Strawberry Oatmeal Bars are a healthier fruit dessert made with fresh strawberries, whole grain butter crumb topping, and a lightly sweetened vanilla glaze. This healthier oatmeal bars recipe is a favorite, because these delicious treats are easy to make and just 100 calories each!

These easy Strawberry Oatmeal Bars, with a buttery crust, fresh strawberry filling, and sweet vanilla glaze make wonderful dessert bars to take to a party or potluck. Made with 100% whole grains, they healthy enough for an afternoon snack but sweet enough for dessert! @wellplated

Now that spring is in bloom, it’s time to bake fresh strawberry oatmeal bars, one of YOUR favorite healthy desserts!

These strawberry oatmeal bars have become one of the most cherished recipes on my site over the years.

I love hearing the different ways you’ve stumbled upon it, often through word of mouth, but equally as much because you were looking for healthy desserts under 100 calories, healthy desserts for kids, easy oatmeal bars, or (and perhaps best of all) healthy strawberry recipes you could feel completely justified eating for breakfast.

I have been baking these strawberry oat crumble bars for years, maybe more than any other dessert!

They’re unbelievably easy (one bowl, no mixer!), work with fresh or frozen strawberries, and, as the reviews attest, they are wonderful: scrumptious, buttery, fruity, and sweet—everything a strawberry dessert can and should be.

Just for you, the best recipe for strawberry oatmeal bars!

Strawberry Oatmeal Bars recipe — So easy, kids can make them! With 100% whole grains and the natural sweetness of strawberries, these simple one-bowl crumb bars are healthy enough for a snack but sweet enough for dessert. @wellplated

The Best Strawberry Oatmeal Bars. EVER.

A bewitching cross between a soft bar cookie and a streusel-topped crumb bar, these sweet treats are the perfect use for the fresh strawberries that are finally starting to make their way into grocery stores in big, juicy quantities.

(If you are looking for frozen strawberry recipes, these strawberry oatmeal bars will work with them too! See the recipe notes for more details.)

They’re sweet but not too sweet, buttery, and bursting with juicy berries in every inch.

An Easy Dessert Recipe

Sometimes you want to put a lot of effort into your strawberry dessert. In that case, make Strawberry Cake.

Sometimes (like now) you want dessert FAST. I’ve got you. These oatmeal bars are EASY!

  • The top and bottom “crust” of the oatmeal bars comes together in a single bowl.
  • Since the recipe calls for melted, not softened, butter, you don’t even need to wait for the butter to come to room temperature prior to baking.
  • Most strawberry oatmeal bar recipes require making the filling in a separate bowl; these fresh strawberry bars do not.
  • Once you’ve pressed the first crust layer into the pan, simply scatter the filling ingredients—diced strawberries, lemon juice, and a touch of sugar and cornstarch—right over it, then sprinkle the remaining oatmeal crumble on top.

Looking for a strawberry oatmeal bars vegan recipe? Just swap the butter for coconut oil.

These Fresh Strawberry Oatmeal Bars couldn’t be easier or more delicious! With a buttery crumb topping, sweet strawberry filling, and warm vanilla glaze, they are perfect for a snack or potluck. @wellplated

In the oven, the strawberries “cook” into a bright, strawberry-pie-like filling that’s reminiscent of homemade strawberry jam.

Made with oatmeal, whole wheat flour, and little added sugar (the sweetness of these bars comes almost entirely from the fresh strawberries themselves), these healthy oatmeal bars are wholesome enough for breakfast or an afternoon snack.

Try one warmed up with a dollop of Greek yogurt.

Strawberry Crumb Bars recipe — with a buttery crust, sweet fresh strawberry filling, butter crumb topping, and vanilla glaze, these bars have it all and are so easy! Made with 100% whole grain and the natural sweetness of strawberries, they are healthy enough for a snack but make a wonderful dessert bar for a party or picnic too! @wellplated

More Ways to Enjoy

  • For those who prefer a sweeter take, a drizzle of vanilla glaze (recipe included below) sweetens the strawberry bars enough for dessert. (Another dessert option: these Strawberry Jam Bars!)
  • Mix up the fruit! For example, these Blueberry Oatmeal Bars use the same base recipe, with a different juicy filling.
  • If you feel the need to garnish them with a scoop of vanilla ice cream, you have my blessing!
These are the easiest and best Strawberry Oatmeal Bars! Made in one bowl with a buttery crumb topping, sweet fresh strawberry filling, and vanilla glaze. Recipe uses 100% whole grains, so they are healthy enough for a snack but sweet enough for dessert! @wellplated

Healthy Strawberry Oatmeal Bars

The easiest, best strawberry oatmeal bars with butter crumb topping. One bowl, simple ingredients, and 100% whole grain—perfect for a snack or dessert!

Prep: 20 minutes
Cook: 35 minutes
Total: 55 minutes

Servings: 16 bars

Ingredients

For the Strawberry Bars:

  • 1 cup old-fashioned rolled oats gluten free if needed
  • 3/4 cup white whole wheat flour or substitute all-purpose flour or 1:1 baking flour to make gluten free
  • 1/3 cup light brown sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon kosher salt
  • 6 tablespoons unsalted butter melted (or substitute melted coconut oil to make vegan/dairy free)
  • 2 cups small-diced strawberries about 10 ounces, divided
  • 1 teaspoon cornstarch
  • 1 tablespoon  freshly squeezed lemon juice from about 1/2 small lemon
  • 1 tablespoon granulated sugar divided

For the Vanilla Glaze (optional but delicious, especially if you prefer a sweeter bar):

Instructions

  • Place a rack in the center of your oven and preheat to 375 degrees F. Line an 8×8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.
  • In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.
  • Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and 1/2 tablespoon of the granulated sugar. Scatter on the remaining berries, then the remaining 1/2 tablespoon sugar. Sprinkle the reserved crumbs evenly over the top. You will have some fruit showing through.
  • Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely (you can speed this process along in the refrigerator).
  • While the bars cool, prepare the glaze: In a medium bowl, briskly whisk together the powdered sugar, vanilla, and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment-paper handles, lift the bars from the pan. Drizzle with glaze, slice, and serve.

Notes

  • The recipe can be doubled and baked in a 9×13-inch baking pan. The bars will be a bit thicker but will still be delicious. To make them gluten free, substitute the white whole wheat flour with a 1:1 baking mix.
  • Store leftovers in the refrigerator for up to 5 days.
  • To freeze, let the bars cool completely and do not glaze. Wrap tightly in plastic before placing in the freezer. Let thaw in the refrigerator and top with glaze before serving. (Bars can be frozen already glazed if needed.)
  • If you want to use frozen strawberries, let them thaw completely and pat them dry before making the recipe.

      1. Strawberry oatmeal bars.  See notes: using frozen strawberries. I do not see instructions to use frozen berries.

        1. Hi Maggie, I haven’t used frozen strawberries in this recipe, but other readers have tried it and enjoyed the results!

        2. Hmmm… your blog says “(If you are looking for frozen strawberry recipes, these Strawberry Oatmeal Bars will work with them too! See the recipe notes for more details.)” Where are your “recipe notes” with these details?

          1. Hi Marilyn! In the recipe card at the bottom of the post, there is a section for recipe notes. I hope this helps!

          2. Hi Stephanie! I think raspberries would work great here. I hope you enjoy the recipe!

  6. First of all, HAPPY ANNIVERSARY! LOVE seeing your wedding photos. So gorgeous. Also, love the little nuggets about what you learned this year. My parents, who have now been married for just shy of 44 years (SAY WHAT?!) say not a year goes by that you don’t learn a few new things about how to do marriage, and life together, better. And OMG – these strawberry bars. What a perfect way to celebrate. Think I might have to join you in  making a batch tonight :)

    1. Leah, I’d love to hear what your parents have to say! That makes me happy to hear that I’ll always keep learning :) Thanks so much for your kind note and anniversary wishes!

  7. Happy Anniversary to you and Ben.. My hubby and I just celebrated 21 years on March 20 th. Don’t blink Erin ~~time goes by so fast..
I love your dessert. We had a strawberry cake with blueberry and raspberry & blackberries. The merging of flavors were divine with cream cheese icing.
    Your dessert looks so yummy..

    I love your photos.

    1. Kim, congrats on 21 years!! That is just inspiring, and a great reminder to cherish every day. Thanks so much for your kind words and wishes. They mean so, so much <3

  8. Congratulations to you! I admit, I teared up reading this post and love seeing the picture of your mom walking you down the aisle. And those bars look absolutely divine girl!

  9. Dear Erin, congratulations to you and Ben on your fourth wedding anniversary! Thank you for sharing the lovely photos from the big day! You look gorgeous and over-the-top happy! How nice that your mother could walk you down the aisle; I’m sure you could feel your father’s presence. Are those ruby slippers I spy under your beautiful and elegant wedding dress???

    1. Good eye Laurie! Why yes they are. I love bright red, so I couldn’t resist. Thanks so much for you kind note too :)

  10. What a sweet and fun way to celebrate your wedding anniversary! Matt and I came up with a rather fun gf cake for our upcoming wedding: hummingbird with cinnamon buttercream between the layers and covered in peanut butter buttercream. I found a recipe from The Lean Green Bean for hummingbird pancakes that I plan to make soon. I intend to start the same tradition as you and will make hummingbird desserts to celebrate. :) I love your marriage insights and believe they are all so true and worth reminding ourselves. I need to physically put my phone away much more. Happy anniversary, and the photos from your special day are beautiful!

    1. Kori, can you believe I have never had a hummingbird cake??? That needs to change ASAP! I love that you came up with your own cake—that is so special. Thanks for your kind words, and I hope you and Matt have a lovely weekend (with pancakes!).

      1. Thank you, Erin! I ran my first 10k (never thought it would happen!) but didn’t have time to make pancakes. That will be next on the agenda! ;-)

  11. Happy Anniversary to you and Ben. I think the lessons you learned this year and so generously shared with your followers are great for anyone to apply to interaction with others. Thank you.

I also wanted to add that while I have only “met” you through your blog, I think it’s safe to say that Ben might think that you are the best person he knows!

  12. Happy 4 years! What a lovely post- you looked beautiful on your wedding day :) Hope you have a lovely time with your mother visiting and lots of these oatmeal bars. Totally love how easily the filling comes together!

  13. I would give anything to be able to spend another day with my mom. Cherish this time! A very Happy Anniversary and many more to my favorite blogger and her hubs! And the oatmeal bars look great too!

    1. Marsha, I’m so sad to hear that your mom is no longer with you. I will absolutely cherish our time and appreciate your reminder! Thanks so much for your kind anniversary wishes too.

  14. Happy anniversary Erin! Your pictures are so beautiful. My sweet mama just visited me the other weekend to help out with some things around our house, too. Aren’t moms the best?? Hope you had a wonderful time together and ate plenty of these amazing looking bars! Cheers!

    1. Lauren, I definitely am lucky to have her help! Thanks so much for the kind note and wishes.

  15. Happy anniversary!! You were such a gorgeous bride. Love all those photos. :) And these bars, my god. I need them!!

  16. These look so delicious…..your wedding dress is beautiful…..great picture of you and your mom….

  17. hey girl Happy Anniversary! Love the pics and those flowers were so pretty and so was your dress! God has blessed you both so much! And by the way …..the bars look so yummy!

  18. Happy anniversary! I love your cute tradition of making a strawberry dessert every year and I adore those beautiful wedding photos! These bars looks so incredible – definitely worthy of celebration :)

  19. Erin I love your tips! Especially the 3 things unsaid and the phone tip. Sometimes phones ruin everything. These bars look amazing! Happy anniversary! PS I love that picture of your mom. You both looks so beautiful and happy.

  20. Happy Anniversary Erin! Love your blog, sense of humor and yummy recipes. :)
Many continued blessings to you and Ben.

Can’t wait to try these bars!

P.S. Can I use frozen strawberries?

    1. Thank you for the kind note Elisabeth! Honestly, I would be nervous that frozen strawberries would get too mushy once they thaw. The amount of juice in fresh strawberries is just right for the recipe, and you also have to dice them fairly small, which I think would be a challenge with frozen berries, since those come in larger pieces. If you do decide to experiment with frozen though, I’d love to hear how the recipe comes out!

  21. Happy anniversary Erin and Ben!

Darling post, yummy looking bars and timeless marriage lessons that are worth repeating year after year!

Here’s to many more happy years together!!

    1. Erin, I made these this evening – so good! They cool down so fast that I tried it practically straight out of the oven and so delicious warm – my initial sample taste of just the corner piece grew to take over an entire side of the pan..it happens, what can I say. They are crumblier than I thought they’d be but I think it’s because I reduced the butter a bit. Will be great with a dollop of yogurt for breakfast – I was looking for some variety for my breakfast and this is going to hit the spot! 5 stars

      1. Ana, I am so happy to hear that! And I’ve totally been there with the side of the pan vs. corner :) The crumbliness I’m sure is related to using less butter than listed in the recipe, but I’m glad you are happy with how they came out!

  22. Happy Anniversary!
We are celebrating our 6 month anniversary this month.  Time does fly!

      1. Chiming in four years later to say how much I loved these bars! I love to bake but have been looking for some healthier options after becoming increasingly grossed out by the amount of sugar my family was consuming. These are the perfect treat. I used regular whole wheat flour and didn’t find them dry at all. Thanks for cheering up our c/ California fire season stuck inside for a month weekday evening!5 stars

  23. Oh my goodness.  THOSE BARS LOOK DEVINE.  And the photos of your wedding are so beautiful (especially the one of your mum walking you down the aisle)!  I love that you write a post every year on your anniversary to reflect on the marriage and to add a new strawberry dessert to your library of yummy treats.  That’s such a fun tradition, and something that will be so nice to look at many years down the road!  Filling your blog with great recipe is amazing, but filling it with special memories is priceless!  Wishing you two all the best this year (and every year) for your anniversary.  Now if you’ll excuse me, I’ve got three other strawberry dessert posts to read!  :)

    1. Ok, I was just going to read the other anniversary posts and go on with my day (because normally when I start reading your blog I get sucked in and read for hourrrrrsssss) but I absolutely had to come back and make a comment on your photography.  I’ve read a lot of your posts (hardly ever in real time, but just as I’m browsing around then I inevitably get lost in the Well Plated rabbit hole).  It’s amazing to me that you started the blog after you got married (only 4 years ago!) and it’s already in such a great place.  And it’s even more amazing to look at the photos from those four anniversary posts and see how far your photography has come and how much you’ve grown!  You should be very proud of how your blog has grown over the years, I definitely am!

      1. Jess, this email practically brought tears to my eyes, it is just so sweet and kind. THANK YOU from the bottom of my heart. It means more than I can say. xoxoxo

  24. Happy Anniversary! I love that you make a strawberry dessert each year to celebrate. Your photos are gorgeous!

  25. I hope you had a wonderful anniversary, I have seen your photos from your wedding over the years and they are beautiful. I made these on Saturday morning, after breakfast was made, I had some strawberries that needed to be used and I had all the other ingredients on hand. They were simple and delicious and we all loved them. I also loved that I didn’t have to made a separate topping. Thank you for this simple healthy recipe. Even though I added the glaze, which just made them better.

    1. Courtney, thank you all of this! Your kind words, trying the recipe, and taking time to share your review here. It all means so much!

  26. Love the recipe and what a sweet post! I don’t think I’ve ever seen your wedding photos. You were a lovely bride! I need to apply marriage tip #1 more lol. Congratulations on your anniversary!

  27. Congratulations of four years of marriage Erin and Ben! I love the emphasis you put on learning and growing together with your husband. It sounds like you and Ben are great partners! I’ve been following your blog for about a year now and I always enjoy your style of writing and practical healthy recipes. These strawberry bars look so simple and I like that they can be a healthy treat or a sweeter dessert!

  28. Oh my goodness!! I just made these, I had some strawberries in the fridge that needed used up. Fantastic!! My husband loves them too. I debated about the glaze, and he voted no glaze. And guess what? They don’t need glaze. They are perfect just as they are, with a little dollop of whipped cream on the side. They are just the right blend of sweet and tart. I’ll definitely make these again. They are perfect with a cup of tea for a special afternoon treat. Thanks for a great recipe! 5 stars

    1. Christine, I am so so excited to hear this!! Thanks so much for sharing your review. It means a lot and is so helpful for others considering the recipe too!

  29. Thanks for sharing a great recipe!  I made this tonight as directed and served it warm out of the oven with a scoop of vanilla ice cream.    Yummy!!!   I will definitely be making this for years to come!5 stars

    1. Connie, I’m so happy to hear this! Thanks so much for trying the recipe and letting me know how it turned out for you.

  30. I bought 3 quarts of strawberries yesterday for $1.28 each!!  Came across your receipe, which looks fabulous.  Question, I am out of parchment paper.  Could I line the pan with a sheet of foil and be okay?

    1. Hi Sally! I would just grease the pan well and omit the parchment paper. I don’t think that the foil is necessary. I hope you enjoy the recipe!

  31. Made these this morning and they turned out great! Used half coconut oil and half butter. Thanks for a great recipe!!

    1. I’m so excited to hear that Gabrielle! Thanks for trying the recipe and letting me know how it came out for you.

  32. Went strawberry picking over the weekend and made these bars this morning.  I found them a bit wet.  Has anyone tried drying the stawberries somewhat first?  Thx.5 stars

    1. Hi Lisa! The bars are a little moist vs. crispy, but should not be wet. My guess is that your strawberries were particularly ripe, since they are freshly picked. Next time, I would suggest sprinkling on a little extra cornstarch. I hope that helps!

  33. Just found your site looking for a healthy recipe for teacher appreciation week! I’m going to try it today! I’m going to double the recipe, should I just keep them in two separate 8×8 pans or can I just use a 9×14 cake pan? By the way happy Anniversary! You were a beautiful bride!

  34. Just wanted to say I made this today and it turned out great!! So tasty! I have one question though which may be dumb but just have to ask! How did your glaze stay so white? After adding the vanilla mine turned a very light brown color  and although the taste was perfect I like the look of the white over the browned oats and was wondering if you know what may have gone wrong? I even added more sugar and milk but the color remained. Thanks again for a wonderful recipe!!5 stars

    1. Raj, I’m so happy you loved the taste of the bars, and this isn’t a dumb question at all! You made the recipe perfectly. Pure vanilla extract (which is what you should ALWAYS use while baking) can make a glaze look slightly brown, since it is brown in color. The taste is totally worth it though! I used a clear vanilla extract for the photos only, because it comes out a more true white.

      1. Thanks Erin! Good to know I’m not yet officially crazy! I made these with my 2.5 y/o twins trying to grab the ingredients as I used them so I thought maybe I just messed something up! Thanks for the clarification and happy anniversary!!

        1. Hi Erin,
Just found you online.  Can’t wait to make the strawberry bars.  Can I use almond flour for these?
          TIA
          Carol

          1. Hi Carol! Unfortunately, I have not tried this substitution, so I can’t vouch for the results. However, other readers have swapped in almond flour and enjoyed them. If you decide to experiment, I’d love to hear how it goes!

