A lover of flavor, I never interpreted the phrase “meat and potatoes” as a compliment. WELL, for neither the first (nor I am sure, last) time, my assumptions have been proven dead wrong. This easy recipe for Ground Beef and Potatoes is all the things I never imagined something as seemingly simple as fried potatoes and hamburger could be.

It’s flavorful enough to hold my attention, satisfying enough to keep me full, and nutritious enough to be a worthy addition to our healthy dinner rotation.

A mixture of potatoes, lean ground beef, onion, bell pepper, and spices, this beef and potatoes skillet will appeal to picky eaters and discerning palates alike.

Most often, the phrase “meat and potatoes” means a lack of eating adventure. A “meat and potatoes” person shies away from green vegetables, plant-based proteins like tofu, and spices.

As someone who embraces a diverse diet and certainly doesn’t want to waste her time on bland food, I am biased in the opposite direction. How could meat and potatoes possibly be anything but boooorrrrring?

Well my meat and potatoes friends, I hereby admit the fault of my prejudice. It turns out that you’ve been onto something all along.

Lean ground beef is a versatile protein.

It’s healthy in moderation (beef is packed with protein, iron, zinc, and vitamin B12) and when used in recipes that incorporate other important food groups, especially vegetables.

Most often, my healthy ground beef recipes are inspired by world cuisines, like this Taco Skillet and this Korean Beef Bowl.

Until this simple skillet recipe came along, it didn’t occur to me to cook beef with something as basic as white potatoes, because I assumed the results would be ho-hum.

Ummmmm, this assumption is from the same girl who easily demolished an entire sheet pan of these Oven Roasted Potatoes by herself and who happily eats a Potato Frittata three days in a row for lunch.

Nice logic, Erin. (Ben I am sure would be happy to give you endless examples of my contradictory behaviors, but we’ll save that for a different post. Or never.)

While the ingredient list here looks basic, the results are anything but dull.

This ground beef and potatoes skillet is homey and classic to be certain—so yes, the “meat and potatoes” persons in your life will approve—but it’s also interesting enough to appease those seeking more from their meal.

How to Make Ground Beef and Potatoes

Not only is this ground beef skillet sure to be embraced by everyone at your table, but it’s also easy to make and quick to clean up.

You can cook ground beef and vegetables together in the same skillet, leaving you just one pan to wash in the end.

The Ingredients

  • Lean Ground Beef. The flavorful and scrumptious meat for this dish. I don’t typically use oil with ground beef (the fat in the beef is sufficient enough for it to cook without sticking), but if your beef is ultra lean and your pan seems dry at any point, you can drizzle in a bit of oil to prevent sticking.
  • Potatoes. Tender cubed potatoes are a slam dunk pairing with the ground beef. They’re nutritious, crowd-pleasing, and pair beautifully with the spices in this dish.
  • Red Bell Pepper. Adds a touch of color, freshness, and sweetness.
  • Worcestershire Sauce. Gives the dish depth and umami flavor.
  • Dijon Mustard. Its tanginess pairs wonderfully with the potatoes.
  • Spices. A blend of smoked paprika, garlic powder, salt, pepper, and oregano elevates this dish from bland to something truly craveable.
  • Hot Sauce. For a delicious kick! Use a lot or use a little to fit your taste preferences.

  1. Sauté the potatoes in oil.

  1. Brown the beef with the vegetables, Worcestershire, mustard, spices, and hot sauce.

  1. Cook until the vegetables are tender and the meat is cooked through. Add the green onions. Serve as desired and ENJOY!

Wine Pairing

Serve ground beef and potatoes with a Merlot, Pinot Noir, or Chardonnay.

Storage Tips

  • To Store. Refrigerate leftovers in an airtight storage container for up to 3 days. 
  • To Reheat. Gently rewarm beef and potatoes in a skillet over medium-low heat.
  • To Freeze. I do not recommend freezing this dish, as potatoes can have a mealy texture when thawed. 

