I’m raising a skewer of Fajita Chicken Kebabs high into the air and calling for a change in dialogue. Why must we always “man” the grill? I hereby decree that we “woman” it too!

The best summer grilling recipe- Fajita Chicken Kebabs

Whether by design or default, whenever I attend a backyard barbecue, it always seems to be the men who rush to the grill and the women who handle the accompanying sides/desserts.

Even at home, whenever we grill, Ben insists on being the one to “man” the flame. I rarely disagree, since it’s the one occasion he cooks.

Still, I was beginning to feel a grill-shaped void in my cooking repertoire. After all, why shouldn’t I be able to hold a spatula and master the flame? Move over boys—I’m armed with fajita chicken kebabs, and I’m ready to take over the tongs.

Why I Love This Easy Chicken Kebab Recipe

If you’ve been intimated to try grilling, I’m thrilled to now say from experience: basic grilling is a snap!

Though I am going to need more practice before I’m willing to risk the integrity of a full rack of ribs or beef tenderloin, these juicy, fajita-inspired chicken kebabs were my first attempt, and they could not have been any simpler or more delicious.

You know that feeling of jealousy you have when you detect the tantalizing smell and unmistakable hiss of fajitas being delivered to the guy two tables down at the Mexican restaurant?

The one that makes you smack your forehead and think, “Why didn’t I order fajitas too?” These fajita chicken kebabs put restaurant-guy’s fajitas to shame.

They have the same sizzle for a fraction of the price and are brighter, fresher, and healthier too.

A quick 30 minutes of marinade time are all you need (spices + lime juice—easy!) though you can certainly prep the chicken up to 24 hours in advance for maximum dinner speed.

What to Serve with Chicken Kebabs

  • Rice. We enjoyed these fajita chicken kebabs with a simple side of brown rice.
  • Beans. A side of Instant Pot Black Beans would be delicious with these kabobs.
  • Toppings. Add avocado, salsa, and sour cream (or swap plain Greek yogurt), and you have a chicken fajita feast that sizzles.

In authentic fajita style, Ben stuffed his grilled chicken and veggies inside tortillas, but I found the kebabs totally satisfying on their own.

One final, burning question: Is it more appropriate to refer to a woman as “Grill Master” or “Grill Mistress?”

Please discuss—I can’t decide which to put on my future apron.

Fajita-style chicken grilled on skewers with veggies. A delicious chicken kebab recipe that’s easy to make and sure to please!

Prep: 20 mins
Cook: 10 mins
Total: 1 hr

Servings: 4 servings

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Zest and juice of 1 large lime, plus additional for serving
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeño, chopped (remove seeds and membrane if sensitive to spice)
  • 1/2 teaspoon kosher salt
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion
  • Fresh cilantro for serving
  • Salsa, sour cream (or plain yogurt), and guacamole, optional for serving

Instructions

  • Cut the chicken into bite-sized pieces. Place in a zip-top bag.
  • In a small bowl or measuring cup, whisk together the canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeno, and salt. Pour over the chicken, seal the bag, the gently “squish” the bag so that the chicken is coated with the marinade. Place the bag in a baking dish to catch any accidental drips, then refrigerate for 30 minutes or overnight. If using wooden skewers, soak the skewers in water for at least 20 minutes prior to use.
  • When ready to cook, heat your grill to medium-high. Cut the bell peppers and onion into 3/4-inch chunks, then thread onto skewers with the marinated chicken pieces, alternating the chicken with the vegetables. Lightly oil the grill, then place the kabobs on the grill, cover, and let cook until the chicken is fully cooked and no longer pink, about 6 to 8 minutes, turning the chicken once or twice throughout so that it cooks evenly.
  • Remove the chicken kebabs to a serving plate and sprinkle with cilantro and a few squeezes of fresh lime juice. Serve warm, garnished with salsa, sour cream, or guacamole as desired.

  1. I am woman grill master hear my kebabs sizzle!  You go, girl!  I love that you have taken your rightful place at the grill – even if Ben had to walk you through the firing up process. :)

  2. Erin, I love grilling kabobs in the summer!!! and we just got a new grill that I actually know how to use!!! love this recipe!!! and congrats on Pick n Save!

  3. Kebabs are totally the way to go for first-time grillers! I love how quick and easy they are…perfect for weeknights! I’m loving this fajita chicken version. I’ll be trying this recipe over the summer for sure!

  4. Erin these are gorgeous!  I love all the colors.  I love your post too.  Grilling definitely feels like a man’s thing, but certainly doesn’t have to be.