      2. Thanks Erin! Good to know I’m not yet officially crazy! I made these with my 2.5 y/o twins trying to grab the ingredients as I used them so I thought maybe I just messed something up! Thanks for the clarification and happy anniversary!!

  35. Happy Anniversary Erin!  I hope you had a lovely day with your hubby and mom.  :)  Thanks for sharing these lovely bars.  Can’t wait to try them.  I have some strawberries in the freezer that I have been looking for a recipe to pull them out.  Not sure if the texture will be a bit off, so I may sub in some fresh berries too.

    Thanks again.

    1. Hi Chris! A few readers have had good luck using frozen, thawed berries. (if they are whole, let them thaw enough to chop them) I hope you love the bars!

  36. I made your strawberry oatmeal bars tonight and they are delicious! My only regret… is I didn’t make a double batch! Have you tried freezing these? I would love to make a couple batches and freeze them for a quick and delicious breakfast on the way to work.5 stars

    1. Stephanie, I”m so happy you loved these so much! You can certainly freeze these. If time allows, I’d suggest freezing them without the glaze, then letting them thaw in the refrigerator. You can then add the glaze right before enjoying (otherwise, the glaze tends to “disappear” when frozen/thawed).

    1. Hi Lauren! Old fashioned oats usually refer to “rolled” oats which are less processed than quick oats. I used the old fashioned (rolled) oats. You can use quick oats, but the texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking.

  37. These bars look delicious !! Can less butter be used ??? Or can lower fat margarine be used instead ??? Gotta watch the fats in our diet ..thanks so much !!

    1. Hi Doris! I’ve never tested this recipe with either less butter (I think it would turn out too crumbly/dry) or a lower fat margarine. Overall, the recipe really doesn’t have a significant amount butter compared with similar bars. If you don’t mind the taste of lower fat margarine, you could try that swap though!

  38. I never comment on recipes.  That said, I logged back onto my computer after making these bars, because I simply had to tell you how awesome they are.  I didn’t even do the glaze—they’re plenty sweet, as is!  And I just plain love them.  Even better— my kids both love them, too.  Many thanks for a fabulous recipe!  :)

    1. Debbie, this makes my night!! Thank you SO much for sharing this kind review. I’m so happy that you and your kids enjoyed these bars so much. Have a wonderful night!

  39. These granola bars looked interesting so gave them a try. They were very good. My hubby especially liked them. I would make them again. They are a keeper.5 stars

    1. Carol, I am so happy to hear how much you and your husband loved them! If you try the recipes with blueberries too, I’d love to hear how they come out. Thanks for taking time to leave your review!!

  40. I ment to mention that I am going to try this recipe with blueberries. Also will try using coconut oil in place of the butter. I think the blueberries will also be yummy.

  41. Hi Erin, I made this recipe the other day, it was gone in a day (and there’s only 3 of us) so I made it again two days later (gone again).  It’s delicious and so flavorful and good for you too!. I like that there’s loads of strawberries.  My daughter had it for breakfast and even snuck a piece or two for a late night snack :).5 stars

    1. Debbie, I am so excited to hear this! Thanks so much for sharing how much you and your family enjoyed the bars. It means a lot!

  42. Happy Anniversary!  Rarely do I have time to look at Pintrest but your recipes looked so yummy that I could not resist. Thank you for sharing your anniversary tradition of making a strawberry something to celebrate. My husband and I will be married 40 years in July. I think I should make these to celebrate early!  We eat breakfast in bed during the week and these would indeed be scrupulous with yogurt.

    1. I love that tradition Karen! Thanks so much for sharing it, and I’m so glad that you found these bars :)

    1. I’m so excited to hear that Michaela! Thanks so much for trying the recipe and sharing your review. It’s great feedback for me and for others too!

  43. Made these tonight! Excellent flavor but like a few others, mine fell apart. I think my berries may have been extra ripe. I did use some of the suggestions and doubled the cornstarch hoping it would firm up the bars. I’m going to make another batch with store bought strawberries and 1.5x the crumb mixture. They were sooo good with some strawberry Greek yogurt. Have you ever added protein powder to increase the protein content? These would be perfect for breakfast if I could find a way to up the protein. Thanks for such a wonderful recipe!5 stars

    1. Hi Sarah! I’m glad you liked the bars and think your suggested tweaks sound like a great way to play around to get the bars to be just to your liking. I’ve never tried these with protein powder, so this would be an experiment on your part. Definitely keep an eye on the batter to make sure it’s not overly dry. You can always top with with more Greek yogurt for protein too!

  44. Hi Erin I really want to make this recipe after searching for strawnerry dessert for a while ! Do you think coconut sugar will be used instead of granulate sugar? Will it change the color of the bar? Thanks ❤️ And btw you were a gorgeous bride ❤️ ??

    1. Katie, I’ve never made these with coconut sugar, so I can’t give you specifics. Coconut sugar is a lot drier than granulated sugar, so I would be concerned about the bars drying out—you might want to think about adding extra butter, some Greek yogurt, or applesauce to off set this. I’d suggest searching online for tips to swap regular granulated sugar for coconut sugar. Coconut sugar also acts more like brown sugar vs. white, so the color, flavor, and consistency of the bars would be different too. If you decide to experiment, I’d love to hear what changes you make and how the bars turn out!!

      1. Thank so much for your suggestion I just start baking not long time ago and your site now is the place I do enjoy reading !! Your creations are fantastic!!

  45. Erin,
Can I just say that this is my new favorite thing, on the planet. It’s literally perfect. I didn’t have enough to strawberries so I threw in some blueberries to make up for it. Delicious! Anyways, thanks for sharing your genius :) 5 stars

    1. Rachel, I am sooooooo giddy to hear this! Thanks so much for sharing this glowing review. I’m so happy you love the recipe, and the blueberry addition sounds dreamy :)

  46. This is a super easy recipe and delicious! I used our garden strawberries. Thanks for the recipe. I will definitely be making it again.5 stars

    1. Karen, I am so pleased to hear this, and I bet this recipe was pure heaven with your garden strawberries! Thanks for sharing your review.

    1. Denise, you certainly can, though the bars might come out a bit dryer and they will have a more pronounced “wheat” taste. I’d suggest trying half whole wheat flour and half all purpose if you prefer not to purchase white whole wheat flour, which is softer and milder in flavor.

  47. Hello! I tried this recipe last night and wow are these bars good! Not too sweet and perfect for summer. The bars do get softer as they sit but I bet it’ll be great in a bowl with Greek yogurt.
The only changes I did was I used coconut sugar and drizzled in a some molasses to mimic brown sugar. I used probably around a tablespoon. Also, I skipped the lemon juice since I didn’t have any. Great recipe.5 stars

    1. Kathy, I am so happy to hear that you enjoyed these bars so much! Thanks for letting me know how they came out for you.

      1. Hi Erin! I was wonderinf if I had to use kosher salt as opposed to regular salt? I wanted to make these now but sadly don’t have kosher salt in my kitchen! ?

        1. Hi Deanna! I prefer the taste and seasoning qualities of kosher salt which is why you’ll see it listed in all my recipes (letting you know in case you try others), but you can certainly use table (regular) salt in this recipe if that is your preference. You’ll want to use a reduced amount, because the grains of kosher salt are larger than table salt. If you do try them, I hope you enjoy the bars!

  48. Hello from Leeds, England!
I just discovered your blog when I was searching for a healthy, different recipe to enter into a Bake-off coffee morning competition on Sunday and thought these Strawberry Oatmeal bars sounded perfect.
    Guess what? I won!!!
The judges loved the summery, fruity, not-too-sweet flavour and moist texture. They were so easy to make and now all my friends want the recipe!
I won a beautiful glass trifle bowl! So THANK YOU very much for a fab prize-winning recipe!
(I love your wedding photos and marriage tips too)

  49. HI Erin!  I just came across your blog and love your recipes, I loved blogging my fave recipes too! I’m going to make these strawberry bars tonight for my daughters to take to a party tomorrow, they’ll be perfect!

I also showed my friend the pic of your Mom and you, she is getting married next year and wanted to know if you would share where your Mom got her dress from?  It is stunning on her, so elegant!

    Best to you, Kim.

    1. Kim, this completely made my mom’s day!!! Her dress is from Nordstrom. Thanks for your sweet words, and I hope that you love the bars!

  50. Loved your recipe! It came out delicious. I didn’t add the glaze. The bars were sweet enough for me on their own. I’m planning on bringing these to work for my breakfast. They’re so easy to pack and go. Thanks!5 stars

  51. Yay for your Anniversary !!  Beautiful … question about the bars … is it possible to use frozen strawberries??

    1. Thank you Shari!! You can certainly use frozen strawberries. I have details for you in the recipe notes!

      1. Thanks Erin … hope you have a spectacular day !!   And if I do try the frozen, will definitely let you know

        1. This comment isn’t recent anymore but I tried these with frozen strawberries. I let them thaw just enough to chop them more easily and they still achieved a lovely jammy quality.5 stars

  52. I just made these last night with the help of my 3.5 year old daughter (she cut the strawberries in an egg slicer). I used coconut oil and regular whole wheat flour. I did not find them to have a strong “wheat” flavor with the whole wheat flour. They tasted just fine without using the “white” whole wheat flour. I thought the bars tasted great, and even my super picky eater (she must be at least 75% mac and cheese by this point) gobbled the bar up for breakfast this morning. I prefer this method over a simple “fruit crumble.” I guess because you get more of the yummy crumble. :) Thanks for this super easy recipe!5 stars

    1. Cristin, I’m so happy you and your daughter enjoyed this recipe so much!! What a great idea to use an egg slices too. Thanks so much for sharing your review!

  53. I tried this recipe which looks delicious, but my strawberries didn’t really melt down- so it’s just a mix of hot fruit and granola – where did I go wrong??

    1. Jeanette, my guess is that your strawberries were not especially ripe, or that maybe you didn’t dice them small enough? I hope the bars at least still tasted good!

  54. I made this recipe today and it was sooo yummy!! I am gluten free, so I substituted GF Baking flour and they came out so delicious. Love them – thank you!

  55. Hello! Recently made your strawberry bars, and although they did turn out delicious, I had trouble keeping the bar intact. I had to use coconut flour because I am gluten free, and instead of using butter I used coconut oil. Could this be the reason? And if so, is there anything else I can do to make the bar stick together more? Thank you!
    Sarah

    1. Hi Sarah! The coconut flour is definitely the reason, because it is so much drier than wheat flour. I’d suggest using a GF flour blend like this one instead of using coconut flour. http://amzn.to/2bwCkkl  Others have done that with great success!

  56. I tried the recipe and it didn’t work out for me.  My mixuture looked like it had too much flour and not enough butter ratio to make everything ‘wet’.   It tasted good when I mixed it all together but the oats and flour were raw and the strawberries cooked.  Bummer.

    1. Hi AJ! That IS a bummer. As you can see from the other reviews, this recipe has been made quite a lot with others being happy with it. This sounds like it could be an issue with either measuring or the bake time. Regardless, I’m sorry it didn’t work out for you!

    2. I agree with you! Not enough butter ratio. I baked for 40m and even gave it extra time in hopes it would brown or stick together. I found the strawberries cooked by the oats and flour stayed uncooked. Good tasting but they fell apart. Was not happy with this recipe and I do bake a lot.

      1. Hi SE, I’m sorry to hear that you also had trouble with the bars. It’s so hard to say what might’ve gone wrong without being in the kitchen with you. This recipe has been a hit with many readers, so I wish you would’ve enjoyed it too!

  57. I made these bars today, using GF oats & flour and they came out perfect.  I didn’t bother to make the icing because I thought they were sweet enough.  Loved how easy the recipe was and that it was made with ingredients I had in the pantry!  Thanks for sharing!!5 stars

  58. Loved this recipe!  Made for my Church Youth Group. I doubled it and put it ina 13x 6 pan. Did not add the icing.   It really didn’t need it!  This was devoured by the group!  Thanks for such a yummy recipe!!5 stars

    1. I am so excited to hear that Barb! Thank you for sharing it with so many and for leaving your kind review here.

    1. Erin, it’s hard for me to give you a definitive answer—the lemon really makes the flavor of the strawberries pop, so it will taste more bland without it (though it certainly won’t taste awful!). Do you have orange juice you can swap?

  59. I made these today but they never formed together as a solid so it just turned out like a crumble. I can’t figure out what I did wrong :(

    1. Hi Alyson! It’s hard for me to say without being in the kitchen with you. My guess is that it is a case of mis-measuring. Did you lightly scoop the flour into your measuring cup, then level it off, vs. just reaching it down into the bag? This is actually the best way to measure flour to make sure you don’t end up with too much. Also, did you use the full 6 tablespoons of butter? Those are my best guesses. I’m sorry the bars didn’t turn out!

  60. Sounds delicious! I have a ton of frozen strawberries from the summer. Have you ever tried baking with frozen strawberries? I’m struggling to find recipes that use frozen which leads me to believe maybe it won’t turn out well. Maybe too watery?

    1. If you’d like to try frozen strawberries, I’d suggest thawing them and then blotting them dry before using, or tossing them in a little bit of cornstarch before adding them. Many readers have tried this with good luck!

  61. I stumbled on your blog cruising Pinterest. I usually don’t  read to blogs, but find yours very interesting. Job well done. Thanks.

    1. What a wonderful compliment! Thank you so much for taking the time to say so, Audrey. I really appreciate it! I’m glad you’re here. :)

  62. I’ve made these bars before and they were fantastic! I’m on a ‘no refined sugar’ diet and I’m wondering if the crumble would work out if I used honey instead of the brown sugar?

    1. Hi Elizabeth! I actually would not recommend the honey swap. The bars are about as low in sugar as I could make them, and I worry that the crumble wouldn’t hold together since honey is liquid. The great news is that I do have lots more naturally sweetened recipes in my recipe index! You can find them here: https://www.wellplated.com/category/recipes-by-diet/naturally-sweetened/

  63. Wow I clicked a Chocolate, Chocolate and more link on FB and found this recipe… except I got more then expected! A wonderful post. I was crying before I got to the recipe. I love the photo of your mom walking you down the aisle. When I clicked the link I didn’t expect a whole blog full of real life encouragement as well as yummy recipes.

    1. Debbie, I am pretty much tearing up reading this comment! I can’t tell you how much it means to me to know that you appreciated what I shared in my post. I’m so glad that you found my blog, and I hope that you love the strawberry oatmeal bars too!

  64. First, your wedding pictures are beautiful!

Second, I just finished and taste-tested two batches of this recipe, one with strawberries and one with blueberries, and both were DELICIOUS!

I somehow managed to make one crust drier than the other, but they both worked out fine! I think I might have lost focused and either added an extra tablespoon of coconut oil or forgot one, but it worked out just fine.

The only thing that ‘fell apart’ for me were the crumbs on top, but I expected that and patted them down with a spatula to make them stay a little better.

For anyone who wants to try it with blueberries, what I did was take a pint of blueberries and put them in a saucepan over medium heat, then stirred (occassionally) for 10 minutes. After 10 minutes, I used a potato masher to flatten them a bit, but I didn’t aim to hit every blueberry. Then, I just followed the recipe and used my mashed blueberries instead of strawberries. I concentrated more corn starch on parts that were juicier.

I cooked the blueberry bars for 35 minutes and the strawberry ones for 40, and then stuck them in the fridge after they cooled down a bit. My boyfriend and I shared a piece of both, and again, they are so good!!!

Thank you for sharing this recipe with us!!5 stars

    1. Thank YOU, Beata!! I’m so glad you enjoyed the bars. The blueberry version sounds delicious…thank you for sharing your review and all of your tips! I really appreciate your taking the time to do so. :)

    1. Hi Kelley, the cornstarch helps thicken up any juice released by the strawberries while baking and makes the filling jammy instead of runny.

  65. Thank you! I made these for my 4 year old to bring to preschool and they were delicious, super easy to make, and a hit with the kids!5 stars

    1. I’m so glad to hear they were enjoyed, Kelley! Thanks so much for taking the time to leave this nice review!

  66. Hi Erin, I LOVE this recipe. I think i made it every week for a month after I discovered it. Do you think I could use chopped apples instead of the strawberries and make a baked apple bar?

    Thanks!
    April5 stars

    1. Hi April, I’m so glad you enjoy the recipe! Trying a different filling is an excellent idea! The apples would likely be quite a bit firmer and less jammy, because they aren’t juicy like the strawberries. You might want to try cooking them on the stove in advance first to soften them up. I think blueberries, blackberries, and raspberries would work too!

  67. Hi Erin,
Tried this recipe today and came out very well. My toddler enjoyed it too :) your anniversary posts are beautiful. Wishing you both lots of happiness.5 stars

  68. Question-
What contributes to the 44g of cholesterol in this healthy strawberry oatmeal bars? My husband has high cholesterol and I would love to make these.
    Lauri

    1. Hi Lauri! A good amount of the cholesterol comes from the butter. I would suggest swapping it for coconut oil. The flavor will be different, and the texture won’t be as crumbly on top, but I think that it would still turn out. If you decide to experiment with the swap, I’d love to hear how it goes! I hope that you and your husband enjoy the bars.

  69. Congratulations on your anniversary, was very lovely to see this post. And those oatmeal bars look incredible (: I’m sure your husband will be thankful you can cook so well (:5 stars

  70. I would be very unlikely to make the strawberry bars, but I love reading about things like the lessons on marriage.  Since I didn’t get married until late in life, I regularly spend time thinking about how amazing it is to be married and about what’s important in marriage.  One of the things we do is to spend time cuddling at night and we always make sure to tell each other “I love you”.  It’s amazing how that defuses any of those little things that don’t deserve mention, and helps to maintain a high level of peace in the marriage.

    1. Susan, I love that! Thank you so much for sharing. It really means a lot, and I’m going to keep that tidbit in mind myself :-)

  71. Erin I’m so happy you shared about spending your anniversary with your mom. We have a little bit in common regarding neither of our fathers being alive for our weddings (both my parents were killed in a car accident). I’m also married to a wonderful man and we will celebrate 30 years in March. He wants to visit his parents who are not doing well, during our anniversary. I told him it was fine but you’ve helped me to be even more okay with it! Thanks for sharing! You never know how it helps!

    1. Tina, first of all, I’m so terribly sorry for your loss. I can’t say enough how much it means to me that this post was helpful to you. If you decide to visit your husband’s parents, I think that that is absolutely wonderful. I’m sure that they would appreciate it deeply, and you and your husband will look back fondly on the time that you spent with them too. Happy anniversary, and thank you so much for sharing this!

  72. I just found your blog recently and saw these strawberry bars.  It was the perfect way to use up a pint in my fridge.  They are DELICIOUS!! My very picky three year old even ate one for breakfast this morning.  I will now be stalking through the rest of your blog looking for additional ideas to tempt the palate of my picky eater! Thank you for posting this recipe!5 stars

    1. I’m so glad you’re here, Deb! Thanks so much for taking the time to leave this wonderful comment. I truly love hearing about readers making and enjoying my recipes in their own kitchens, and I’m happy that these bars were a hit!

