Forget the casseroles and soups—these Thanksgiving Leftover Sliders are the best way to put those holiday extras to good use!

Leftovers might just be the best part of Thanksgiving.

Sure, we love a leftover Thanksgiving Turkey sandwich, but what if I told you there was an even more delicious way to enjoy your extra turkey between two buns: these sliders are IT.

Not only are we using the turkey in this recipe, but you’ll make good use of your leftover stuffing and cranberry sauce too.

These easy sliders are cheesy, gooey, herby, and meaty. They’re hands down one of my favorite leftover Thanksgiving turkey recipes!

Key Ingredients

Here are some important ingredient notes to keep in mind. For a full list and quantities, see the recipe card below.

  • Hawaiian Sweet Dinner Rolls. If you have leftover Homemade Dinner Rolls from Thanksgiving, you can use those instead. But we love a sweet Hawaiian roll.
  • Leftover Turkey Slices. This year, I used leftover Smoked Turkey.
  • Cooked Stuffing. You can’t go wrong with classic Cornbread Stuffing.
  • Cranberry Sauce. Homemade Cranberry Orange Sauce, the jellied kind that plops out of the can, whatever you have.
  • Cheese. Mozzarella, provolone, cheddar, or Havarti are my top picks.

How to Make Thanksgiving Leftover Sliders

  • Prep the Rolls. Slice the slider buns in half horizontally, then spread the bottom half with mayo and the top half with mustard.
  • Assemble. Add the turkey, stuffing, and cranberry sauce, then top with the cheese. Add the top buns and transfer to the prepared baking sheet.
  • Make the Buttery Topping. In a small bowl, combine the melted butter and poppyseeds. Spread over the top.
  • Bake. Warm the Thanksgiving sliders in a 350ºF oven until the cheese is melty. (If, after 10 minutes, the tops are looking too brown, tent them with foil.) Cool on a cutting board for a few minutes, then slice and ENJOY!

Juicy turkey, cranberry sauce, stuffing, and melty cheese sandwiched between fluffy Hawaiian slider buns and baked until golden, these easy Thanksgiving sliders are the most delicious way to use your leftover Thanksgiving turkey.

Ingredients
  

  • 1 (12-ounce) package Hawaiian sweet dinner rolls such as King’s Hawaiian
  • 2 tablespoons mayonnaise or plain Greek yogurt
  • 1 ½ tablespoons Dijon mustard
  • 12 ounces leftover turkey slices
  • 1 ⅔ cups cooked stuffing
  • 1 cup cranberry sauce
  • 1 ½ cups shredded mozzarella cheese provolone, cheddar, or Havarti cheese, divided
  • 6 tablespoons unsalted butter melted
  • 2 teaspoons poppyseeds

Instructions
 

  • Place a rack in the center of your oven and preheat to 350°F. Line a baking sheet with parchment paper.
  • Without disconnecting the buns at their sides, slice the slider buns in half horizontally. Spread the bottom half with mayo (or Greek yogurt) and the top half with mustard.
  • Layer on the turkey, then the stuffing (smush it a bit so it sticks together), then the cranberry sauce, then top with the cheese. Add the top buns to complete the sliders. Transfer to the prepared baking sheet.
  • In a small bowl, combine the melted butter and poppyseeds. Spread all over the top.
  • Bake until the cheese is melty, or about 20 minutes—at the 10-minute mark, check and make sure the tops are not browning too quickly; if they are loosely tent with foil and continue baking. Transfer to a cutting board and let cool a few minutes. Carefully slice apart, and serve.
