Small but mighty chia seeds make for a delicious breakfast (or dessert!)

Chia seeds are teeny-tiny powerhouses of fiber and protein. Just 2 tablespoons contains 6g of protein and 10g fiber, WOW!
They also have the incredibly unique quality of plumping up into a pudding-like texture when combined with liquids, making them ideal for creating creamy, healthy treats.
Chia puddings, like Chocolate Chia Pudding and Coconut Chia Pudding, have been around for a while, but what I love about this particular chia pudding recipe is that it uses Greek yogurt instead of the typical coconut milk.
Not only does Greek yogurt make this chia pudding the creamiest in the land, but also it bumps up each serving to a whopping 24g protein!
Chia pudding is a canvas for a wide variety of flavors and toppings. I feel in love with matcha desserts in Japan, and this pudding reminds me of the sweet treats I picked up from roadside stands.
Matcha is easy to overdo, but this pudding has just the right balance. It’s subtle, so even if you’re not usually a matcha fan, it’s a great introduction.
Key Ingredients
You’ll find the full list of ingredients in the recipe card below, but here are some notes to keep in mind.
- Chia Seeds. Widely available at most grocery stores and online here, they’re a great way to add an extra fiber and protein boost to a wide range of recipes, like smoothies, oatmeal, and even salads.
- Greek Yogurt. Chia seeds will plump in any liquid, but for pudding I love yogurt because of the extra creamy decadence it provides.
- Matcha Powder. Finely ground green tea made from whole tea leaves, matcha powder tastes naturally earthy and slightly sweet. You can find it in many grocery stores and online here. A little goes a long way.
How to Make Matcha Chia Pudding




Combine. Whisk together the yogurt, milk, maple syrup, chia seeds, matcha, and vanilla.
Chill. Refrigerate the pudding for at least 4 hours, or up to overnight. Stir, then top with vanilla Greek yogurt and a dusting of matcha powder.
Serve. Stir, then top with Greek yogurt and a dusting of matcha. ENJOY!
To Meal Prep Bigger Batches
Multiply the recipe to make as many servings as you’d like. After the pudding thickens, layer it into jars with vanilla Greek yogurt, cover, and refrigerate for up to 4 days. Dust with matcha powder before serving.

Ingredients
- ¾ cup plain Greek yogurt
- ¼ cup milk of choice I use Fairlife
- 1 tablespoon pure maple syrup
- 2 tablespoons chia seeds
- 1 teaspoon matcha powder plus additional for dusting the top
- ¼ teaspoon vanilla extract
For Layer and Topping
- vanilla Greek yogurt
Instructions
- For 1 serving: In a bowl, whisk together the yogurt, milk, maple syrup, chia seeds, matcha, and vanilla. Let sit at least 4 hours or overnight. Stir, then top with vanilla Greek yogurt and a dusting of matcha powder.
- To make in jars: Multiply the recipe as desired. After the pudding rests, layer it into jars with vanilla Greek yogurt (I do a thick layer of matcha pudding, thin layer of yogurt, thin layer of pudding, then finish with another thin layer of yogurt). Refrigerate for up to 4 days. Dust with matcha powder just before serving.

This was a nice recipe to try. I’m not usually a big chia pudding fan, but this was better than I expected. The matcha gives it a nice twist, and it’s a good option for a lighter breakfast or snack.