    1. I’m glad you and your family loved the bars, Patricia! Thank you so much for stopping by and sharing your feedback!

  73. This was amazing! It didn’t stay in the kitchen very long and  is the one dish that disappears at MOPS meetings.5 stars

    1. Thank you so much, Evelyn! I’m so glad you enjoyed the bars, and I really appreciate your taking the time to leave this wonderful review!

  74. Happy anniversary!! I just have one question. I am going through a weight loss program I wondered if you could replace the butter with unsweetened applesauce or would they not hold up?

    1. Hi Jessica, I’ve never tried the bars using applesauce, so you’d be experimenting. I’m not sure they would hold up, however. Sorry I can’t be of more help!

  75. I made these today and they were amazing! I used steel cut oats. Both my husband and I agreed we’d rather have these than any cake or cookie any day! Wow… blown away.5 stars

    1. Whoooooo hooooo! So happy to hear how much you loved these Tracey. Thank you for sharing this wonderful review!

  76. My daughter and I are on a diet and I came across this recipe, decided to make them for us. They are delicious and so easy to make. My daughter is Autistic and very picky about food, but I got her to try these and she loved them. Thank you for a great recipe.5 stars

    1. Mary, I’m so happy to hear that these bars were loved by you and your daughter. Thank you so much for sharing how it went and for leaving this wonderful review!

  77. I was looking for something to make for our church’s Sunday breakfast….can these be made a day in advance? How should I store it until time to eat? thank you!!

    1. Hi Lynn, yes they can! Just cover them with plastic wrap and keep them in the fridge until you’re ready to serve. I hope everyone enjoys them!

  78. Looks like I’m late but Happy Anniversary plus one year more (looks like you posted this in 2016).
Great photos, beautiful in fact. Delicious sounding recipe also. Quick question. If I double this for a 9×13 do you have any suggestions for length of baking time? Thank you…

    1. Hi Annabelle! I’ve never actually made this in a 9×13 myself, so I can’t speak from experience. I think the time would be pretty similar, but I would check several minutes early, just in case. I hope you love the bars!

  79. I found your recipe from Pintrest and I am so happy I came across it! I was hosting a birthday dinner for my elderly uncle (he’s 79!) and wanted to find something diabetic friendly for dessert. This recipe was just perfect! It was the highlight of the evening!! Everyone raved about it and immediately asked me when I was going to make it again! Thank you so much for sharing your anniversary story (I think it is such a great idea to make a strawberry dessert on your anniversary! My best friend is getting married this summer so I think I’ll share that with her.). 5 stars

    1. Saundra, I’m so excited to hear that these bars were a hit at your uncle’s birthday! Thanks so much for giving the recipe a try and taking the time to report back how it went. :)

  80. I’ve new looking for more healthy dessert options and I stumbled upon this recipe. I had all of the ingredients so I instantly made it. It turned out SO delicious!! (I chose to make the icing and drizzle it on top). It’s so moist. I baked it at 350 for 40 minutes (my new oven seems to run hotter than my last one). I am saving this recipe and definitely making it again! Thank you!!5 stars

    1. Kelly, I’m so happy to hear you enjoyed the bars! Thank you so much for taking the time to leave this wonderful review!

  81. I love the whole grains and fresh berries in these delicious bars! I used truvia brown sugar blend and splenda for the sugars and added a tablespoon of flax. I did not think it needed the glaze. I am adding this to my favorite healthy dessert recipes, I am delighted to have a new way to use strawberries, especially since these can be frozen.5 stars

    1. Kat, I’m so happy to hear you enjoyed the recipe! Thanks so much for taking the time to share your tweaks and to leave this great review!

  82. So i’ve been trying to make granola bars forever and tonight I have finally accomplished that! Thank you for the wonderful recipe and I can’t wait to bite into them in the morning! 5 stars

  83. I had the bottom layer of a bucket of fresh strawberries that I was trying to figure out what to do with. I ran across this recipe, and I’m SO EXCITED. These are so amazing. My whole family ate them after dinner, I’m having a little more as a late-night snack, and I’m totally planning to eat what’s left for breakfast. Because fruit + oatmeal = breakfast, right? :) Also, I’m really excited to try swapping out the strawberries for peaches and blueberries later this summer. Thanks for my new go-to recipe for fresh fruit!5 stars

    1. DEFINITELY breakfast acceptable Elizabeth! I am so happy you enjoyed the bars. Thanks so much for trying the recipe, reporting back, and for leaving this lovely rating. It is so helpful both to me and to others considering the recipe too!

    2. Has anyone tried rhubarb alone? Afraid to try due to only a tablespoon sugar in recipe. My husband destests strawberries. Cjmdegroot@hotmail.com

      1. Hi Carol! I haven’t heard of anyone doing only rhubarb, and I don’t think the rhubarb would break down like strawberries. I’d suggest cooking the rhubarb into a jam-liike filling on your stove (adding sugar and lemon juice to taste, and a bit of water as needed) first, then layering it over the oatmeal crust OR seeing if you can find an alternative rhubarb recipe online. If you decide to experiment, I’d love to hear how it comes out!

  84. I used coconut sugar in place of all the sugar with no problems. We find most treats to be too sweet and I was itching to do the icing layer so I only put two tablespoons of sugar in the crumble. I forgot to put sugar in with the strawberries, but found it didn’t need it and they set quite well. I did sprinkle a tiny bit extra cornstarch for good measure and it seemed to do the trick. I could have gotten away with 1/3 cup icing sugar (made with coconut sugar powdered in my coffee grinder) so I think I will do that next time. Love this recipe and how easy it was and cant wait to make it again. Just wanted to mention what I did in case anyone isn’t big on sugar like we are.5 stars

    1. Ashely, I so appreciate both this lovely review and your sharing your modifications. It’s so helpful to others, and to me too. Enjoy every bite :)

  85. Loved this. I mixed the strawberries, cornstarch, lemon juice, and sugar all together before just dumping it out on the crust (easier than layers and sprinkling).  I made it with super-fresh strawberries, so I used close to 2 tsp cornstarch. Added maybe 1 Tbsp extra brown sugar to the crust. Once assembled, I pressed the top part down gently to keep it from being too crumbly once cooked (it was for my kids–they’re not super-careful about crumbs). It was a hit! And a great way to use up some of the giant flat I picked yesterday. Thank you!5 stars

    1. I am so happy this was a hit Landy! Thank you so much for trying the recipe and taking time to report back. I really appreciate it!

    1. Hi Tiffany, I’m glad you enjoyed the recipe! A few readers have tried and loved this recipe with frozen strawberries. If you want try, I’d suggest you let the berries thaw, pat them dry, then dice. If you try the recipe with frozen berries, I’d love to hear how they come out!

      1. I used the frozen strawberries to make this recipe. I used less than two cups of strawberries (next time I’d just use one cup because they are runny) it turned out well, but it’s kind of mushy. I let them cool for 40 minutes and cool for about an hour. My only problem is they never last 5 days in the fridge because they disappear so quickly! Thanks again for the recipe.5 stars

        1. Tiffany, I’m glad you enjoyed the bars. Thanks for taking the time to share how it went trying the recipe with frozen berries!

  86. I tried making these today and they turned out pretty good! They taste floury and are very crumbly, holding together when cut but not when picked up. I’ll do some experimenting to make the crust firmer like a Graham cracker crust. Probably replace some flour with almond meal. The cornstarch made the berries into a great jam-like consistency.4 stars

    1. Courtney, I’m glad you enjoyed the bars! I’d love to hear how your experiments with graham crackers or almond flour turn out. Thanks for giving the bars a try and reporting back!

  87. I made these– added cinnamon to the oatmeal mixture and once done, instead of vanilla drizzle I put a wee drizzle of warmed up Nutella !thanks for the recipe5 stars

    1. That Nutella drizzle sounds amazing, Hilary! Thanks so much for giving the recipe a try and reporting back. :)

  88. Yummy!  Just went strawberry picking and so I am going to make your recipe.  I also love bars with oatmeal.  I will double the crust next time.  I ran out of crust so didn’t have any for top but still delicious! Thanks!  Happy 4th of July!5 stars

    1. Kaye, thanks so much for taking the time to leave this review! I’m happy to hear you enjoyed the bars, and I hope you had a great 4th of July!

  89. I made this today for the 4th of July (but used blueberries and strawberries for a more patriotic look) and they were delicious! Just the recipe I needed for a pretty but quick dessert! Thanks for the recipe! 5 stars

  90. Hi, I made these today and they are AMAZING!! Now if I could get my kids to try them ha.. I know they would love them if they tried them. Anyway, after they’ve been in the refrigerator do I heat them up? How long would you suggest?

Thanks for this post!! I’m always looking for healthy recipes to feed my family and this one is so easy so that is a big plus!! 5 stars

    1. Hi Cori, I’m so glad you enjoy the bars! I use the microwave to warm up a piece from the fridge, but I also think they taste great cold or at room temperature. Whatever your preference is!

  91. Made these for the family today… what a hit! We love strawberries and it isn’t too often I find a good recipe that is so on point. Most enough and delicious flavor! The perfect balance of sweet and sour, with just the right hint of tartness creeping in from the strawberries. Taste aside, the other win is that these bad boys stay together! Thank you for sharing this strawberry delight!5 stars

  92. I can’t rave enough about this slice it was absolutely smashing! I can see this being made many many more times in the future :) 5 stars

    1. YAY Riki, I’m so glad to hear the recipe is a winner for you! Thank you so much for taking the time to leave this awesome review. :)

    1. Hi Sherrie, I haven’t tried it that way, but I think it’d be worth a shot! I’d love to know how it goes.

  93. Made this recipe as a dessert and it was absolutely amazing. My son said mom this melts in my mouth. When it’s cooking the smell of the strawberries is like heaven in my kitchen. I will definitely make this again and again and again. You have to try it.5 stars

    1. Thank you so much for taking the time to leave this wonderful review, Shana! I’m so glad to hear the recipe was a hit!

  94. I had some strawberries to use up and was looking for something suitable for a 2 yo as my niece loves strawberries. Made this for her earlier in the week and when I tasted a slice, I was SO tempted to keep them for myself instead! I did find the crumble mixture a bit dry so I cut up some butter and pressed it into the mixture (I’d already pressed the mixture into my pan). I made it without the glaze as I didn’t want it to be too sweet for my niece and it was still delicious! Thanks for sharing this recipe, definitely gonna make it again, maybe with blueberries or stewed apples.5 stars

    1. Evy, thanks so much for giving this recipe a try and reporting back! I’m so glad to hear you enjoyed it! I think the blueberry and apple versions sound delicious too.

  95. Just made these today and OMG so so good! I have NEVER commented on any online recipes I have made and trust me I have made ALOT.

    Thanks for this! Cheers.5 stars

    1. Jennifer, I’m thrilled to hear you love the bars! I truly appreciate your taking the time to leave a comment. :)

    1. Sarah, I’m so glad to hear you enjoyed the bars! Thanks so much for taking the time to leave this awesome review. :)

    1. Hi Rachelle, I prefer using old-fashioned rolled oats, but you can use quick oats. The texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

  96. Absolutely fantastic. I made a happy mistake and only used a tspn of sugar (instead of a Tbsp) and it was still great. Thank you.5 stars

  97. hi,tried out the receipe and it was yummy… everyone at home enjoyed it . but when I made the crust and baked there was a lot of extra of the crust which was falling off and it did not stay together . I followed the receipe as it is and the quantity to .. please can u help me out on why was that happening… thank you.. looking forward to your reply.5 stars

    1. Hi Harshinee, the bars shouldn’t be overly crumbly. It’s hard to say what may have happened without being in the kitchen with you, but my first thought is that they were a little overbaked. Other possibilities: Is it possible you over-measured the flour (it should be lightly spooned and leveled, not packed, in the measuring cups) or used 100% regular wheat flour or quick oats instead of rolled? All of these things (and more!) can make a difference. The bars will be soft vs crispy and firm though—that’s a factor of the recipe and the fact that it doesn’t use gobs of butter/sugar. I hope that helps for next time!

  98. I just made this and let me tell you, it is sooo delicious! I knew it was going to be yummy, but it is even more than that! I don’t think I’m going to share

  99. Hello Erin, these are by far one of the best healthy bars I have made and eaten! My family enjoys them as well. I have made these 5 times in the last year and each time they have turned out perfect!! Thank you for sharing this recipe it has been most enjoyable!5 stars

    1. YAY Kimi, I’m happy to hear these are a winner! Thanks so much for giving them a try and for taking the time to leave this wonderful review!

  100. THESE BARS ARE INCREDIBLE!! I made a single batch and they were gone within 12 hours with 3 of us in the house haha! if you want a delicious oatmeal bar, definitely try these!5 stars

    1. YAY Paige, it sounds like the bars were a hit! Thanks so much for giving the recipe a try and for taking the time to leave this awesome review!

  101. I made this tonight and I love strawberries… The strawberries definitely make it. I think it’s good as is …didn’t make the glaze because I didn’t have any vanilla extract. Eating better for the last 2 weeks and lost 6 lbs… Just trying to eat cleaner. Would make again5 stars

    1. Thanks so much for taking the time to try the recipe and leave this review, Joanna! I’m happy to hear you enjoyed the bars!

  102. I’ve made this recipe several times now and really enjoy it. Thank you Erin :)
I’ve found that I actually prefer the texture when I make it will thawed, frozen strawberries, if anyone is interested.5 stars

    1. Thanks for the tip about the thawed frozen strawberries, Mackenzie! I’m so glad to hear you enjoy the recipe!

  103. These were so good! I wanted to use up some almond flour so I subbed it for the white whole wheat flour. They were just as delish as I expected! I didn’t chop my strawberries as small as directed because I didn’t read it right, but they were still delicious. I added a little lemon juice to the icing too. Yummmm!! 5 stars

  104. Hi Erin. These Strawberry bars sound delicious and I’m going to make them and take them to physical therapy for the best therapy people (friends) anyone could have! And also for my 89 year old mother, whom I take of. She has Alzheimers. Reading the reviews, I see you will be having your 6th anniversary soon! I hope you can grow old together, I lost my husband in 2014 to cancer. We were married 43 years. Cherish everyday together, even the hard times. Love your recipes.

    1. Lois, I’m so sorry for your loss. Thank you for this sweet comment and for the reminder to cherish every day—that’s important for all of us to remember!

  105. I made these and used quick oats, which was all I had. If I had read the comments first I would have seen why mine had to be eaten with a fork! E didn’t mind, though. Also, we couldn’t wait for these to completely cool, because it smelled so good. I put them in the freezer for about 5 min, then drizzled on the glaze. They were delicious warm – my husband kept going back for more! We’ll definitely be making these again next time strawberries are on sale. Thanks for the recipe!4 stars

    1. Sharon, I’m glad to hear the recipe is a keeper! Thanks so much for giving it a try and reporting back!

  106. @elisabeth @amanda I used frozen strawberries that I had previously quartered (defrosted them first and then just got rid of the most of the juice). Turned out really well!5 stars

  107. I made this recipe today and followed the recipe exactly except I used all purpose flour self rising and coconut oil. It was very crumbly. Any suggestion what I did wrong? It was delicious overall! Just wished it didn’t crumbled.3 stars

    1. Hello! It’s hard to say what may have happened without being in the kitchen with you, but my first thought is that they were a little overbaked. Other possibilities: Is it possible you over-measured the flour (it should be lightly spooned and leveled, not packed, in the measuring cups) or coconut oil? Or used 100% regular wheat flour or quick oats instead of rolled? All of these things (and more!) can make a difference. I hope that helps for next time!

  108. Hi- I know this is an old post but looking for advice. This recipe turned out DELICIOUS! But it was more of a baked oatmeal not oatmeal bars. I used the exact ingredients you have listed and even after refrigerating for hours it did not solidify. Where did I mess up?
    Thanks!4 stars

    1. Hi Heather, it’s hard to know what may have happened without being in the kitchen with you. Perhaps the bars didn’t bake long enough? They can be soft because of how little butter and sugar are in the recipe, and they can also get softer depending upon how juicy the strawberries are. I’m so glad you still found the recipe delicious, and I hope it comes out more like you were expecting if you do decide to give it another try!

  109. Hi.  I made these and were delicious the first day but they got so mushy by the next day.  What did I do wrong?  I kept in the refrigerator.  I want to take to my TOPS meeting and have to make the day before as my meeting is early in the morning.

    1. Hi Janene, unfortunately these bars tend to become soft the next day because of their lower amounts of butter and sugar and the moisture in the strawberries. A few recipes that might travel better include this strawberry bread or these strawberry oatmeal breakfast bars.

  110. Hi! I wanted to try this recipe this weekend. I’m vegan, and I don’t want to use coconut oil because I want that buttery flavor, so I’m going to use Earth Balance instead which is salted. Any recommendations on how much I should reduce the salt in the recipe because of this? By half, or should I just omit it completely? Thanks :)

    1. Hi Jenna! I think you can just add a tiny pinch of salt and be good to go. I hope you enjoy the bars and would love to hear how they come out!

  111. Hi, made this recipe yesterday with frozen strawberries and it was soooo good. I read all the comments so I was aware of any issues. When using frozen strawberries it is easier to cut them while still frozen. I used the recommended amount of cornstarch. Also did what another reader suggested and that was to put the lemon juice and cornstarch on all the strawberries , mix and then add all the strawberries at the same time and spread them evenly in the pan. I baked them for 35 minutes . Had a hard time waiting for them to cool because they smelled so good. Never made the frosting . YUM ! They were a little soft but I didn’t mind that. Just served it on a plate and ate it with a fork. Going to have to freeze them so I don’t eat the whole batch!! Thanks for a great , health recipe.5 stars

    1. Helen, I’m so glad to hear you enjoyed the bars! Thanks so much for taking the time to leave this detailed review—it’s so helpful for other readers!

  112. These look delicious! I’ve been looking for more recipes that rely on oats, because they help maintain my breastmilk supply. I can’t wait to try them – but may try oat flour/ground up oats subbed for the flour, maybe with a little flax mixed in.

My dad also died unexpectedly a few years before I got married. My brother walked me down the aisle, but my mom danced with me instead of a father-daughter dance. I think my wedding shoes were similar to yours, too – but more of a fuchsia color :)

    1. There can never be a proper substitute, but how special that your brother and mom did the honors—thanks for sharing, Mia. <3 (And I hope you enjoy the bars too!)

  113. Happy Anniversary! I made these for breakfast today and it was so tasty! I used whole wheat pastry flour and also added half and half vanilla and almond extract for the glaze. We really enjoyed the bars. Thanks for the recipe!5 stars

    1. Hi Addison, check out the nutrition info box below the recipe! I got 16 pieces from the 8×8 inch pan, and as specified, it’s 100 calories for 1 piece without glaze. I hope you love the recipe!

  114. I just made these and followed the recipe exactly. They are absolutely delicious!!! I will be making these again. Thanks for the recipe.5 stars

  115. Girl, YES. Making these today to use up the strawberries I may or may not have bought entirely too many of last week ??

  116. Made these (again) tonight. May or may not have eaten half the pan by myself ? but they’re healthy right?! 5 stars

  117. These are delicious! I made them Sunday and ate three myself that evening. Yummy! I added more berries than 2 cups; I did not measure, just kinda eye-balled them in the bowl and I KNOW there were more than 2 cups. I added the cornstarch and lemon to them in the bowl and tossed well then spread them out on the bottom crust, and added the remaining 1/2 cup of topping. I did not make the glaze, I thought the sweetness of the ripe berries were enough. Thank you for the recipe!!