  5. “The” Lady  grill master! That sounds good to me! These look so good!! Yummy for my tummy!!

  6. These Kebabs just scream summertime, I love it.  Love that you’re “woman-ing” the grill, too!

  7. I am so with you! Why is it considered manly to stand over a flame with chunks of meat? It’s not like standing over a stove gets that kind of PR, even though yep, heat gets pretty high there too. Equal grilling rights for all!
These kebabs are fantastic. I like my fajita fixings on a stick!

  8. I AM a big Pick ‘n Save fan, and this is a great idea for its ‘delish’ marinated chicken breasts! Keep the summer sizzlin’ recipes coming!

  9. Hahaha the same thing is true in my household, I don’t think I question it because it’s practically the only food preparation that Kevin takes pride in. BUT, if he’s gone and I’m left to blogging alone, you bet I’m doing the grilling. That is, if I can figure out how to turn it on… :) These skewers are so darn pretty — I’d say you’ve mastered that grill!

  10. I started grilling last summer and totally had to be talked through it over the phone too :) Still a novice but it’s so much easier than I anticipated! Yay for chicks taking it to the grill! Next up on mine will be Chicken Fajita Kebabs!

  11. I’ve had to learn to master the grill due to my husbands overall lack of enthusiasm over preparing food, no matter how manly it is.  Thankfully, I love grilling!  It’s a great reason to be outside (preferably with an adult beverage in hand) and enjoy the weather!  These kebabs look so great – perfect for an entire meal!

  12. You had me cracking up at the child’s sized Packers sweater comment! Too funny.

I’d say you did a great job “manning” the grill because these turned out beautifully. I made tofu kabobs last summer for the blog and never posted them because the pictures turned out crappy. You make it look so easy though- these pictures are gorgeous!

  13. Yay for rocking the grill, Erin! You are totally inspiring me that I need to learn how :) These kebabs look amazing and so flavorful! Love this recipe!

  14. I’ll definitely be womaning the grill this summer with these babies! Holy yum!!

  15. These are so bright and beautiful! I can’t wait to get our own bbq/grill when we move into our new house! My chicken loving boyfriend is going to love these, and I’ll swap the chicken for some tofu (or haloumi!) for this vego girl.
Also, I think it should be the gender neutral term “Grill Boss” on the apron, that way it doesn’t matter who is holding the tongs that night!

  16. LOVE this recipe Erin, so fun and playful, and I am adoring the colorful shots!!!  these look Summer perfect – pinned! x

  17. Oh my goodness, why have I not tried this before?! A combination of two of my favorite meals in the world. Such a great idea!!

  18. I am all for woman-ing the grill too! I’m chief decorator in this house as my fiancé is useless with a paint brush and I was taught by my decorator father, so hell yeah to woman-ing the grill, why do men get all the cool jobs?! Stunning photos by the way! :D

  19. Kebabs must be in the air – I just made shrimp and watermelon ones!  These obviously need to go on my grilling list.  Gorgeous, gorgeous pictures!

  20. Hello! These look delish! I am new to grilling too… I think I’ve grilled outdoors maybe twice over the span of the last couple of years lol. This recipe looks great and easy too. Yay! I will have to try it. Beautiful photos!

  21. Love the flavors in the marinade! On the weekends I let my husband do all the grilling, but during the week I’m the grill master or grill mistress. Whichever you want to call me ;-)

  22. I can’t tell you how many times I’ve made these!!! The boyfriend is obsessed too, to the point that it’s almost become a joke, because we keep finding excuses to fire up the grill and cook them. They are so easy and have so much flavor. We love them in tortillas, but honestly I like them plain too. Thanks for a great recipe!5 stars

    1. Susie, I’m so happy to hear that the two of you are enjoying these so much! Thanks for trying the recipe and letting me know. I really appreciate it!

  25. My husband used to be the only one to grill, but these days, I’m grilling more than he is. :)  And I think I need to move to Milwaukee just for that chicken!

  26. Okay, that’s hilarious. Child’s Sized Packers Sweatshirt Girl? They’ve got you pegged for sure! Grill on Miss crouton!

  27. I’m SO ready for kebab season and summer grilling! These looks fantastic!

  28. I think these need to be on my table for Memorial Day weekend. They are so colorful and beautiful!.

  29. These kebabs are 100% gorgeous, but I think I need to let my husband do all of the grilling.  I’m too busy making other stuff and drinking wine :)

  30. These are beautiful!! And I am always completely jealous of the person getting the fajitas at restaurants!!

  31. Looks delicious.  I always grill in the summer.  Love the veggies, and just about anything  on the  grill. There’s  nothing to be afraid of . It very relaxing  and enjoyable.  Love love love, my Weber.

