Fully LOADED with crisp veggies, turkey, avocado, and cheese, smeared with a high protein Greek yogurt artichoke spread, and finished with pesto, it’s one of my favorite sandwiches I’ve ever made.

Turkey Artichoke Pesto Sandwich

Ingredients
- 2 slices whole wheat bread toasted
- 3 tablespoons plain Greek yogurt
- ¼ cup marinaded artichokes chopped and patted dry
- 1 green onion thinly sliced, about 1 1/2 tablespoons
- 2 slices white cheddar provolone, harvarti, Swiss…whatever you like!
- Fresh spinach
- Sliced deli turkey or chicken
- Sliced tomatoes
- Sliced cucumber
- Sprouts
- Salt and pepper
- 1 tablespoon Basil Pesto
Instructions
- In a small bowl, mix together the Greek yogurt, artichokes, and green onions. Spread over the bottom of one of the slices of bread.
- Top with the sliced cheese, spinach, turkey, tomato, cucumber, avocado, and sprouts.
- Spread the other slice of bread with pesto, then place on the sandwich, pesto-side down.
- Slice and enjoy!

Made this for lunch today and it was really good. The artichoke yogurt spread was something different for me, but it actually worked really well with the pesto. I didn’t have sprouts, so I just added a little extra spinach. Definitely a fresh and tasty sandwich.

I wasn’t sure how the artichokes would work in a sandwich, but they blended surprisingly well with the yogurt and green onions. Everything felt balanced, and the textures were nice with the cucumbers and sprouts. Loved it! Thank you for sharing.
Just finished eating this and I already want to make it again tomorrow. The flavors work really well together, especially the pesto with the turkey and cheese. I might toast the whole thing next time to melt the cheese a bit, but it’s great as-is too.