    1. Julie, I’m thrilled to hear you enjoyed the bars! Thank you so much for giving them a try and taking the time to leave this wonderful review!

  118. I’ve made these a bunch of times and they’re always delicious! Seriously one of my favorite desserts I’ve ever made. I just have one question, though. When I drizzle the icing over the bars, it usually sinks down into them. I can still taste the extra sweetness from the icing, and it doesn’t change how amazing the bars taste overall, I just wish I could get that pretty white swirl on top. Any idea what might be going on? Thanks! :)5 stars

    1. Annie, I’m so glad you love these bars! I’d suggest adding more powdered sugar to make the glaze thicker and letting the bars cool completely so it doesn’t melt. I hope that helps! Thanks for leaving this wonderful review!

  119. I tripled the recipe, using a 2 lb. package of fresh strawberries. It was a hit at my friend’s cookout! Our gluten-/casein -/egg-/soy-intolerant and peanut -/tree nut-allergic kids were happy to have a safe sweet treat with the recommended modifications. The adults were pleased that it was a whole grain, low sugar, home -baked 100-calorie dessert. This recipe’s a keeper, and I look forward to trying it with other seasonal berries and stone fruits this summer. Thank you for sharing!5 stars

    1. Dana, Thank you so much for your positive feedback – I’m thrilled to hear that both kids and adults enjoyed these bars!

  120. These are super easy and fabulous for breakfast or as a dessert. I have made them twice…they’re on my repeat list!5 stars

    1. Hi Elise! I’m so happy you enjoy these bars anytime of day! Thanks so much for your feedback!

  121. Made these Strawberry Bars and shared them with my 16 yr old daughter and my husband at dinner in the evening for our desert. We all 3 thought they were so good plus my daughter and I ate a bar the next morning for breakfast!! Delishious!! Posted a picture on fb to friends and instantly had an order for a whole batch!! The lady loved them and asked for some to be made with blueberries. That’s next on the list!4 stars

  122. Amazing recipe! I took this to work and everyone loved them. I’m also going to make them for my girl’s weekend soon. So Yummy! I did eliminate the second 1/2 TBSP of sugar sprinkled in step 3 because my strawberries were already very sweet. I could eat the entire pan!5 stars

    1. Sally, YAY!!!! I’m so so happy you loved these. Thanks for trying them and taking time to leave this wonderful review!

  123. I made these bars and they’re great! Thank you for posting the recipe! I was wondering, what purpose does the cornstarch serve? I’m very much a novice baker and I try to learn new things wherever I can :-)5 stars

    1. Rachel, I am so happy you loved the recipe! Cornstarch helps thicken the filling. Happy baking (and learning!). It’s a fun process :)

  124. I don’t have any ginger. Do you think I could just omit it or should I substitute allspice or cinnamon?

  125. Simply love love love your strawberry oatmeal bars. Third time I made them! We like it even without the drizzle of icing! Yum!

  126. Dear Erin,
I am a grandma always looking for healthier alternatives to store bought fast food. My grandson likes Trader Joe’s strawberry breakfast bars. I made your recipe but put home made organic jam as the filling instead. I also added one egg white to the oat mixture. They came out so delicious! Thank you so much for the recipe!
    Lark5 stars

  127. Made this for my hubby to snack on at work, he LOVES it! & so do I, they taste so fresh & fruity & not too sweet. Absolutely perfect! Thank u thank u thank u!! So glad I stumbled across this goddesses healthy food blog, I will definitely be following? keep up the good work love!❤4 stars

    1. Hi Sharla, you can use quick oats, but the texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

  128. Only just found your blog and love it!! This is my new favourite thing to make soo easy and delicious. Have one in the oven as I type (doubled the mixture because everyone loves it) xx5 stars

    1. Jess, I am so so happy you found my site too, thank you (and thank you for leaving this lovely review!!) xoxo

    1. Carol, I think it helps the flavor of the filling really stand out and pop so I recommend it, though you can make the bars without too.

  129. I made these.. They came out ok. I used frozen strawberries because that’s all i had. Maybe i didn’t cook them.long enough. The strawberry part is still pretty moist. They are crumbly. They taste good. I followed recipe. Maybe better with real strawberries.

    1. Karen, I think good quality fresh strawberries will make a big difference next time. Because the bars are so simple, the fruit really is the star. I hope you enjoy them more next time around! Maybe try a little lemon glaze to perk them up?

  130. These turned out so good! I didn’t have lemons so I used lime juice instead, and added a little cinnamon to the crust/crumble mix (because I love cinnamon), and they turned out delicious. I also used about half a tablespoon of lime juice mixed with a half tablespoon of water for the drizzle (because I didn’t have milk, haha). Can’t wait to try this recipe out with other berries as well! Thanks!5 stars

  131. I’m very pleased with this recipe: easy and delicious. I will likely scale back on the sugar or avoid the icing next time because I don’t want my little ones to think mommy is serving dessert for breakfast! Lol. Thanks for sharing.5 stars

    1. Hi Alexis! Coconut flour behaves very different than wheat flour, so it would not be a straight swap. I haven’t tried it myself, so you would be experimenting. If you decide to give it a try, I’d love to hear how it goes.

  132. I made these, substituting unsweetened applesauce for the butter, 1:1 ratio, and they were delicious! I’m sure butter is better, because it’s butter (!), but the applesauce has fewer fat grams. Bonus- they weren’t crumbly at all.

  133. My bars are baking right how.  Looking forward to trying them.  I have a question.
Instead of sprinkling cornstarch, lemon juice and sugar on strawberries, why can’t you add strawberries to a bowl and add those three ingredients.

    1. You can certainly do that, Ellen, but I just wanted to avoid dirtying another dish! I hope you enjoy the bars!

  134. Hello Erin. I had a package of strawberries in my fridge so I just finished making two of your recipes. I made these strawberry bars and it came out delish! I also made your strawberry jam. I appreciate your videos because it has helped me along the way while making your recipes. Thank you for this sweet and yummy strawberry bar recipe.5 stars

  135. Delicious!  Whipped these up in no time, although waiting for them to cool is nearly impossible! They were sweet enough without the frosting, but I’m a huge vanilla ice cream fan and can only dream about adding some with my second piece.
I didn’t have a fresh lemon, but did have the bottled  juice in the fridge and I didn’t have ginger so I used cinnamon instead!
Thanks for the simple recipe! 5 stars

  136. It is strawberry time and I I just made this and it is super yummy! The fresh strawberries were perfect, but I bet it will be fine with frozen later in the year. I took the first bite and wow, this is definitely going in my breakfast rotation. I loved that you used whole wheat flour. I used stevia instead of sugar, and next time will decrease the brown sugar just a little for my taste.
I can’t wait to try this with my blueberries when they come in. Thanks so much for this great recipe! 5 stars

  137. Although this recipe taste great I was disappointed that they were  too crumbly to cut in squares to take to a party I needed them for. . The good news we got to eat them!

    1. Hi Norah, I’m glad you enjoyed them! The bars shouldn’t be overly crumbly, but it’s hard to say what may have happened without being in the kitchen with you. They could have been slightly overbaked, but other possibilities are mismeasuring, using 100% regular wheat flour, or quick oats instead of rolled. All of these things (and more!) can make a difference. The bars will be soft vs crispy and firm though—that’s a factor of the recipe and the fact that it doesn’t use gobs of butter/sugar. I hope that helps for next time!

  138. Just made these and they are way too delicious! I didn’t put any ginger in or use the drizzle, and I put a few more berries in. I will definitely make these many more times!5 stars

  139. Erin, I just finished my last one. These are so good. Thank you for giving me a recipe that satisfies my sweet tooth and lets me respect a heart healthy diet as I had a heart attack in February. They are so flavorful and I love that pop of ginger. You are amazing and I love reading what you have. Thank you and I wish you the very best.5 stars

  140. Wondering if I can substitute almond flour for the whole wheat in this recipe? Want to try out your recipe, it sounds delicious!

    1. Hi Ilene! I have not tried that substitution, so I can’t vouch for the results. Another reader made that swap and enjoyed it! If you decide to experiment, I’d love to hear how it goes.

  141. I wasn’t expecting too much while making these. The crust seemed too thin, and the strawberries, at 2 cups, too much. Boy was I wrong! These are so addicting. I didn’t add the glaze at all. At first, mostly because I forgot. But, when I remembered I figured it just didn’t need it. They were perfectly sweet and tart. I think the lemon juice added a wonderful flavor. I used Meyers from our garden and love that kick! My husband saw the picture before I made them and said no thanks, too sweet. He tried the finished product and kept on eating too! I shared this receipt with family members and will definitely be making again!5 stars

    1. Hi Kim, I think you could try experimenting with peaches in this recipe. I hope you enjoy it if you give it a try!

  142. Just tried making these with peaches instead. Just because it’s peach season in MO. I’ll let you know how they turn out! Also subbed gluten free flour and gf oats.

    1. Hi Dakota, unfortunately, I don’t have the information for this recipe in grams. I suggest trying using a tool such as Myfitnesspal to get the most accurate nutritions estimates based on your specific ingredients. I hope you love the cookies!

  143. This was absolutely A M A Z I N G !!! Make a glaze you said! Store in the refrigerator up to 5 days you said! Funny! It didn’t even last us until evening! I was hoping to have these for a few days to eat for breakfast, but it was gone in a mere couple of hours. It is so easy to make and so scrumptious. I was afraid it was going to be a little bit soggy when I took it out of the oven. But it was just perfect consistency. The crunchy bottom layer and the soft, velvety layer of strawberries was just perfection. This is already one of our favorite, quick and easy strawberry desserts. Thank you! And I love your wedding day photos! Just beautiful!5 stars

  144. Wow this yummy, thanks for the lesson please , am really thankful with this , I will try it with my daughter. Just waiting to comment after preparing it . Thanks 5 stars

    1. Hi Mitch! You are always welcome to use the “Jump to Recipe” button at the top of every blog post, which will skip the content and take you right to the recipe itself. I hope this helps you reach the recipe more quickly in the future!

  145. Aw, I really enjoyed reading about your wedding anniversary tradition! Our wedding anniversary happens to be tomorrow but we don’t have any such exciting traditions. I just wanted to drop you a note to say that I have featured this recipe in our roundup, 6 Scrumptious Strawberry Recipes. I hope that is ok, let me know if not! You can view it here if you wish, https://www.diythought.com/6-scrumptious-strawberry-recipes/ Thanks!

  146. Hi Erin,

I just made a double batch Of the Healthy Strawberry Bars, baked in a 9 x 13 inch pan.

Temp was 375 Convection bake For 40 mins. They are now cooling. But from the way then look

It doesn’t look like they will be firm and square. I used fresh strawberries.

What do i do if the aren’t firm and square.

    1. Hi Judy! These bars will thicken a little as they cool, but they are fairly moist. I (and many other readers) loved the texture and flavor of these bars, so I hope you enjoy them too!

    1. Hi Missy, I’m sorry these bars weren’t to your tastes. I (and many other readers) have enjoyed the texture of these bars, so I really wish you would’ve too!

  147. Oh my gosh! I just apologize while hysterically laughing the entire time   I must  have measured wrong or something. He took a bite and said I don’t like them. I was so confused because he loves stuff like this. I took a bite and they were so salty! I couldn’t even finish my bite. I’m  laughing so hard. ? I have to retry tomorrow because the first batch went down the disposal. My question is how important is the salt in this recipe?

    1. Hi Karen, I’m sorry these were so salty! Did you use kosher salt and unsalted butter? I think you could reduce the amount to just a pinch. I hope your next time trying the recipe goes better!

  148. This one’s a keeper! I made this recipe with a few modifications for the fruit center. Instead of alternating sliced strawberries, sugar, cornstarch, lemon, (used honey instead of sugar), I combined all in a pan and simmered for a few minutes. Came out great! The ginger in the crust is subtle, but a game changer for the taste buds. I had about a cup of blueberries about to bite the dust so I put those on the bottom of the crust before spreading the strawberry mixture. Loved the combined flavors of the crust & fruit, and the texture was perfect!5 stars

    1. Thank you for taking the time to share this kind review, ReGina! I’m so happy to hear that the recipe was a hit!

  149. These are so GOOOOOOOOD!!!
Just over this past weekend, I made a total quantity of 6 recipes!
4 1/2 for my niece’s birthday, 1 for my husband (who ate 1/2 of the first batch) and 1 all to myself!
    They’re that good!5 stars

  150. I doubled the recipe, used quick cooking oats and regular table salt (only 1/4 teaspoon plus maybe 1/8), used frozen strawberries (ones I had picked last summer and flash frozen), and it is still DELICIOUS!!! Thanks for this great recipe.5 stars

    1. Thank you for taking the time to share this kind review, Lynette! I’m so happy to hear that the recipe was a hit!

  151. Erin…Hands down this has become my favorite dessert! I can’t tell you how many times I have made them . In the summer I serve them chilled with a scoop of vanilla ice cream . The flavor and texture of the strawberry oat bar is just perfect .  Thank you !!!5 stars

  152. I’m on the south beach diet & need low fat/low carb.
Can this recipe be made low carb/low fat? , W/th substitute’s for sugar, flour, & butter?
If so, can you pls let me know/make suggestions?
I’m not sure if Almond or Coconut flour, fat free Greek Yogurt, sugar substitute, would work as substitutions.
I know Greek Yogurt (plain/fat free) can sub for oils, butter/margarine,etc. Being on a diet & losing weight & keeping it off is really hard.
    Thank you! Jill5 stars

    1. Hi Jill! Unfortunately, I have not tried these substitutions, so I can’t vouch for the results. However, other readers have swapped in coconut sugar and almond flour and enjoyed them. If you decide to experiment, I’d love to hear how it goes!

  153. Sooo good! I made it with apple chunks instead of strawberry and it was delicious! My grandkids loves it and they are very picky! Thank you5 stars

      1. I have made them several times, first time for my gluten free son-in-law and vegan granddaughters, everyone loved them. So have made them many times. The only bad thing is there are never any leftovers!

  154. Erin, this recipe looks DELISH! Unfortunately, I don’t like strawberries (gasp!). Can blueberries be substituted?  Thank you. ?

    1. Hi Diana! I actually have a Blueberry Oatmeal Bars recipe on my site that you can follow. I hope you love the recipe!

  155. I made it with my niece, who is 6 years old.  She loves your video, it was easy for her to remember what you said.  I can’t say what was her best part of making this.  She just love to cook and bake. I enjoy it so much, I made it again the next day.5 stars

  156. These are sooooo incredibly yummy! I’m 9 months pregnant and had a serious craving for oatmeal cookies. After some googling, I found this recipe and whipped up a batch. I used 1 cup blueberries and 1 cup raspberries because that’s what I had on hand, and oh my goodness it was perfection. Can’t wait to try this with strawberries and maybe even spiced apples. Thanks for an amazing easy, healthier dessert option. This will be a staple in our house and my husband already ate half the pan! 5 stars

    1. I’m so happy to hear that this recipe was a hit, Sarah! Thank you for taking the time to share this kind review!

  157. Can I use honey instead of sugar and if yes how much should it be? Want to prepare these bars for my 14 months old and dont want to use sugar.
    Thank you

    1. Hi Kristine, I actually would not recommend the honey swap. The bars are about as low in sugar as I could make them, and I worry that the crumble wouldn’t hold together since honey is liquid. The great news is that I do have lots more naturally sweetened recipes in my recipe index! You can find them here: https://www.wellplated.com/category/recipes-by-diet/naturally-sweetened/

    1. Hi Michelle! I’ve never tried this swap, so unfortunately, I can’t vouch for the results. If you decide to experiment, I’d love to hear how it goes!

    1. Hi Jim! Yes, you can freeze the bars. After baking, let them cool completely and do not glaze. Wrap tightly in plastic before placing in the freezer. Let thaw in the refrigerator and top with glaze before serving. I hope this helps!

  158. I made the Strawberry oatmeal bars and chose to double the recipe for the 13X9 pan. However after 40 minutes the fruit were not bubbling nor after an hour. Was there another adjustment I needed to make? After over an hour I took the pan out because the edges were beginning to burn but the middle still seemed soft… I like the combination but need some advice.4 stars

    1. Hi Bernie! I’m so sorry to hear that this recipe didn’t turn out as you’d hoped. Other readers have doubled the recipe with success, so I’m not sure what might’ve gone wrong. Was the crumb topping cooked? Next time, you could try cooking the bars longer and covering the pan with some aluminum foil so that the edges don’t burn as easily. I hope this helps!

    2. Erin,
Very nice of you to reply and so quickly.  I did not mean the bars came out poorly.  In fact the family loved them and they are on my list of recipes to make regularly.  It did take longer to cook and I was wondering since the recipe was doubled, even thought in a larger pan would it take longer that the original recipe.  I will plan for that next time and I will use the foil as you recommend. Thanks again..

      Bernie4 stars

  159. That’s a lovely recipe and I’m just trying it out now as I’m writing – however, my strawberries did not get jelly-like in the oven, rather sort of dried out. What might have been the reason?

    1. Hi Mi! I haven’t heard of this happening before, and I’m not sure what might’ve gone wrong. Did you squeeze the lemon juice over the top and add the butter/oat crumbles? Regardless, I’m sorry to hear that you had trouble, and I hope you still enjoyed them!

  160. I LOVE this recipe, is it possible to use frozen strawberries instead of fresh? Will be “melt” in the oven?

    1. Hi Ariana! Other readers have reported success with using frozen strawberries in this recipe. I suggest letting them thaw completely first and patting them dry to remove any excess moisture. I hope this helps!

  161. Hi,I made this bars tonight and i didn’t have a lot of expectations..not because of your recipe, but because i didn’t have the exact ingredients. The strawberries didn’t look that good,i wasn’t sure they weren’t spoiled, they were kind of purple and with a different smell, didn’t have unsalted butter, and I had regular flour..on top of that I had a bigger pan so I said it’s going to be a disaster….they are amazing!!! I could eat the whole thing!!!! Thank you very much for this recipe!!!5 stars

  162. Just baking these in the oven right now! Instead of the suggested strawberry topping here… I decided to cook down some frozen strawberries and mix in a whole block of cream cheese. Then, put on top with the crumble. We’ll see how it goes! 10 more minutes in the oven.

    1. Hi Alessia! I prefer using old-fashioned rolled oats, but you can use quick oats. The texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

  163. OMG these Strawberry Oatmeal Bars are so yummy! I made it today and my family and I could not wait for it to cool off. I drizzled the delicious glaze on while the bars were still warm. My two sons (12 and 15 years old) kept coming back for more! Next time I will double this recipe for sure :) Thank you for such a healthy, delicious recipe which I’ll definitely make often! BTW, I watched your video while I was making this recipe and I was tempted to nibble on the topping too so it was funny that you mentioned the same thing ;) I also wanted to say your wedding photos are adorable :)5 stars

    1. Hi Erin, wondering if I can use whole wheat flour instead of the white whole wheat flour. I can’t wait to try this. Sounds yummy!