  32. We just cooked this for dinner and it was absolutely delicious. We had to make them in the oven which was on the grill setting but they still tasted fabulously. I just think I went a bit heavy on the spice so we needed a glass of milk each and followed the meal up with some vanilla honey ice cream. Yum!5 stars

    1. Anna, I am so happy to hear this! Thanks so much for trying the recipe and letting me know how it came out. Also that ice cream sounds divine :)

  33. I just discovered your site. I’m so anxious to make this for dinner tonight. Love all the good raves. Diane

  34. Do you have the nutritional value for this recipe and will you be posting more recipes with the calorie count in the future?

    1. Great question! Regarding nutritional info, this is something that I’ve actually started adding to all of my new recipes, effective January 2016 (you’ll see it in the recipe box at the bottom). Unfortunately, it’s pretty time consuming, so I’m unable to go back and add it to past recipes. If you’d like the nutritional info for any of my older recipes (or really any other recipe or food), you can actually calculate it yourself for free at myfitnesspal.com (this is how I calculate the new recipes on my blog). I’m sorry I can’t give you the information for this exact recipe, but I hope that My Fitness Pal will be a helpful resource for you.

  35. We went camping a few weeks ago and I made these kebobs for dinner one night. They were so amazing!!! I marinated the chicken the night before we left and they were so flavorful. My advice for anyone making these is to make a lot…they go fast!5 stars

    1. Brynn, what a great idea to take these camping!! Thanks so much for trying the recipe and sharing how it turned out for you!

  36. Lots of people comment about how good something looks but not many comment about how the recipe actually turns out. I made these. They were quite spicy due to the jalapeño and I did remove the seeds and membrane – one jalapeño is a lot for this small amount of marinade, so adjust if needed as per your taste. I mixed a little water in with the marinade to tone down the heat a bit, but I was still worried they would be too spicy. I like spicy, but not burn -your-mouth spicy. Once they cooked up they were very good. My boyfriend liked them too, but not as much as I did. I would make them again. I used metal skewers on the grill, cooked for 4 minutes each side.4 stars

    1. Thanks so much for taking the time to share your feedback! I truly appreciate it, and I’m so glad that you enjoyed the recipe!

  37. oh my. It’s so tasty !!!! We just cooked this for dinner and it was absolutely delicious.
    Thx for this article.

    1. Hi Catherine! I’m sorry you were having trouble with the button—it appears to be working for me, so I’m not sure what the issue may have been. Perhaps try hovering the mouse (or tapping with your finger if you’re on a mobile device) toward the top edge or slightly above the button.

  38. Great recipe for the grill. Simple and flavorful. Making it tonight! I’m going to try marinade on skirt steak too.  My hubby is not into chicken  unless it’s fried…and I’m the GRILL BOSS!

  39. Hi!!! I love your recipe!! Can you please tell me serving size? I don’t see that. I’m just trying to double or even triple the recipe to feed enough people. I’ve only made your recipe for 2 people before. Thank you for your time!!! And I love it!!5 stars

    1. Thank you, Andrea! I’m so glad you enjoyed the recipe! If you scroll down to the recipe, there is some text under the title that tells you how many servings it will make. This recipe should yield about four servings, and if you make too much, it would be excellent leftover! (:

  40. Made this last week and making it again this week! Fabulous recipe with great flavor. (I was a little lazy with the veggies. I sliced them into strips, seasoned with a little oil, S&P, and dried oregano, and then grilled them in a veggie basket while the chicken cooked on the skewers.)5 stars

  41. So glad I found this recipe! It came together quickly, was full of flavor, and perfect for a summer night grilling! 5 stars

  42. my wife made chicken kabab with your mentioned ingredients and it was too yummy. i will subscribe your website for future tasty foods. thanks for posting dishes like this.5 stars

    1. I’m SO happy to hear that, Allie! Nutritional information is something I started adding to recipes in January 2016. Unfortunately, it’s a time-consuming process, so I’m unable to go back to all my past recipes to add it. The good news is that you can calculate the calories for free at MyFitnessPal (there are other similar sites too). I hope that can be a helpful resource for you!

  43. Thanks for sharing this. Will be making during the week for dinner. As for the apron….mine say Grill Queen, Grill Mistress and I even have one that says Grill Bi$%h. I dont wear that one often….only when my sister comes since she gave it to me ?

  44. This was SO good! Fam just loved it, especially with homemade tortillas. What a winner recipe! 😁5 stars