Leftover Ideas

  • I love to serve leftovers as a hash by re-crisping the ingredients in a skillet, then topping them with a fried egg. You could also turn leftovers into a scramble by mixing in scrambled eggs instead.
  • Turn your leftovers into a portable meal by wrapping them into a whole wheat tortilla. Make sure to warm the filling up first. (Adding some cheese to the wrap would be scrumptious.)

Ground Beef and Potatoes

This easy ground beef and potatoes will be an instant family favorite! Cooks in just ONE pan. Top with cheese or eggs for quick, healthy dinners.

  • 2 tablespoons canola oil
  • 1 pound potatoes peeled and diced into ¼-inch cubes (I used Yukon golds)
  • 1 pound 93% lean ground beef
  • 1 small yellow onion diced
  • 1 red bell pepper diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt plus additional to taste
  • 1/4 teaspoon ground black pepper
  • 1 to 2 teaspoons hot sauce plus additional for serving (I used sriracha)
  • 2 green onions sliced
  • FOR SERVING: non-fat plain Greek yogurt or sour cream shredded cheddar cheese, cooked brown rice or cauliflower rice (or just more hot sauce!)


  • Heat the oil in a skillet large enough to hold all of the ingredients over high heat. Once the oil is hot and shiny, reduce the heat to medium, then add the potatoes. Cook, stirring often, until the potatoes are turning golden and becoming tender (they should still be too firm to eat), about 6 minutes.
  • Add the beef, onion, and bell pepper. Cook, breaking apart the meat.
  • Add the Worcestershire, mustard, smoked paprika, garlic powder, oregano, salt, pepper, and hot sauce (add 1 teaspoon if you prefer only subtle heat, more if you would like it spicier).
  • Continue cooking and breaking up the beef, until the potatoes and onions are tender and the meat is fully cooked through, about 6 to 8 minutes more.
  • Stir in the green onions. Taste and adjust the salt and pepper as desired. Serve hot, topped with Greek yogurt, cheese, over rice, or enjoy it all on its own with a dash of extra hot sauce if you like.

    I cooked 3 lbs. of potatoes and 2 lbs. hamburger. My wife cares for her father so leftovers keep her responsibilities low.
    I didn’t have all the ingredients, ie. green onions and I did add ancho chile powder. I cooked longer than prescribed so as to crisp the potatoes. I poured 1/4 cup real maple syrup.

  30. I made this for dinner yesterday. It is a great recipe and easy to put together. I used grass-fed beef. 1lb. of potatoes equaled 2 potatoes. For me, next time, I’ll use one large potato. The potatoes took a good while to cook. The longer the dish cooked, it created a depth of flavor!! I added a little water in between to get the fond off the bottom.
    I served it with basmati rice and a side of avocado. I ate the leftovers for lunch and added soft scrambled eggs. Delicious, heartwarming, and definitely will make this again and again. Thank you for your wonderful recipe.5 stars

  34. I cooked this last night and just finished my left overs for lunch. Such a delicious way to use ground beef when you don’t want the usual ground beef recipes. I made the recipe as written which was yummy but at the end I added tumeric to only my bowl (my husband wouldn’t like that flavor) and that really added an extra touch of flavor.     Great recipe, I added 2 ingredients which are rosemary and a splash of cooking wine. I swapped the red peppers for peas and carrots. I added the rosemary at the end. I didn’t have any rice, but I used Famous Dave’s corn bread muffins instead. Tastes amazing!5 stars

  41. I don’t put this over rice but eat “as is” usually with warm garlic bread if anything. This seems like a questionable like “how could something so simple be so good” but it is! Simple and hearty an easy weeknight meal that even the kids like (probably because it’s not too spicy unless you add some heat.)

