Rotisserie chicken is my favorite weeknight cooking hack!

cookbook author erin clarke of well plated

Weeknight dinners donโ€™t have to be all or nothing!

I find the sweet spot is somewhere in between, where a few smart shortcuts make dinner faster without sacrificing flavor.

Enter one of my favorite dinner hacks: rotisserie chicken.

I grab one every time Iโ€™m at Costco, and it instantly sets us up for a few easy meals. Itโ€™s versatile, it saves a ton of time, and it makes takeout way less tempting when dinner is already halfway done.