      1. You can, Nikki! The bars might come out a bit more dry, and they will have a more pronounced “wheat” taste. I’d suggest trying half whole wheat flour and half all-purpose flour.

  164. Loved seeing wedding photos. Due to my husband’s death, I also walked my daughter down the aisle. We both love cooking and sharing recipes. Can’t wait to try the Strawberry Bars and sharing your recipe with her. Thanks for posting it.

  165. So so amazing! Feels healthy enough for breakfast but is a great dessert with ice cream as Erin said. The amount of sugar is spot on as it doesn’t feel over indulgent for breakfast.
We did add 1tsp vanilla to the oatmeal once the butter was added. We did feel we were short on topping for the final layer so added crumbled corn flakes to the top and then sprayed with canola oil so they wouldn’t burn. Would love to add some pecans to it another time and try with different fruit.
Love this recipe and will be making over and over again! Thank you!5 stars

  166. This is SUPER good. I could eat the entire thing! I didn’t have powdered sugar, used SWERVE instead and it was perfect.5 stars

  167. I baked these Healthy Strawberry Oatmeal Bars 2 days ago and they are gone already! These bars were so sweet, delicious, warm, and chewy when they first came out of the oven that we had to force ourselves not to eat them all in one sitting! That’s how amazing this dessert is. It’s easy to make and irresistible to eat! Thank you for sharing this recipe.5 stars

  168. I made these and they are delicious but they are falling apart. It seems the batter wasn’t wet enough to make them stay together as “bars” I used melted coconut oil in place of the butter, not sure if this affects the consistency. I will probably crumble over oatmeal in the morning since I am unable to pick them up and eat them like a bar. 4 stars

    1. I’m pleased to hear that you enjoyed the flavors in this recipe, Katie! Thank you for sharing this kind review!

  169. This was not only easy but very good. I was thinking you could probably make this with other fruits also. I would like to try with blueberries, peaches and even dates. This is a keeper! 5 stars

  170. Hello. I am NOT a baker and I’m trying to use up stuff I already have. Can you use Quick Oats in this? Are they different than Rolled Oats? Appreciate it!

    1. Hi Lesley! I prefer using old-fashioned rolled oats, but you can use quick oats. The texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

  171. Super tasty! I added chia and walnuts to mine and added a little whipped cream on top. I’ll be making these again. 5 stars

  172. Hi, I can not wait to try these, but I love the fact you can freeze them. Just wondering how long would they store in the freezer for please?

    Thankyou

  173. This recipe is fantastic! I love these bars and they are a hit with my family. I often make it when I have extra strawberries. I have even tried Erins blueberry version which is also a hit with friends and family!5 stars

    1. Hi Linds! Unfortunately, I only have the nutrition information for these bars without the glaze. I’d suggest using an online nutrition calculator like MyFitnessPal to see an estimate based on your exact ingredients. I hope this helps!

  174. A great idea, but I think it is important that the strawberries be soft to get them to look like they do in the photo. For my firmer ones, I think it would have bee a good idea too mix them with the cornstarch for a more even distribution. and then to add a little more liquid to the berries before putting them into the pan. Mine never got “bubbly.”4 stars

  175. I made these today. I used 16oz of strawberries instead of 10oz because I had them. They turned out great! Thanks!5 stars

  176. Hello!! During these lockdown times.. can I use almond flour or coconut flour? And regular sugar? That’s all I have and have to use up my strawberries ASAP :(

    1. Hi Zarina! Unfortunately, I have not tried these substitutions, so I can’t vouch for the results. However, other readers have swapped in almond flour and enjoyed them. If you decide to experiment, I’d love to hear how it goes!

  177. Been making this since I discovered it in 2018 and wow is it good and easy to tweak. I usually double it and cook it in a 9×13 that’s how much my 4 person household likes this!

    My double batch tweaks:

    2 cups of quick oats
    1 cup of flour
    1/4c golden flax meal
1/4c almond or PB protein powder
2/3 cup light brown sugar (sometimes I use 1/3 light brown and 1/3 coconut sugar)
    2 chunky pinches of salt
12 tablespoons of butter (or half it with coconut oil)

also! When I double I use 3 1/2ish cups for the bottom and only save 1/2ish for the topping but we like our crust thicc hahaha!

Lastly, instead of fresh fruit (cause that’s my personal mehh), I use a half or sometimes full jar of cherry jam (bonne mamam is GOAT!), also used with great results, peach jam and lemon curd!5 stars

    1. I’m SO happy that you’ve enjoyed these bars, Samantha! Thank you for sharing your adaptations and this kind review!

  178. Hey Erin, I usually like more fruit in my bars then what recipes call for, do you think I should do this if that’s usually the case or do you make recipes like that? I haven’t made other fruity bars from you site but i love the other recipes! Thanks

    1. Hi Elly! I think that these bars do have a rich fruit flavor as written. While I haven’t tried using extra strawberries, another reader has reported success with increasing the strawberries from 10 ounces to 16 ounces. If you decide to play around with it, I’d love to hear how it goes!

  179. So so good, it’s really hard for me to believe that each bar has 3g of sugar!
I left out the glaze, though I’m sure it would be a lovely addition for when I have my sugar cravings!
I’ll be making more of these when I do my weekly food prep.
    Thank you! :)5 stars

    1. I’m so happy that you enjoyed the bars, Gemma! Thank you for sharing this kind review!

  180. Seriously the best blog recipe I have ever made and tried. You rock. Can’t wait to try this with other fruits and flavors now!

    Thank you!5 stars

  181. I used coconut oil,  swerve brown, swerve granular, and swerve confectioners sugars and they turned out AMAZING! Thank you for the recipe!!!5 stars

    1. Thank you for sharing this kind review and your tweaks, Julie! I’m so pleased that you enjoyed them!

  182. My dad dropped off a sheet of hand picked perfectly ripe strawberries, so I found your recipe and decided make these. They were SO good! I did half with the icing and half without. They kept it in the fridge for 4-5 days and I would have for breakfast and dessert. I would definitely make these again!! :)5 stars

  183. It smells soooooooo good after you take it out of the oven! It is hard to not eat it right away…??5 stars

  184. Is there a reason why I shouldn’t just mix the sugar and cornstarch with the berries before putting them on the bottom crust? And does this work well if doubling the recipe for a 9X13 pan?

    1. You can certainly do that, Leanne, but I just wanted to avoid dirtying another dish! You can double them in a 9×13-inch pan. They will be a little thicker but still delicious!

  185. Delicious! Entire family loves these. We enjoy them for dessert, and I (as mom), appreciate that they’re a healthier alternative to most desserts.5 stars

    1. I’m so pleased that they were a success, Chrissy! Thank you for sharing this kind review!

  186. These are PHENOMENAL. Will make again & again. You don’t have to wait for them to cool if you aren’t using the glaze. Cut & serve immediately for that fresh from the oven goodness & just take care it’s cooled enough to eat. I was planning on trying the glaze on half the batch if it needed it, but these were so perfect as is! I might even try reducing the sugar in the crumb a little. Note: the filling was perfect. I read once that you want to use only just enough sugar for fruit to be its best, and this recipe does that!!5 stars

  187. Making this for the 3rd time after picking a ton of strawberries. Made it for the kids for dessert once and breakfast twice. We didn’t use the topping because it was delicious enough without it!5 stars

  188. I was so excited to make these bars. I am experienced baker so I was very disappointed in how they turned out. I followed the recipe exactly but they didn’t stick together. They fell apart and there is not much flavor.

    1. Hi Yolanda, I’m so sorry to hear that you had trouble with these bars. I (and many readers) have enjoyed their flavor and texture, so I really wish they would’ve been a hit for you too!

  189. These are absolutely delicious! I made them yesterday and everyone loved them. Thanks for the great recipe!5 stars

    1. Hi Lori! Unfortunately, I have not tried this substitution, so I can’t vouch for the results. However, other readers have swapped in almond flour and enjoyed them. If you decide to experiment, I’d love to hear how it goes!

    1. Hi Abby! I actually have a recipe for Blueberry Oatmeal Bars on my site that you can use. I hope you enjoy them!

  190. I want to give this 10 stars! THESE ARE SO DELICIOUS! I made them 4 times in one month .. I would buy fresh strawberries just to make these. The texture and flavour is amazing!! I like it sweet so I always add the Vanilla glaze and it is just perfect. The first time I made them, my husband was not so interested, because it was fruity, but when he tried one, OMG, we literally finished the whole thing in one night ! ADDICTIVE!5 stars

    1. Hi Sue Ann, I’m so sorry to hear that these bars didn’t turn out as you hoped. I (and many other readers) have truly enjoyed this recipe, so I wish it would’ve been a hit for you too!

  191. Flavor was very good and bottom was delicious and crisp but…..the bar itself was a bit soggy. Not firm enough. Any suggestions? Maybe more cornstarch. I used fresh diced strawberries and a few blueberries but they weren’t juicy so not sure why the bar wasn’t more firm. I cooked for 40 minutes in a convection oven so it should’ve been done.4 stars

    1. Hi Barbara, I’m sorry these didn’t turn out perfectly for you. It’s so hard to say what might’ve happened without being in the kitchen with you. I’m happy you were still able to enjoy the flavor!

  192. I baked this recipe and my whole family loves it! Just some things I noticed though: you should add a little more butter (or canola oil in my case) if you want the bars to stick together more. Also, you’ll need to use more than half of the crumble mixture on the bottom of the pan, I used a little more than 2/3 just to be safe and that worked out really well. It’s also fun to sprinkle some chocolate chips overtop.5 stars

    1. I’m so happy that you enjoyed the bars, Katie! Thank you for sharing this kind review and your tips!

  193. These strawberry oatmeal bars are sooooo delicious! especially the vanilla glaze. Since it’s rhubarb season I added it to the bars and it turned out incredibly delicious!5 stars

  194. This may be a horrible question, but can I make this w/o butter, and use oil instead? I ask bc I’m totally out of butter, and have a fridge full of fresh strawberries!

    1. Hi Erica! Many other readers have successfully used coconut oil instead. I hope you enjoy the recipe if you try it!

  195. This recipe is perfection! I love how it looked and tasted, I am all about having a dessert that is visually beautiful and tastes just as good! Thank you for sharing. There is nothing like a good strawberry dessert!5 stars

    1. Hi Krissy! The nutrition estimate is based on the ingredient amounts you see listed in the recipe (baked in an 8×8 baking dish) without the vanilla glaze. I hope this helps!

  196. Just made this as written but I have a ton of strawberries and was wondering if it would work with almond flour instead of GF 1:1? Any thoughts?

    1. Hi Sara! Unfortunately, I have not tried this substitution, so I can’t vouch for the results. However, other readers have swapped in almond flour and enjoyed them. If you decide to experiment, I’d love to hear how it goes!

  197. These were easy to make and honestly tasted like they came from a bakery!  I added some walnuts to the reserved crumb topping. I can’t wait to make them again, and will try them with other fruits once strawberry season is over. 5 stars

  198. I made this and it was horrible. It never cooked, the oat mixture stayed dry and raw and the strawberries turned to mush

    1. Hi D, I’m so sorry to hear that these didn’t turn out well for you. I (and many other readers) have truly enjoyed these bars, so I wish they would’ve been a hit for you too!

  199. These oatmeal bars are SOOOOO good and not too sweet. They are my new favorites!!! I’ve only made the blueberry ones so far but today I’m making strawberry bars. Question: Could you use ANY diced fruit (i.e. plums, nectarines, etc)? Thank you.5 stars

    1. I’m SO happy that you enjoyed them, BJ! I think you could experiment with other fruits. If you decide to play around with some variations, I’d love to hear how it goes!

  200. This recipe was absolutely delicious!  Mine was a little more on the “unhealthy” side- I didn’t have unsalted butter- so I substituted salted sweet cream, no added salt and I used your standard all purpose flour.  I also didn’t have lemons or lemon juice either.  Still turned out amazing!!!5 stars

  201. These were delish! I love sugar, but this recipe allowed me to enjoy it in a healthy way,
Thank you and keep the recipes coming please. 5 stars

  202. This recipe is amazing. I made gluten free by using 1/2 cup + 1 TBSP of almond flour, 1/4 cup of arrowroot flour, and 1 TBSP of tapioca flour. I then used a combo of dairy-free butter and coconut oil instead of butter and used coconut sugar instead of granulated sugars. This recipe is so good and since my oven broke and I can’t bake until I get a new oven I baked this in the bottom of my air fryer without the grate, on 350 for 15 minutes. It turned out so good just make sure to spray or grease with butter, pan spray, or coconut oil. 5 stars

      1. I loved this recipe from the ingredient list when  I  searched for strawberry ideas and was SO pleased with the result.  I shared the recipe link with my sister.  My whole family liked them.   I  preordered your cookbook because of this recipe.  I love the look of the Well Plated design your recipes and personal asides.  Keep up the great ideas and thanks for your hard work.5 stars

  203. Great recipe!! These came our perfectly plus I felt better knowing they are healthier than some other desserts. Thank you!5 stars

  204. I have made these bars with strawberries and also with raspberries.
They are fantastic! Just follow exactly what Erin says and you will have a healthy, tasty dessert.5 stars

  205. I decided to try and make these even healthier by substituting  1/2  of the flour with almond flour, using granulated monk fruit (brown and regular) in place of the sugars, and using coconut oil in place of the butter (as you had suggested). They turned out great!! Tastes like a professional breakfast bar, but homemade goodness even better! 5 stars

  206. This recipe turned out absolutely perfect. I am not much of a dessert maker, but this was easy. It looked great and tasted better. I didn’t even use the right pan. Thanks for the parchment paper tip, it really helped. I will definitely make this again, perfect for strawberry season!5 stars

  207. these were really tasty!!! I used almond flour instead which in turn caused the bars not to have enough structure so they fell apart when taking out of the pan… however they turned out so very delicious. thanks for sharing!!!5 stars

    1. Hi Sam! I wouldn’t recommend using steel cut oats here. Rolled oats are steamed and pressed, and steel cut oats are not. I know that’s not the answer you were hoping for, but I want these to turn out well for you!

  208. This was a very easy and delicious recipe to make. I just made it 3 days ago and am back to make another batch!  [The only thing I am going to change is I’m going to purée some of the fresh strawberries to put as the first layer, then place strawberry pieces on the second layer.] I think this will make for a “juicier” filling. 5 stars

  209. Hi! I wanted to try this recipe but it’s difficult to find fresh strawberries. Does this recipe work with strawberry preserves/jam? Or what other fruit can I substitute it for? Thanks :)

    1. Hi Julianne! While I have never tried it, other readers have reported success with using jam instead. If you decide to experiment with it, I’d love to hear how it goes!

  210. Wow these were amazing. I used regular flour as didn’t have whole wheat. So buttery and yummy ! Put in the refrigerator after cooled down and easier to cut. Put in a few blueberries as had to use them. This is a keeper recipe!5 stars

  211. Hi, I love looking for new recipes on line and had lots of luscious strawberries in my fridge. I saw your post and made up 2 pans. My bars look as pretty as your pic’s. One pan will go to the staff at my infusion center and the other pan will go to my doc’s office. So when the rave reviews roll on in, I’ll be sure to let you know!!! Yes, I did add the icing drizzle for the finishing touch. Thanx so much.
     5 stars

  212. These were so amazing! Maybe my favorite bar recipe of all time, and that surprised me, given I’m a die hard chocoholic! I used coconut oil and subbed 2tsp arrowroot flower for the cornstarch. Whole family was massively impressed! 5 stars

  213. These were delicious. I didn’t make the icing.  I used coconut oil instead of butter. And arrowroot starch instead of cornstarch.  5 stars

  214. Erin,
First let me say I enjoy reading everything you post, all your pictures, recipes and tips!
I made these delicious oatmeal squares yesterday, using fresh rasberries and they were delicious. Between my husband and I we only ate 600 calories each- Ugh! (Will portion these out between the 2 of us better next time, or give some away)!
Also, am in the midst of making your healthy chicken pot pie and this is the first time I have cooked chicken this way, (on top of stove with an inch of water in it), and boy, it sure beats microwaving!!! I will always use this method, chicken came out tender and moist!! I made chicken salad out of a couple of the breasts for lunch, and wow, delicious!
I consider myself a good cook and baker and at age 67, I am proof that you can still learn better ways! Thank you!5 stars

  215. Wow, first time to your site, I just Googled recipes for strawberries today and yours popped up, I’m SO GLAD it did. Absolutely delicious. I think we could eat the entire pan in one sitting!
    Thanks so much!5 stars

  216. This was so yummy, but I did have trouble with them falling apart. Guessing this was because I tried quick oats because I didn’t have any rolled oats on hand. What do you think? I will definitely try them again with the rolled oats.5 stars

    1. Thanks for sharing this kind review, Valerie! Yes, using quick oats definitely makes them softer. I hope you enjoy them even more next time!

    1. Great recipe!

Can you tell me what the cornstarch is used for in this recipe?
I keep wondering if I could also do them without.5 stars

      1. So glad you enjoy it! The cornstarch helps thicken and set the filling. I wouldn’t recommend leaving it out.

  217. Hi Erin! Are these able to be refrigerated or frozen? Im the only one who eats these and I don’t want them to go to waste!5 stars

  218. Make weekly for the past 5 months. I have changed out different berries and jams normally make in a 9X13 so I double the recipe. Comes out great every time and we get our oatmeal fill plus berries it’s a double win. Thank you so much for this recipe it’s a homerun every time ?5 stars

  219. Loved it. I was looking for something to do with my not too fresh strawberried, this was perfect. I added blueberries with the strawberries and skipped the icing.5 stars

  220. So simple and so delicious! I made them gluten-free sans glaze. I must say, I was a little confused by step 3. I stopped just short of “sprinkle the lemon juice” since I wasn’t sure how. I simply tossed the remaining strawberries with lemon juice and sugar and scattered those on top of the corn starch, and it turned our perfect! I will try with other fruits as another reviewer said. Thanks again!5 stars

  221. I’m sorry that you didn’t enjoy these bars, Meha. I (and many other readers) really enjoyed them, so I truly wish you would’ve too!

  222. These are amazing ! I made some modifications as my pan was a little bit bigger than the required size and I added lime juice instead of lemon and coconut extract instead of vanilla in the glaze :) but these are a definite make again recipe – thank you !!5 stars

  223. OMG. ABSOLUTELY DELICIOUS. I used vegetable oil instead of butter and I didn’t have lemon juice (I left it out) or cornstarch so I substituted about 2 Tbsp of rice flour. I used frozen strawberries and topped the bars with whipped coconut cream (instead of glaze) and everyone loved it. I am now a fan of your site! I will definitely be making this recipe again, as well as more recipes of yours. Thank you.5 stars

  224. I made this delicious decert for my family, everyone liked it and thought it was delicious. The recipe was pretty quick and easy to foll, but most importantly was very delicious.5 stars

    1. Hi Mona! I prefer using old-fashioned rolled oats, but you can use quick oats. The texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

  225. These are great! I used frozen strawberries (completely thawed) and looking forward to trying it with fresh berries!5 stars

  226. I have made this many times for my family and they all love it, I also made this with blueberries and wow morning but praise.5 stars

    1. I’m sorry that this wasn’t to your tastes, Betha. I (and many other readers) have enjoyed the recipe, so I truly wish you would’ve too!

