the instructions no less than 10 times, but it is true, the peaches and the batter switch places in the oven making the most delicious peach cobbler. Science! The only problem I experienced really has nothing to do with the recipe and just that I started making it at 11pm, so I had to enjoy midnight peach cobbler, which was honestly rather enjoyable and actually not problematic. I brought the rest to work the next day and my colleagues finished the whole thing by 10am. All of this to say, make. this. cobbler. You won’t be disappointed!5 stars

  34. This is exactly what I want from a cobbler. It was perfectly crispy and gooey and so fruity. In fact, I substituted some blueberries (because we eat some peaches before I made this) and I think I might have used TOO much fruit? (Is there such a thing??) It wasn’t as pretty as the pictures because the crust didn’t completely rise above the fruit — but it was still so so delicious that we ate it all up!   36. Delicious recipe. So simple and quick. I did not have enough fresh peaches so I added thawed peaches. It worked out great. I half the recipe and cooked it in an 8″by 8″ baking dish. 1/2 of the measurements for each ingredients worked out well. It is so good that now I regret not making the whole recipe. Since thawed frozen peaches are around all year, this is a recipe I can make any time of the year even when fresh peaches are not around. I served the cobbler with homemade whipped cream.   41. This was the best peach cobbler I’ve ever had, and it was so easy!! I’m cutting down on my sugar, so I used one cup in the batter, and sprinkled some cinnamon over the batter before adding the peaches. Once the peaches were in, I just sprinkled about a tsp of turbinado over them. It was perfectly golden after 1 hour and the sugar caramelized around the edges! I used 5 fresh Georgia peaches and a round 2Q casserole dish.5 stars

    1. Hi Peg! I haven’t tried with frozen peaches but other readers have with success. They thawed theirs first. Also I’m not sure about the size of the packaging frozen peaches come in so can’t really advice on how many packages. You want to make sure you still have 3 pounds once they are thawed.