    I double the recipe due to not using a side and use different peppers (red, green, yellow) depending on availability to add some color. It’s even good enough to serve to guests that are “like family” for a delicious meal. This one’s a “keeper” and I’ve already made it multiple times!5 stars

  43. This recipe is the BEST! I’m a mom of a almost 3 year old and a 6 month old, so basically just the thought of dinner gives me anxiety. Trying to find something healthy but also quick to make because these kids have NO patience is a bit difficult. Well my toddler still denied trying it (pretty typical these days) but the hubby and I both said “fine, more for me!” I made it exactly as the recipe states except I had some russet potatoes on hand and not Yukon golds. We had it over a bed of lettuce and then again on brown rice, topped with honey Greek yogurt both times and it was absolutely outstanding! I could have had thirds but I didn’t haha. Instead I decided to save the left overs to try it with the fried egg on top for breakfast. This will definitely be a regular in house, thank you!!!5 stars

  44. I added chorizo and a can of brown lentils and a tsp of whole grain mustard as well as everything else in the recipe
    I did add a splash or two of H2O to keep from drying out
    It was a hit and will definitely be doing again

    One thing I would recommend is to either lightly boil or microwave and drain the potatoes and crisp them in a separate pan.5 stars

  46. Um, yum! This has become a family favorite. Even my picky 10 yr old son likes it! I usually make it as written, but tonight I could not for the life of me, find my little bottle of hot sauce that I have just for this recipe. So I had to leave it out. BUT! I had crispy fried jalapeños, like the fried onions that go on top of green bean casserole. So yummy! My husband prefers the hot sauce but I think I prefer the jalapeños. So next time I’ll leave out the hot sauce, but still have the bottle out for my hubby while I enjoy the crispy jalapeños.5 stars

It tastes great, but despite cooking the potatoes for 12-15 minutes before adding the meat, they were no where near done 6-8 minutes after adding spices. 25 minutes later, they still aren’t tender enough. I think the key would have been to cook (much) longer in the beginning or roast first.3 stars

    1. Hi Kelly! I’m sorry to hear you had trouble with this recipe. As stated in Step 1 they would be still too firm to eat at the 6 minute mark. If the potatoes are cut small enough, I assure you, after multiple testing they are in fact cooked at 14 minutes. It’s hard to know what went wrong without being in the kitchen with you. Glad you were still able to enjoy it!

  53. Why Oregano?

    We found the oregano to be over-powering in a bad way and it seemed to compete with and overwhelm the other flavors.

    While I am sure I’d love a variation of this, this particular recipe won’t be hanging around.3 stars

  55. Great recipe but definitely needs more liquid during the cooking process especially if using lean ground beef.
    I added about a cup of water and a teaspoon of beef concentrate.

  64. We really loved this dish. We served on top of brown rice with cheddar cheese. My husband added sauerkraut to his. Also, I didn’t have smoked paprika so I just used regular paprika and a few drops of liquid smoke. And I didn’t have any green onions and I used russet potatoes instead of yellow, but it still turned out amazing!5 stars

  66. I needed something using ground beef and potatoes for dinner tonight since I hadn’t soaked any rice in advance, and this recipe sounded easy and tasty. My kids kept calling it chili, which I can understand since we topped it with cheese and sour cream and the flavor profile is slightly similiar, lol. We liked it but I think next time I would reduce the smoked paprika to 1 tsp and do the other tsp regular paprika. I also added 1 TBS tomato paste for some extra umami and I liked the extra flavor it added to the dish. This came together pretty quickly and it was quite satisfying–thanks!4 stars

The only difference I made was to dial back the salt to 1/2 tsp; the rest of the spices were spot on.   73. I made this for my family tonight, I added a cup of beef broth because my beef had no drippings to speak of and I wanted to make sure the potatoes were soft.   82. This recipe was very tasty and easy. Everything went well together. I didn’t have hot sauce so I added a few teaspoons of juice from a jar of pepperoncini and a teaspoon of Valentina. It turned out very yummy. We fried an egg and put it on top because the white rice was way too much carbs. The egg was very good. I will be making this again for sure!5 stars

  83. This was so delicious! I had to make a few modifications because I wound up not having some ingredients on hand. I didn’t have red pepper so I used some sun-dried tomatoes and I used half a packet of zesty Italian seasoning mix along with the smoked paprika. We topped it with sour cream and shredded sharp cheddar and it was exquisite! Definitely a great, new, way to use up some of the potatoes I’ve been getting in my weekly CSA!5 stars