  227. Thank you for sharing your recipe. I tweaked a little. Since I have frozen ripe strawberries that had turned very soft I sliced them up and cooked over the stove with 2 tablespoons of brown sugar instead of using fresh strawberry. I added 2 tablespoons of orange zest and fresh orange juice with a little bit of strawberry jam before topping up with the remainding oats mixture. I sprinkled half of it with chocolate rice & omitted the glaze. It turned out very nice.4 stars

  228. Thanks for the recipe! I made this with strawberries and another time with Blueberries! So yummy although I will say the original was truly the best! I did add a little lemon juice to the glaze and loved the tart pop! 5 stars

  229. I did the coconut oil substitute and cut the amount of oil in 1/3. Was worried they wouldnt stick together but it turned out great! Also substituted honey for the white sugar!5 stars

  230. These were so good!! Will continue to make these for sure! We used vegan butter and all purpose flour. Almond milk for the glaze. We didn’t have enough powdered sugar so my measurements for the glaze were off, but honestly I don’t think it even needs any glaze.5 stars

  231. Followed recipe but there seems to be moisture missing that allows the bars to stick? I used 8tbsp of coconut oil but it wasn’t enough.. All I got was crumble not stiff enough to be bars. Smells great though.2 stars

    1. I’m sorry to hear that you had trouble with the bars, Kellie. It’s so hard to say what might’ve gone wrong without being in the kitchen with you. This recipe has been a hit with many readers, so I wish you would’ve enjoyed it too!

    1. Hi Leni! I do recommend storing these in the refrigerator, and that’s the only way I’ve tried it myself. I’m so happy that you enjoyed them!

  232. Always a huge hit in our house! I have made these with strawberries, blueberries, pecans, shredded coconut, you name it :)5 stars

  233. Hi I absolutely love this recipe but my batch seems to fall apart after I properly cool them down. Help I just wanted to cut them into bit size squares?

    1. Hi Johnny! I’m sorry you’ve had trouble with your bars staying together. Another reader has had success with using a little extra butter to help them hold together more. I hope this helps!

  234. Made these tonight and they were so yummy! Thank you for such a wonderful way to make a strawberry dessert that isn’t full of whip cream!5 stars

  235. These were SO delicious! The perfect light dessert for after dinner. I appreciate how straightforward and easy it was to whip up. Thanks for the recipe!5 stars

    1. Hi Tara! Unfortunately, I’m not familiar with calculating Weight Watchers points, so I’m not sure what this recipe would be. I hope you enjoy the bars if you try them!

  236. Agree with the other comment about bars being like dry crumble not like bars. Did not turn out. If I had ice cream or whipping cream on hand maybe could’ve salvaged.1 star

    1. I’m so sorry you had trouble with this recipe, Lala. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too!

  237. I LOVE THESE. A huge hit and so easy that I’m making them for the second time this week. So easy to grab as a sweet treat or quick snack throughout the day. Mine turned out a little bit crumbly, but the flavor was so good I just scooped it out and ate it as is.5 stars

    1. Hi Jana! Other readers have reported success with using frozen strawberries in this recipe. I suggest letting them thaw completely first and patting them dry to remove any excess moisture. I hope this helps!

    2. These are amazing!!
-doubled the crumb mixture, I like lots of crunch and needed more for the top
-added one super frothy egg white to bind it all since I was reading comments about it being crumbly
      -doubled the brown sugar
-quadrupled the sugar in the fruit filling
-used a tablespoon of cornstarch for extra creaminess
      -Doubled the vanilla icing

They turned out great!! The egg white kept everything firm in bar form. Loved extra sweetness from the added sugar and icing on top. I will make these with every fruit filling imaginable. Huge hit with the family!!!!!5 stars

  238. I have made this a few times and it really hits the spot!! I do increase strawberries to 16 ounces. Thanks5 stars

    1. I’m so happy that you’ve enjoyed the recipe, Mary! Thank you for sharing this kind review!

  239. Made these last night, they were great!!! However, after looking at the other review’s. I have to say this, make sure you press your 1st layer of oatmeal well! And I feel that it makes a huge difference in the strawberries you use. Use the very ripe berries! My bars were nice and chewy! Not crumbling at all.5 stars

  240. Meh…may as well just add copped strawberries to your bowl of oatmeal. Same flavor overall without all the work. Or make baked oatmeal with strawberries. Had a lot of berries so I made these, a quick bread and the strawberry pretzel pie on this site. That is amazing!!!2 stars

    1. I’m sorry these bars weren’t to your tastes, Catherine. I’m happy you enjoyed the strawberry pretzel pie though!

  241. I just did this recipe and it was excellent. I used thawed strawberries without patting them dry and it was soggy at all. Will definitely make them again and maybe try other berries too.

    Thanks xx5 stars

  242. Hi Erin
Have made this before and absolutely love them but was wondering if you’ve had any readers sub honey for the brown sugar?

    1. Hi April! I actually would not recommend the honey swap. The bars are about as low in sugar as I could make them, and I worry that the crumble wouldn’t hold together since honey is liquid. I’m so happy that you’ve enjoyed the bars!

  243. I made these last night and I can’t stop eating…About to make another batch since we have so many strawberries. I followed the recipe exactly. We made sure to press the bottom layer pretty firm and used very riped strawberries. Delish!!!5 stars

    1. Hi Tabitha! I prefer using old-fashioned rolled oats, but you can use quick oats. The texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

  244. I gently folded lemon juice, cornstarch and sugar through all the berries in a bowl before putting on the crust, faster and I think they distribute better this way.

I smashed the crust down hard to consolidate, but had to cook it almost to the point of burning to get it hard enough to be firm and the berries not too runny. Next time will try the egg white suggestion and possibly a bit more cornstarch. The glaze is too runny and raw tasting and has not hardened…next time will use less liquid and heat over double boiler. Basically delicious recipe with a few tweaks! Thanks for posting this!! Next time will try blueberries with a lemon glaze.4 stars

    1. I’m so happy that you enjoyed it overall, Karen! Thank you for sharing this kind review!

  245. These were so amazingly delicious and I could not stop eating them. Such a fresh strawberry flavor. I ate way too many!
I wish there was a way to post my photo because they were beautiful as well. Note- I DID make sure to pack that bottom crust in as tight and hard as possible.5 stars

  246. I didn’t have enough strawberries so I used some strawberry jam (home made). I didn’t have any oats so I improvised with museli! It was delicious. Will definitely make again5 stars

    1. I’m so happy that you enjoyed the recipe, Christine! Thank you for sharing this kind review!

  247. I’ve made this three times now and I love this recipe. I did not have the problems that others had with the bars not staying together. I did add an egg for extra binding as another reviewer suggested, but I think even without that they would have been fantastic. I would advise people to press the oat mixture together really well in the pan and to transfer to the freezer to help it solidify before cutting. Thank you for this recipe!!!5 stars

    1. I’m so happy that you enjoyed the bars, Alice! Thank you for sharing this kind review!

  248. Very much enjoyed these. I didn’t have enough strawberries, so I made up for the difference in blueberries. Tasty, tasty!5 stars

  249. I made and they were good – however no reason not to mix the strawberries, sugar, cornstarch and lemon juice together and add it all at one time to the base – then top with the reserved crumble – much more realistic way to make the bars.

  250. I had extra strawberries left over and I did not want them to rot and throw out. I tried this recipe and it is really the best! I love these bars. I omitted the topping because they tasted great without the topping and they were moist. I also used 2 packs of Stevia in place of the white sugar. I am going to try this with other fruits; apples, blueberries, peaches… This is my new favorite dessert.5 stars

  251. I thought these were delicious, but they lacked structural integrity. They were very crumbly and difficult to pick up. They needed to be served on a plate and eaten with a fork.4 stars

    1. Thanks for trying the recipe and sharing your results, Diane! I’m happy you enjoyed the flavor!

  252. We all really loved this recipe. I had some over ripe strawberries that needed used up and this was the perfect recipe for it. We only used half the glaze and that was plenty. I used oat flour rather than all purpose to make it gluten free.5 stars

  253. I made this tonight and was pleasantly surprised. The flavor was buttery and sweet (not overly just right) The structure of the dessert was crumbly but that could be because I could not wait long enough for it to cool completely. I will make this again. My husband loved it <3 Thank you for sharing this recipe :)4 stars

  254. I made these using fresh strawberries from my garden. They are delicious! I will be making them again since they will be going fast.5 stars

    1. Hi Daniel! I’m sorry to hear that these didn’t turn out as expected. I (and other readers) have really enjoyed these bars, so I wish they would’ve been a hit for you too!

  255. Easy to make, delicious! Could definitely make these with other fruit or berries. I left off the glaze as I was looking for a low sugar treat. They didn’t need it, they were perfect! Sweet & tart!5 stars

  256. The strawberry oatmeal bars were really wonderful. It is an easy and fairly quick recipe. That said, I found it
extremely difficult to read the recipe because of all the ads. I love your website and the recipes I have tried but
I am going to find another website that doesn’t have so many ads.4 stars

    1. Hi Melody, I’m truly sorry for any inconvenience the ads caused you! I will certainly keep paying close attention to the number of ads and how they load, as I never want them to hinder your ability to view the recipe or the blog post. I do truly appreciate your feedback and apologize again for the inconvenience!

    1. Hi Erica! Unfortunately, I have not tried this substitution, so I can’t vouch for the results. However, other readers have swapped in almond flour and enjoyed them. If you decide to experiment, I’d love to hear how it goes!

  257. Tastes great but I would NOT use the parchment paper. My bars stuck to parchment and I had to throw them away4 stars

    1. Hi Jan! I have never heard of this happening before, so sorry they stuck for you. Next time lightly spray the paper or the pan to prevent sticking. Thank you for this kind review!

  258. Delicious!! I doubled the recipe and made a 13×9 (cooked it for 55-60 minutes). I read reviews that the bars can be crumbly, so I made sure to cook them long enough. I also combined the strawberries, corn starch, lemon juice and sugar. Great taste and not too sweet!!5 stars

  259. I tried this recipe yesterday and brought the strawberry bars to a get-together. The group consensus was the they are awesome!5 stars

  260. Okay, currently cooking my second batch in 15 hours! They were a hit last night with family, so planning to bring tonight to a get together. This second go around, I smashed up some pretzels and added them to the crust, hoping to get some of that salty sweet flavor, so figured I would experiment! Thank you for this lovely recipe!5 stars

  261. Crust recipe as written, doesn’t give you enough for bottom crust and crumble on top. And yes, I used an 8 x 8 pan.

    1. Hi Mary! This is the first I’ve heard of this problem! I’m so sorry to hear that you had trouble with these bars. I (and many readers) have enjoyed their flavor and texture, so I really wish they would’ve been a hit for you too!

  262. Made these, loved them. Used frozen strawberries. Had no problems at all. Will be talking about them on my FB cooking page, The Busy Cook’s Kitchen. Will definitely make again. Ty!5 stars

  263. I would give these bars 10 stars if I could.
They are THE BEST (and mostly healthy too) bars I’ve stumbled across in a very long time.
HIGHLY recommend these. Have never tried them with the Glaze as they were delicious without
    it.5 stars

  264. Tried this recipe without the glaze and it was amazing! I have a bag of peaches and thinking about making it with peaches this time instead of strawberries, do you think that will work??5 stars

    1. Hi Amanda! I think you could try experimenting with peaches in this recipe. Other readers have reported back saying they’ve tried it with peaches and it turned out great! I hope you enjoy it if you give it a try!

  265. Hey! Just tried this recipe, but my strawberries didn’t turn into jam-like texture at all. They stayed while and kind of dry? Any tips? They were fresh and followed recipe exactly.

    Thanks!3 stars

    1. Hi Laura! I’m so sorry you had trouble with this recipe. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you.

  266. LOVE this recipe! As did my fiance who is particular when it comes to sweets. I think I may have used a little too much butter (more than noted in the recipe) because the oatmeal didn’t seem congealed enough. I am going to try again and follow the recipe. Thanks for this great recipe Erin! Looking forward to trying many more from your site.

  267. I made these as I had leftover strawberries and feared it will go bad. These were so good!! I didn’t add the glaze as I thought it was good without the added sweetness. I followed the recipe to the T except I mixed half of the strawberries with the cornstarch, lemon juice, and half of the sugar. I did bake them a little longer to make sure it was bubbly and golden (almost 45 min)! Thank you for the lovely recipe! It was not too sweet at all! My toddler loved them too!5 stars

  268. My kind of dessert! I have Type II diabetes and my husband does not like really sweet desserts. I always cut out some sugar and then use half stevia and half sugar. The whole grain oatmeal, whole wheat flour, fresh berries and reduced sugar made it a somewhat healthy dessert. I used half strawberries and half of my homegrown blackberries and it was delicious especially with a scoop of vanilla ice cream.5 stars

  269. These bars turned out SO well!! My whole family loved them and they were gone within a couple of hours 😊5 stars

  270. These were delicious but I found the ginger to be out of place. Next time I will make it without the ginger. I also doubled the crumble recipe to get complete coverage on the bottom and top. I served this with ice cream and everyone loved it. Thanks for a great strawberry dessert!4 stars

  271. Absolutely delicious! It tastes like the blueberry/blackberry cobbler that my family loves.
This could totally be a dessert, and serve it with vanilla icecream! YUM. YUM5 stars

  272. I came here looking for a way to use excess strawberries and these bars are perfect. I’ll make them again.5 stars

  273. What do you think this would be like with ground cardamom in place of the ginger? Would the same amount ( 1/4 tsp) seem reasonable? Or do you think that may not be a compatible flavour?

    1. Hi Nancy! I haven’t tried using cardamom so you would be experimenting. If you give it a try, let me know how it goes!

  274. These are awesome. Made them twice in the last two weeks, the second time with rhubarb and strawberry blend for filling, I just diced up the rhubarb and strawberries and let them sit in the sugar and lemon juice for a half hour or so, drained off some of excess liquid and then followed the rest of the recipe, to die for. And so easy. It’s a 10/10! Oh I also skipped the glaze they’re so good already.5 stars

  275. Delicious. I substituted cinnamon for the the ginger; mixed the strawberry/lemon juice/cornstarch/sugar all together at once and put on top of the bottom crust. Mixed in some chopped pecans with the remaining oat mixture and sprinkled on top – then pressed it all down a bit. Baked 45 minutes as per another person’s comments. So tasty. Sweet enough. Doesn’t need the icing on top. Very easy to make.5 stars

  276. I followed the recipe exactly as stated and it turned out amazing. So amazing that I made three batches of it back to back to make use of my freshly picked strawberries. I did make the glaze to put on as we found it needed a little more sweetness for our sweet tooth.
    A keeper for sure.5 stars

  277. I followed the recipe exactly as stated and it turned out amazing. So amazing that I made three batches of it back to back to make use of my freshly picked strawberries. I did make the glaze to put on as we found it needed a little more sweetness for our sweet tooth.
    A keeper for sure.5 stars

  278. Hi, I’m looking forward to trying the recipe. Do you know if the cornstarch can be replaced with cornflour (European cornflour, not American….)? 😊

    1. Hi H! It seems cornflour is the European version of cornstarch, so I would say yes! Hope you enjoy the recipe!

  279. There is no sodium amount showing in the nutritional break down can you please advise as I am on a low sodium diet due to kidney disease.
    please and thank you

    1. Hi Victoria, I stopped including sodium info because it can vary so much depending upon what products you used, and I found a lot of conflicting info online, so ultimately I didn’t feel comfortable publishing it because sometimes it wasn’t even in the ballpark. If you’d like to calculate it yourself, there are lots of free tools online (myfitnesspal.com is popular). I hope that helps!

  280. So good! I had to double the recipe because I only had a 9×9 pan. One thing that might have helped is since the recipe says you can double it for that reason, it doesn’t tell you how long to bake it when it’s doubled. But, they are so good. I’ll definitely make these more often.

Not sure if they are supposed to be firm, but maybe I need to bake them longer. Please tell me how long I should bake them when doubled.5 stars

    1. Hi Kate, I have only tested the recipe as written. I will say that other readers have double the recipe using a 9X13 pan with great success. If you decided to experiment with a 9×9 let me know how it goes!

  281. We had some leftover strawberries after making jam, and my husband found this recipe to try. They were a hit with the whole family!!! I love that they were easily modified to be low FODMAP & gluten free so we could all enjoy them! Definitely keeping this recipe. Thank you so much! Delicious!!!5 stars

  282. These turned out great! Just wondering what other fruit do you think would work well with this recipe?

    1. Hi Monica! So glad you enjoyed the bars! Thank you for this kind review! I have made these with blueberry before! https://www.wellplated.com/blueberry-oatmeal-bars/

    1. Hi Ak! I’ve only tested the recipe as written, so if you use coconut sugar and almond flour you would be experimenting. If you decide to give it a try, let me know how it goes!

      1. Just substituted oat meal with hemp seeds and the flour with almond flour.. Turned out great thank you 😊

  283. Can I substitute baking powder for the corn starch?

I’m on a baking kick with recipes off your site. Banana nut muffins and blue berry muffins for the win!

    1. Hi Monica! The corn starch is a thickening agent. Baking powder doesn’t do this so they are not interchangeable. So glad you are enjoying the muffins!

    1. Hi Kaitlyn! I wouldn’t recommend using steel cut oats here. Rolled oats are steamed and pressed, and steel cut oats are not. I know that’s not the answer you were hoping for, but I want these to turn out well for you!

  284. Hello, I followed the recipe step by step and my oatmeal bars did not harden, they fell apart ( sad). I don’t know what I did wrong. If I did exactly the same thing, with all the correct ingredients and measurements.1 star

    1. Hi Brenda! I’m so sorry you had trouble with this recipe. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you.

      1. I added an egg to the base (after having removed the 1/2 c for the topping) because I thought it was a bit crumbly and mightn’t set. It was delicious !!! I didn’t bother with the glaze as it was perfect straight out of the oven.

    2. Me too and I had the same problem… I cut mine into squares after refrigerating but they are still falling apart! Might break it all up and use as a crumble topping instead!2 stars

      1. Hi Alex! I’m so sorry you had trouble with this recipe. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you.

  285. What a great recipe I added a few blueberries and raspberries that I needed to use up along with the strawberries.. wowza! Tasty! Next time I think I’ll add cranberries for a little tartness with the strawberries..
I also added a quarter teaspoon of cinnamon to the crumble mixture and a half a teaspoon of vanilla to the melted butter. Yummy!
Thanks for the recipe! :)5 stars

    1. I’m sorry this recipe didn’t turn out as you hoped, Sara. Unfortunately, it’s so hard to say what might’ve gone wrong without being in the kitchen with you. The recipe has worked well for me (and other readers), so I truly wish it would’ve been a hit for you too!

  286. Love this recipe for when strawberries are in season! I increased the amount of strawberries, and serve it to my kids for dessert.5 stars

  287. I’ve now made this in the original strawberry as well as a blueberry version with a lemon glaze. I just pulled a raspberry version out of the oven and I’m finishing it with a chocolate drizzle (I’m out of milk so no glaze this time). This recipe is a perfect base for a lot of wonderful variation, just switch the fruit out with whatever you have. It’s gotten great reviews from everyone who’s tried them, definitely a keeper!5 stars

    1. I’m sorry this recipe didn’t turn out as you hoped, N. Unfortunately, it’s so hard to say what might’ve gone wrong without being in the kitchen with you. The recipe has worked well for me (and other readers), so I truly wish it would’ve been a hit for you too!

  288. This was really great! For the people who said it crumbled – add more butter (I added an extra tablespoon and it worked perfectly).5 stars

  289. So, so very good! I used 1 minute rolled oats and added 1 tablespoon of oat milk creamer to the crumble mix because some reviews said that it crumbled. Mine did not. I made sure that I coated each oat when mixing the crumble and gave the first layer and second layer a firm press with a spatula. I also used blueberries because I didn’t have strawberries. The problem is that it was so delicious that I wanted to eat the entire pan. So next time I will try canola oil instead of butter, oat flour instead of white/wheat flour and maybe just a little less sugar. That will reduce the guilt of eating the entire pan…I hope the substitutes will not ruin it.5 stars

  290. Hello! I was wondering if adding no lemon juice would effect the recipe, I wanted to make these but I don´t have any lemon juice on hand.5 stars

    1. Hi Isabella! It should be ok to leave it out. I haven’t personally tried it but other readers have, and their feedback said the recipe still came out great! Hope you enjoy it!

  291. What is supposed to be holding all this together? There is not enough liquid in this and it just crumbles and falls apart. I’m just going to see if I can find a different recipe to use strawberries for. This one was very disappointing.2 stars

    1. I’m so sorry you had trouble with this recipe, Anon. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you. The butter is what is helps hold the crust together along with the other ingredients.

  292. DELICIOUS!
This was my first time ever making granola & it turned out perfectly! I followed the recipe exactly, with the exception of the icing.
Used a muffin pan instead, they make an excellent breakfast snack while I’m at work.
Thanks so much! I will be making these regularly ❤5 stars

  293. Is there a way to make this in 9×13 and if so what would the measurements be? Thank you.
Sorry read a more in recipe a found my answer. Thank you again.

  294. I plan on trying your recipe it looks really great. My question is have you ever tried other fruits or berries in this recipe? It looks like it might be a versatile recipe. Thanks

    1. Hi Lynn! I’ve made these with blueberries before! Here you go: https://www.wellplated.com/blueberry-oatmeal-bars/ Hope you enjoy it!

    2. Great summer taste! I loved your commentary and the recipe! My bars crumbled though. Do you have any suggestions to make them hold together, would more butter or adding some honey help? My family really liked the taste but I’d love to get it to hold shape for the second making. Will definitely be making them again.5 stars

      1. Hi Mandy, I’m sorry to hear you had trouble with the recipe. I really don’t know why others have their bars crumble but then the majority of other readers don’t, including myself. The only thing that comes to mind is maybe they need to be cooked a little longer. Everyone’s ovens bake different so that could be the issue. I would not recommend making any additions to this recipe. Glad you enjoyed them!

  295. Made last night.
Made it as per instructed. It crumbed after cool. No bars at all.
Still ate it in small bowl ….on top of ice cream (Crumble as a topping)
    Not saving this recipe. :(

    1. I’m so sorry you had trouble with this recipe, Bonnie. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you.

  296. These turned out super dry and did not set up as a bar at all. Like others, mine turned out as a crumble :(

    1. I’m sorry to hear this wasn’t what you hoped for, Taylor. Many other readers have tried it and loved it, but I know everyone has different tastes. I truly wish you would have loved it!

  297. This recipe is really easy and turns out perfectly every time we make it! We also tried a one-to-one swap with blueberries, and they tasted just as good.5 stars

  298. I made these for breakfast for my 5 and 2 year old and they loved them! Leaving them in the fridge overnight gives them the best texture. Will have to keep these in rotation for them!5 stars

  299. Very easy and so yummy! Followed the recipe exactly and they cut out beautifully into bars. I chilled it in the refrigerator fully before cutting. My husband and son loved it as well! A wonderful spring/summer recipe!5 stars

  300. was looking forward to making this recipe for a potluck, unfortunately it didn’t hold up. i doubled the recipe and its all dry and crumbly. theres also a lot of pockets of cornstarch, it think its better to toss the berries in cornstarch, lemon juice and sugar so at least its properly incorporated. its a miss for me.3 stars

    1. I’m so sorry you had trouble with this recipe, Diana. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you.

  301. My goodness these were yummy! I made them exactly by the recipe but I left out the vanilla drizzle – they were sweet but not overly, perfect with a cup of coffee. We are just getting into strawberry season so these are going to get made frequently.
On another note, Happy Anniversary! My husband and I have been married 46 years and he still my very best friend – it’s so lovely to see you have found your best friend too.5 stars

  302. These turned out really good and tasted delicious! Thank you for sharing! I was wondering if raspberries would work too?5 stars

    1. Hi Rana! I’ve used blueberries before but not raspberries. If you decide to experiment, let me know how it goes!

  303. I have made these many times they always are good and not as many calories as other bars…I dont put ginger in or lemon …just as good5 stars

  304. Based on reviews that this ended up being crumbled and not a solid bar, i added one egg to the oatmeal mixture after the melted butter. Turned out perfect and my toddlers love their “cake”4 stars

    1. Hi! For some reason some people have trouble with this recipe being a solid bar, for myself and lots of other readers it comes out perfectly! The original recipe is perfect as is!

  305. I made these after my sister shared the recipe. After I made 34 jars of strawberry jam I still have some fresh strawberries and thought why not make the strawberry bars. Easy and delicious! Will be making these pretty regularly. 👍5 stars

  306. Easy to make and so delicious! Trying to cut back on sugar so I didn’t make the glaze and they are still delicious. Thank you for sharing!
Oooh, just saw you have tried them with blueberries. I will have to try that!5 stars

  307. I made this, following directions exactly. I also pressed down the lower crust really well. They looked and smelled great coming out of the oven. However they were super dry crumbly and did not hold their shape. They tasted fine over yogurt as a crumble topping.

    1. I’m sorry you to hear had trouble with the recipe, Sara. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you.

  308. Just got a gallon of fresh strawberries from the Farmer’s Market and came home to Google recipes. Found this one and made it this morning. So good! Just the right amount of sweetness and it came out of the pan perfectly with the parchment paper “handles”. Will definitely make these again and will try the blueberries next time. Also, happy belated anniversary!5 stars

  309. Back in Feb I asked about using other berries, you suggested blueberries. Today, I finally got around to trying this recipe. It is great. Due health reasons I made a few adjustments. I used three kinds of berries 1 cup strawberries. 1/4 cup each of blueberries and raspberries. I al used almond flour rather than whole wheat or all purpose. I also removed the bars from the dish placing them on a wire rack and in a cool location for cool down. This seems to have helped them set up better making them easier to cut. The only problem with this recipe is not eating it all in one sitting. This recipe will definitely remain in my Healthy Desserts folder. Thank you I will be looking at more of your recipes.
    Lynn

    1. Hi Lisa! Oatmeal is actually the process after the oats are cooked. This recipe calls for the oats before they are prepared. Hope this helps!

  310. I wanted to follow the recipe exactly, but it was obvious as soon as I stirred the melted coconut oil into the oat mixture that it wasn’t going to work. 6 tablespoons isn’t nearly enough moisture to hold almost 2 cups of oats and flour together and it needed an actual binding agent. Rather than continue and have the bars crumble apart on me like others have experienced, I separated out 1/2 cup for the topping, then mixed a beaten egg into the rest before pressing it into the pan and proceeding as written.

    Worked like a charm.4 stars

    1. I’m sorry you to hear had trouble with the recipe, Colleen. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too!

      1. Oh it wasn’t a failure at all! They were delicious, the base just needed a little help. Sorry I didn’t mention that originally 😊

  311. I made these today as written with coconut oil, except I used a heaping cup of rhubarb and 3/4 cup of strawberries instead of just strawberries. I did drizzle the glaze on top. It was great! No sugar adjustment was needed for the rhubarb. The only thing I was worried about was that after I set aside the 1/2 cup of bar dough for the top…..it was a real challenge to get the remaining “dough” to cover the bottom of the pan….seems like there just wasn’t quite enough. Otherwise it was great!5 stars

  312. My middle school boys LOVE these. I have made made this three times this week. I doubled the ingredients and put it in a 10×13 glass baking dish.5 stars

  313. Wow!! SO GOOD! Made exactly to recipe w/o icing; cut into 9 bars and ate 1&1/2 while warm, couldn’t wait for them to cool! Will make a great desert w whipped cream or vanilla ice cream. We never seem to finish a whole container of strawberries before they start to go bad—these bars are a great way to use them. Every recipe of yours I’ve tried turns out fantastic. Love how you make a lot of delicious recipes that are a bit healthier—I don’t have to try to adjust myself!5 stars

  314. This recipe doesn’t make enough for 8×8 pan. It was frustrating because there was no way I could cover 8×8 and have enough for top.3 stars

    1. I’m sorry to hear that you had trouble with this recipe. I (and many other readers) have successfully made the recipe as written, so I’m not sure what might’ve gone wrong. I hope you were still able to enjoy them!

  315. This recipe was easy to make and delicious! My son won’t eat strawberries plain, but he downed this bar for breakfast. Will definitely make again!5 stars

  316. These were so easy to make and sooo delicious, I will definitely be making them many more times! Thanks for a fantastic strawberry burst of yummy.5 stars

  317. Delicious recipe. I’ve made this twice, once as is and with minor adjustments the second time. If you like a thicker bar base, like my family, double oat mixture. I also ran my oat mixture through a food processor the second time to create a sturdier base, as I felt it needed more structure. I’d have given five stars if the recipe was converted into grams.4 stars

  318. Sounds like a delicious combo of ingredients, but like others on here I realised there was nowhere near enough butter to bind the dry ingredients. Added more to the top as it was baking! Some kind of liquid sugar eg agave nectar, golden syrup would also have helped. Disappointing.2 stars

  319. Overall I enjoyed this recipe and it was a good way to use up some frozen strawberries and oats I had laying around. The recipe called for using 1/2 of the oat crumble for the bottom, and 1/2 for the top, but I think that ratio is off as that did not cover an 8 x 8 pan for me. I would have needed significantly more than 1/2 of the crumble to cover the bottom. I ended up using a loaf pan instead which worked well!4 stars

  320. Delicious! Perfect for when you have delicious, freshly-picked strawberries!! Quick and easy to put together. Will definitely be making again!!5 stars

  321. These bars are amazing! My husband isn’t a dessert fan, but he ate 3/4 of the pan in one sitting. We will be making them again, and sharing with friends.5 stars

  322. This recipe comes together quickly. The hint of ginger in the oatmeal topping/crust is a nice touch. I used vegan butter (plant-based Becel) and it worked perfectly. 6 TBSPS of butter equals 86 grams, so I found that weighing the butter before melting it provided just the amount needed to bring the crust together. Given that the recipe contains flour, I might consider adding a 1/2 tsp of baking powder to the dry ingredients next time to give the bars a bit more height. Taste and convenience: 10/10. I’ll keep this recipe handy for when strawberry season arrives!5 stars

  323. I haven’t tried to make it yet but it looks very good and I will try to make it soon! 🥰 🥰 🥰 🥰 🥰v🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰 🥰

  324. Co-worker just brought these in and OMFG. Like crack. They are SOOOOOO good. Now we’re all gonna make them and switch fruit and die in heaven. Thank you.5 stars

  325. These bars came out perfectly for me! I used all purpose white flour since I didn’t have wheat flour on hand. I also used butter, not coconut oil.
We chose not to use the icing, the bars are delicious without it!
I’m wondering if those who weren’t able to cover the bottom of the pan put aside half of the crumble mix instead of 1/2 cup?5 stars

    1. Hi Megan! Other readers have had success using rice flour or arrowroot powder. I hope this helps!

  326. This has become a family favourite. I make it with coconut oil and throw in a few tbsp of dessicated coconut. My kids love it and its not too sugary so i don’t feel guilty feeding it to them. Great for lunch boxes or breakfast in a hurry.5 stars

  327. I followed the recipe and have made this with blueberries, strawberries, and today- grapes. Next time I might add some greek yogurt or maple syrup as an additional liquid. Found that after cooling, placing the pan in the fridge firms this up.

Nice snack, and not too sweet.5 stars

    1. I’m so happy that you’ve enjoyed the recipe, Lisa! Thank you for sharing this kind review!

  328. They never set up. Any idea why? I doubled the recipe as indicated. We went to Plan B and spooned the mixture into glass cups and served it with the yogurt. BUT, I’d like a bar recipe that works. I see below that others had the same issue, but an egg doesn’t seem to fit. Please advise. Thank you.

    1. Hi Constance! Unfortunately, it’s hard for me to say for certain what went wrong without being in the kitchen with you. Other readers have added a little extra butter to help hold them together, so you could try that next time. I hope it helps!

  329. Made these today after picking fresh strawberries. There is definitely a problem with the amount of crumble, there is not enough. Also, there were too many strawberries. The ingredients did not match what was going on in the images or in my kitchen. I used my 8×8 pan. The taste was good. The recipe does need a few adjustments, and baking the bottom portion first would have helped prevent the squishy bottom.4 stars

    1. Thank you for trying the recipe and sharing your feedback, Melissa! I (and many other readers) have successfully made the recipe as written, so I’m not sure what might’ve gone wrong. I’m glad you enjoyed the flavor though!

  330. So good!! So simple!! I’m sure it would work with any other berry or even mixing in peaches or rhubarb. I’m going to experiment. I pressed the crust pretty firmly which I think made the base pretty firm and not crumbly.5 stars

  331. These are delicious!!!! I used
    Handpicked strawberries and I
Couldn’t think of a better way to use them! The bars aren’t too sweet and really being out the strawberry flavor!5 stars

  332. These are tasty! Made with my 6 year old son with fresh picked strawberries. Just the right amount of sweetness and was quick to whip up. We skipped the topping.4 stars

  333. This was fantastic!! Super easy to make and it tasted great! I had it over ice cream because I made it at night (to have for breakfast the next morning) and it was divine! 😄 it was cool enough to cut into pieces by the time I did so. This is great as a dessert, snack, or breakfast by itself!5 stars

  334. These are really good and easy to make! I made them for breakfast bars, but could definitely be a dessert too. Also, the icing is delish! I added more milk to get it to be less thick like suggested and it was still good and easy to drizzle on.5 stars

  335. Honestly one of the worst recipes I’ve ever made. The recipe just doesn’t work. The oat mixture is too little to actually make a proper base for the bars and it’s pretty tasteless. The strawberry mixture just doesn’t work at all. I was very skeptical when I read the procedure for it, but decided go against my better instinct and just trust the process. Boy was I wrong to do that. The strawberry mixture never sets like it should. I decided to make this recipe because it had a high rating but now that I see the comments, it seems like a lot of people had struggled with this recipe but still rated it highly because it still “tasted good”. People please don’t do that, be honest and rate accordingly. I followed this recipe exactly and put the exact measurements indicated and it was a huge fail. The only good thing about this recipe is that it inspired me to break out my apron again and start baking like I used to. I’m even writing my own recipe for strawberry oatmeal bars to make up for this disappointment.1 star

    1. I’m sorry you to hear had trouble with the recipe, Noah. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you.

  336. I was obviously off on my measurements. My 2 cups of strawberries was generous. If I make again I will strictly adhere to directions. My bars did not set well. I may cut the butter too.

    1. I’m sorry you to hear had trouble with the recipe, Susan. I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed them, so I really wish they would’ve been a hit for you too! It’s hard to say what went wrong without being in the kitchen with you.

  337. This recipe is perfect! As I am gluten-free, I especially appreciate it!! I thought the fruit:crumble:pan ratio was perfect, it was awesome hot with ice cream but firmed up nicely into bars when refrigerated. I can’t wait to try it with other fruit–I can see this being a staple whenever I have fuit a bit past its prime. Thank you!!5 stars

  338. It’s strawberry season and I’m making my second batch in two days of these yummy strawberry bars. Thank you for this fantastic recipe.5 stars

  339. Flavor was great. Easy to make and felt healthy. Skipped the glaze, not necessary. Only problem was trying to get it to be “Hard” or “set” or “crispy”. Placed in air fryer oven to set it and dry it a bit before serving. Don’t know what the problem was. Followed recipe and used butter, I don’t know4 stars

    1. Hi Jennifer! Glad you enjoyed the flavor! I really have no idea why it doesn’t set for some but will set for others. I haven’t had this problem before so it’s puzzling.

  340. These were delicious!

I made a couple of modifications. First I’m allergic to citrus so I replaced the tbsp of lemon juice with a tbsp of 100% cranberry juice, which I also use as a replacement in jams.

Secondly, I chopped up 4 pieces of candied ginger and mixed it in with the strawberry filling. I reduced the amount of sugar just a touch to account for the sweetness of the candied ginger.5 stars

    1. Hi Kari! So glad you enjoyed the recipe! Thank you for this kind review and feedback on modifications!

  341. Excellent! Everyone who ate these cookies wanted the recipe. I was short a few strawberries so added a chopped fresh raspberries and blueberries to make 2 cups. It was amazing. Thank you for the recipe!5 stars

    1. Hi Trina! So glad you enjoyed the recipe! Thank you for this kind review and feedback about the crust!

  342. The bars came out a bit soft though I cooked it for the entire time listed. Nevertheless, It was very good and yummy. Both my husband and I liked it very much. What is the best way to store these and if they can be frozen, what is the recommended way to do it?

Thanks for a delicious recipe!5 stars

    1. Hi Susan! So glad you enjoyed the recipe! Thank you for this kind review! Also you’ll find storage suggestions at the bottom of the recipe card just below the directions. Hope this helps!

  343. These are delicious! Mine were goopy, too, when they first came out. Some of my berries were overripe. But after a few days in the fridge, they were much better and still tasted great.

  344. I have tried this recipe 3 times now and the strawberries don’t bubble & soften like the blueberries do. I tried using the 10oz as the recipe calls for, 16 oz for two full cups and 14 oz of thawed strawberries. The best results was with thawed strawberries. I was so disappointed after having such great results with the blueberry version of this recipe3 stars

    1. I’m sorry that this didn’t meet your expectation Diane. This recipe has been a huge hit for myself (and others) so I wish it would of been a hit for you too!

  345. This recipe looks great and I will try it!
I really appreciate the wisdom you shared in this blog message. Even being married 45 years I still need to work on things…a kind reminder to leave some things unsaid, put phones away, show gratitude is very valuable.

Thank you for sharing your beautiful photos of how precious life and relationships are! Your dad sounds like a very special man who clearly lives on in you and all that you do.5 stars

  346. Amazing. Followed recipe a to z, perfect! I thought it is little sweet, i am reducing sugar amount and glaze a bit next time. But that is just me, all the others thought it is perfect as is. Many thanks, i love your recipes, very happy that I found you!5 stars

  347. Great recipe! Exactly what I was looking for. Is there a calorie count/nutritional info for the bars w/glaze?

    1. Hi Sam! I do not have the information but you can calculate the calories for free at MyFitnessPal (there are other similar sites too). I hope that can be a helpful resource for you!

  348. Oh my gosh I LOVE this recipe. I picked up some local strawberries and they were the best strawberries I’ve ever tasted; so juicy, sweet but…It was a pound and I was afraid they’d over ripen before I could eat them all so I was on the search for a quick, easy recipe and this was perfect! I had exactly 10 oz left yay. I used Vegan butter, skipped the ginger and glaze. Delicious ! TY for this wonderful recipe.5 stars

  349. Hi Erin, I cant wait to try your strawberry bars but was wondering if I could use oat flour in place of the regular or whole wheat flour?

    1. Hi Laura! While I haven’t tested it out myself I know other readers have used oat flour with great success. Hope you enjoy them!

  350. It’s a hit. Just enough to satisfy our sweet tooth, even without glaze. May try this with blueberries.5 stars

    1. Hi Diane! So glad you enjoyed it! Thank you for this kind review! I do have these bars in a blueberry verison: https://www.wellplated.com/blueberry-oatmeal-bars/

  351. I made these this week and they were amazingly delicious! I followed the recipe exactly and used a gluten free 1:1 flour substitute in order to accommodate a food allergy, and they turned out so well. My strawberries were organic, fresh and juicy and though they didn’t bubble, they were still soft and delicious. FYI I did find them sweet enough without the icing sugar drizzle. I don’t have a big sweet tooth and found these the perfect dessert.5 stars

  352. A huge hit! I made them with instant oats, all purpose flour (all I had on hand) and they were delicious. 5 days later, I’m making them again, everyone wants more!!! Thank you, love this recipe, so easy and tasty, warm or cold.5 stars

  353. A huge hit! I made them with Quick one minute oats, all purpose flour, fresh strawberries (all I had on hand) and they were delicious. 5 days later, I’m making them again, with whole wheat flour this time…everyone wants more!!! Thank you, love this recipe, so easy and tasty, warm or cold.5 stars

  354. Just made this with almond flour and sugar free sugar and turned out great! My strawberries didn’t bubble in the oven. They were fresh ones. Will definitely make it again!!5 stars

  355. Haven’t tried them yet but they look good. Still laughing about the 16 servings. If you are someone who eats 1/3 of a muffin, then you will agree with the 16 servings; otherwise, 8 seems reasonable.

  356. Wowie, wow, wow!!! I made this today…I also used thinly sliced pears under the strawberries, on top of the crust…and I sprinkled a little extra sugar in top. Used salted butter, but cut the salt to half… this is amazing. You are so perfectly right about the use of ginger instead of cinnamon. HOME….RUN!5 stars

  357. These were a dreadful, soggy mess. Why add the lemon juice to already juicy fruit. Too much wetness. No one would eat it!

    1. I’m sorry you to hear had trouble with the recipe, Pat! I know it’s frustrating to try a new recipe and not have it turn out. I (and many other readers) have enjoyed it, so I really wish it would’ve been a hit for you too! It’s hard to know what went wrong without being in the kitchen with you.

  358. i was excited to try this, but when i took out the dish and tasted it, the strawberries had turned more sour then sweet. the dessert was also dry. maybe it was due to the fact i used vinegar instead of lemon juice, cinnamon instead of ground ginger, and coconut oil instead of butter?

    1. Hi Jenna, I’m sorry to say but vinegar is not an appropriate substitute for lemon juice and it will give you the result of a sour taste.

  359. I have made this several times. we love it! So simple to make. I’m making a double batch today. One for us and to share at a meeting!
I do make a bit more of the oat mixture than it calls for and we try not to eat alot of sugar so I do not put the icing on it. Still delicious !5 stars

  360. This is sooooo good! Planning on making it again! My husband loved it as well. How can something healthy be this good :-)5 stars

  361. I want to use up some strawberries in this recipe, but I don’t think I have enough. Could I supplement with either strawberry jam or freeze-dried strawberries? Thanks!

    1. Hi April! I haven’t tried it myself but other readers have used jam with great success. Hope you enjoy it!

  362. I’ve been making this for about 3 years now. T he kids love it! I’ve used it with blueberries, blackberries, strawberries (the most popular), peaches and any seasonal fruit. Frozen berries in winter work great also. I only made a single recipe the first time.and since then I make 2 double batches every time it’s made. It freezes well in a plastic container with layers separated by waxed paper. I have to make it when nobody is home so I can hide the back stock in the freezer in the garage. The kids won’t leave it alone. I don’t even use the glaze unless we’re taking it somewhere and want to get all “fancy”. This recipe stands well on its own without the added sugar on top. This is a lifetime favorite now and everybody at church, school, sports looks forward to a “healthy” desert/breakfast bar.5 stars

        1. Hi Nicole! Other readers have reported success with using frozen strawberries in this recipe. I suggest letting them thaw completely first and patting them dry to remove any excess moisture. I hope this helps!

  363. These bars came out delicious and I actually felt good about eating them!!
All went well in the prep until after the glaze. They started out with a slightly crunchy bar, but then the bar became soggy. They stayed that way until they were gone, which wasn’t that long, but this affected the presentation. What did I do wrong?5 stars

    1. Hi Marcia! Sorry to hear you had trouble with them. I would wait to put the glaze on until you are ready to serve. They will soften as it sits in the glaze.

  364. The best straberry bars recipe out there!
The whole family absolutely loves it!
I like to add vanilla to the straberry mix, and when I feel fancy I also switch the lemon juice for a good quality white balsamic vinegar.
    So good!5 stars

  365. These came out good. Just a little fragile. Maybe next time I will double the oatmeal mixture to have a thicker crust that can support the 2 layers of strawberries and crumble. Adding the glaze made them wet, but tasted great.4 stars

  366. Had extra strawberries in the fridge, googled “strawberry recipes” and decided to make these. Was certainly not disappointed, these are amazing! Had to pack them away in the fridge to stop eating them. Can’t wait for more tomorrow. Thanks for the delicious recipe!5 stars

  367. This looks so good! Novice baker here so I have a question. I have Quick Cooking or Steel Cut oats in my cabinet. Can I substitute either for this recipe?

    Thanks in advance.

    1. Hi Mike! I prefer using old-fashioned rolled oats, but you can use quick oats. The texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

    1. Hi Cynthia! I prefer using old-fashioned rolled oats, but you can use quick oats. The texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

  368. This was so yummy! I made it with a mix of strawberries and blueberries and my two young kids loved it as did my husband. Sooooo good! We had it with ice cream (instead of icing) for a dessert but it was good by itself…maybe even better. I love that it has a small amount of sugar and fresh fruit instead of jam or jelly. Will be making this again! Thank you!5 stars

  369. These bars were so delicious and easy! My house smelled wonderful, too. I was impressed that they came out looking exactly like the photo. I’ll definitely be making these again.5 stars

  370. Is there a reason that you wouldn’t just toss the strawberries in the lemon/cornstarch/sugar mixture, and then put them on top of the crust? Just curious, as it seems like it would be easier. Which is kind of ridiculous, recipe is already pretty easy! Thanks.

    1. Hi Leslie, those ingredients are all added in separately and not mixed together. You are layering them and won’t be needing cornstarch or lemon on the top layer. This is the way I’ve tested and remade the recipe multiple times and works great. Enjoy!

  371. I made these with strawberries and rhubarb in a tart pan and skipped the glaze. They were spectacular! Thanks for a healthier version of a delicious bar.5 stars

  372. I made this today for Easter dessert at my parents’ house with extended family. I doubled the recipe and followed it pretty closely (the main change being that I mixed the sugar and cornstarch, added the lemon juice then added that mixture to the strawberries before putting them on the crust). There were rave reviews all around, and I had to share the recipe. Thanks so much! 🍓 P. S. We have a berry farm so we KNOW berries. This dessert is a winner!5 stars

  373. Wow! This did NOT work for me??? Not sure what went wrong? I am a trained chef and am preparing this for 60 pp tonight. Definitely not sliceable for me, not sure of the serving size but did not get enough servings, super thin. I’ll try it again another time but for tonight I will need to scoop and serve?

    1. I’m sorry to hear that you had trouble with the recipe, Julie. The method and timing has worked well for myself (and others) but I know how frustrating it can be to try a new recipe and not have it work out, so I really wish you would’ve enjoyed it!

  374. I had some fresh strawberries in the fridge I wanted to use up, so I searched TikTok for “healthy strawberry recipes.” I wouldn’t necessarily call this healthy, but OH MAN is it absolutely delicious and easy. I didn’t have powdered sugar, so I just ground up some plain white sugar in the blender to make powdered sugar! I also didn’t have cornstarch, so I just skipped it. 10/10 recommend making this delicious desert.5 stars

  375. Hi! I have a leftover jam filling from another dessert I made. Can I just spread that over the crust before baking instead of layering the strawberries, cornstarch, lemon juice and sugar like you did? My leftoever filling was made over the stove out of stawberries, water, cornstarch, sugar, and lemon juice. Do you think it will go over well? What do you think is the worst that could happen?

    1. Hi Genevieve! I haven’t tried it myself but other readers have used jam with great success. Hope you enjoy it!

    1. Hi Amber! I prefer using old-fashioned rolled oats, but you can use quick oats. The texture of the bars will be softer because rolled oats are more sturdy and hold up better in baking. I hope you enjoy!

  376. I can’t wait to make these today, I’m wondering if I could add unflavored protein powder like Vital Proteins collagen to add a little more protein. Anyone ever try something like that?

    1. Hi Kelly! I’ve never tried these with protein powder, so this would be an experiment on your part. Definitely keep an eye on the batter to make sure it’s not overly dry. You can always top with with more Greek yogurt for protein too!

  377. I have ADHD and read the recipe wrong as I was attempting to multitask and make this. The instructions were extremely clear, yet my dumba** put the crumb layer over the 1st strawberry layer. I realized my mistake too late. I attempted, poorly, to remove the crumble, but it went exactly how you are imaging. I ended up making another small batch of the oat mixture to sprinkle over top. Once again, the instructions were clear but I am an idiot. I had to cook about twice as long to get the fruit bubbling. Despite my attempts to destroy this recipe, it turned out so well!! Chewy, sweet, tart, yummy. It was so crumbly it fell apart (once again, my fault), but when I added the glaze it just all snuggled together into a yummy, firm bar. This recipe is so good that it will turn out awesome even if you totally botch it. I can’t even imagine how good it would be if you were a competent adult who could follow directions.5 stars

    1. Hi Sarah! First of all, never be so hard on yourself! You worked it out and ended up with a great tasting bar! So happy that you could enjoy them!

  378. Hi Erin,
Second time I have made these bars and they are very good. I use swerve brown sugar replacement instead of granulated sugar, and it was perfect. Made a white chocolate glaze instead of the powdered sugar for the top. Second time I browned the butter and toasted the oats and knocked the flavor out of the park. I have a great garden and lots of strawberry’s that are perfect for this recipe. Many thanks5 stars

    1. The browned butter and toasted oats method sounds amazing! I’ll give that a try next time I make these.

  379. I’m a Registered Dietitian and thought you might not realize that the pan size in the directions stays the same whether you single, double, or triple the recipe. 48 bars in an 8×8 pan might not bake as expected. Looking forward to making these with strawberry season upon us. Cheers!

    1. Hi Ruth! Thanks for the heads up! That is something build into the recipe card plugin and unfortunately I can’t change or fix. Definitely will need to increase the pan size if you are making a double or triple batch. Enjoy!

  380. Super easy, we make these all the time with whatever berries we have leftover in the fridge that need to get eaten. Amazing with some some Greek yogurt or vanilla ice cream for a treat!5 stars

  381. My bars did not firm up. They’re all crumbly, so I’m going to serve it like a strawberry crisp. I followed the recipe exactly and I’m not sure why they didn’t turn out right.3 stars

    1. I’m sorry to hear you had trouble with the recipe, Suzette! I know it can be so disappointing to try a new recipe and it does not turn out for you. It has worked well for myself (and others) and I wished it would have been a hit for you too.

  382. I’m so happy I stumbled upon this recipe when looking for things to make with my gallon of fresh strawberries. This was easy and is beyond delicious. Can’t wait to try it with other fruit too!5 stars

  383. I made these because I had a lot of strawberries and I didn’t want them to go bad I doubled the recipe. They are a little soft but delicious. I may try to crisp them up a little more in the oven.. I think they are sweet enough without the drizzle. So glad they are low in calories They are great for dessert and I am looking forward to having them with plain Greek yogurt for breakfast5 stars

  384. My bars burnt at 375 degrees baking for 35 minutes. I’d bake at a lower temp. I’d also coat the strawberries in the sugar and cornstarch before spreading out. Sprinkling cornstarch over the top left some clumps of dry cornstarch.2 stars

    1. I’m sorry to hear you had trouble with the recipe, Tyme. I know it can be so disappointing to try a new recipe and it does not turn out for you. It has worked well for myself (and others) and I wished it would have been a hit for you too.

  385. Just made these and I’m enjoying one with my coffee now. They turned out beautifully!! I added some cream cheese to the glaze 😋😋5 stars

  386. Such a delicious way to use an extra pint of strawberries! Perfect over morning yogurt or afternoon ice cream, or just on their own. My 6 year old loved making them with me and eating them, too. A win!! :)5 stars

  387. Love these bars! I’ve made 3 batches so far. :)

I don’t add the glaze – just the berries and base. Makes a great light breakfast and freezes wonderfully. Thanks!5 stars

  388. I had farm fresh strawberries that accidentally froze, and then when they unfroze they were a mushy mess …. I was so sad thinking I ruined them, but instead I turned them into these bars! Make the recipe to an T. Even added some blackberries I had. Delicious!!!5 stars

  389. OMG!!

The most delicious healthy bar ever tasted!

Had some overripe strawberries and was looking for a recipe 😍

    Thank you5 stars

  390. These are perfect! I wouldn’t change a single thing about the recipe. I can’t wait to try it with different berries. Thanks so much for sharing! <35 stars

  391. Oh my gosh just made these and they are SO good! Thank you for sharing the recipe. We had lots of strawberries to use up and this was perfect.5 stars

  392. LOVE! LOVE! LOVE! This recipe! It’s the perfect recipe for my kiddos on the weekends. We use it for snack and breakfast! We’ve added this into our rotation!5 stars

  393. I found this recipe while trying to find something my picky eater daughter would eat for breakfast. Unfortunately while she liked them, she still won’t eat them for breakfast. BUT my other daughter and us adults are in love with them! They are way better than we expected, and yh whole batch was gone in 2 days. I am now in the midst of making a double batch. Fabulous recipe! Would definitely recommend!5 stars

  394. These are soooo good, and really easy to make. It was the perfect way to use up all the strawberries in my fridge. Thank you so much for sharing and creating this recipe.5 stars

  395. Absolutely terrible. I’m shocked at all the positive reviews. Wish I didn’t waste my time or money. DONT MAKE THESE!!!!1 star

  396. So excited to make these! How essential is the lemon juice? I’m hoping to make them this arvo but don’t have lemons in the house.

    1. Hi Katy, it should be ok to leave it out. I haven’t personally tried it but other readers have, and their feedback said the recipe still came out great! Hope you enjoy it!

  397. I love these! I’ve made them a few times for my kiddos and my son loves them but my daughter thinks they’re too sweet for her. Can I use frozen strawberries or no?5 stars

    1. Hi Krystyna, other readers have reported success with using frozen strawberries in this recipe. I suggest letting them thaw completely first and patting them dry to remove any excess moisture. I hope this helps!

    1. I’m sorry to hear that Nancy. Could you explain more as to what the problem was so we can try to troubleshoot it for you?

  398. Hi there,

Thanks for this lovely recipe. My oatmeal bars are a crumbled mess. What did i do wrong? and how to I make them more like a solid bar and less like crumbles.

    1. Carolyn, it sounds like there’s too much flour in the bars; did you lightly fluff the flour before scooping? If you try it again, double check your flour measurement and maybe add an extra tablespoon or two of butter.

  399. Hi Erin —

This sounds good but I wonder how it would work with blueberries since strawberries are an issue for me.(allergy)

    Bob

    1. Hi Bob! It would work great! I actually have a blueberry version: https://www.wellplated.com/blueberry-oatmeal-bars/ Enjoy!

    1. So glad you enjoyed them and yes! I have a blueberry version right here: https://www.wellplated.com/blueberry-oatmeal-bars/

  400. Sooo good! Im always looking for recipes with oats to help my milk supply while breastfeeding and these are an easy favorite! I must admit,I was a bit skeptical while making the bottom layer as it was pretty crumbly but it kept together so nice! The flavor is definitely a plus. I’ll be making these as well as the blueberry ones again!5 stars

  401. I substituted coconut flour and coconut oil (trying to be gluten and dairy free) but mine is very crumbly and falls apart as you eat it, even from the fridge. It is delicious and I really want to make it work. Any suggestions about why it didn’t firm up sufficiently?

    1. Hi Lynne, The coconut flour is definitely the reason, because it is so much drier than wheat flour. I’d suggest using a GF flour blend like this one instead of using coconut flour. http://amzn.to/2bwCkkl Others have done that with great success!

    1. Hi Maria! While I haven’t tested it out myself I know other readers have used oat flour with great success. For the maple syrup: I actually would not recommend the swap. The bars are about as low in sugar as I could make them, and I worry that the crumble wouldn’t hold together since maple syrup is liquid. Hope you enjoy them!

  402. I bought some strawberries and found this recipe. These are so delicious I wanted to eat the entire pan. I, of course, made the glaze which only added to it. I will definitely make again. Plus, the recipe is very easy.5 stars

    1. Hi Heather, it sounds like there’s too much flour in the bars; did you lightly fluff the flour before scooping? If you try it again, double check your flour measurement and maybe add an extra tablespoon or two of butter.

  403. This recipe does not work as written. As many others mentioned, my end product was very crumbly, certainly not bars. I double sifted my flour and measured all ingredients. My opinion is that more butter is needed, especially if you compare your quantities to other like recipes. Web site and video are very well done.

    1. I’m sorry to hear you had problems with the recipe, J! I don’t think there is a need to sift the flour for this particular recipe. Are you measuring before or after you sift it? This is where you could run into issues. The measurements have worked well for the majority of those who make it and we are not able to replicate why some are having an issue.

  404. LOVE THESE! A great summer recipe. Followed recipe. Great way to use up strawberries that are about to spoil.3 stars

  405. The first time I made these I was blown away by how such a simple recipe could be so delicious! They are refreshing and so tasty…unlike anything I had ever really had before. They are always a hit wherever I bring them! Perfect for birthday parties or potlucks! & my daughters and husband adore them!5 stars

  406. These are really good. Instead of a glaze, we ate ours with ice cream, which reminded me of those Good Humor strawberry shortcake ice cream bars I ate as a kid :).5 stars

  407. Very delicious! I used a bag of leftover Simply Oats. Picked out the raisins though. Mine came out really good. Will definitely make again.5 stars
