How to Make the Best Turkey Chili Recipe

The Ingredients

  • Ground Turkey. Lean ground turkey is excellent for chili. It adds wonderful flavor to the chili and helps make it more satisfying. Turkey is low in calories and rich in protein, vitamins, and minerals.

Substitution Tip

If you prefer a beef chili, you can swap the turkey for lean ground beef.

  • Garlic + Onion. Building blocks for a deeply flavorful chili.
  • Vegetables. Bell peppers, sweet potatoes, carrots, and celery help make this chili incredibly nutritious and flavorful. The varying textures of these veggies also create a wonderful chili consistency.
  • Tomato Sauce + Diced Tomatoes. The tomato sauce adds liquid, and both provide rich tomato flavor.
  • Spices. We’re using chili powder, cumin, paprika, cayenne, salt, and pepper. This mix of spices is what gives chili its distinct flavor. They add warmth, earthiness, a touch of sweetness, and spice.
  • Red Pepper Flakes. Just a pinch adds the right amount of heat.

The Directions

  1. Sauté the Vegetables. Cook until soft.
  2. Brown the Turkey. Stir frequently to break up any big chunks.
  3. Cook the Chili. Add the remaining ingredients, bring the mixture to a boil, then allow it to simmer for 45 minutes.
  4. Serve. Adjust seasonings as desired and ENJOY!

Turkey Chili Toppings

  • Avocado. One of our favorite chili toppings! Creamy avocado slices pair incredibly well with the chili. Homemade Guacamole is delish too.
  • Jalapeño. For those who enjoy their chili with a kick. For heat with less spice, use Pickled Jalapeños.
  • Shredded Cheese. This one is a crowd-pleaser! Monterey Jack, pepper Jack, or cheddar cheese would be tasty.
  • Greek Yogurt or Sour Cream. Add a dollop of Greek yogurt or sour cream for something cool and creamy.
  • Cilantro. Looks beautiful on top and adds freshness.
  • Tortilla Chips or Strips. Having something crunchy on top is delicious! (I especially love this topping for my Green Chili Recipe.)
  • Green Onion. For freshness and crunch.

Storage Tips

  • To Store. Turkey chili will keep in the refrigerator for about 4 days.
  • To Reheat. Rewarm leftovers in a pot on the stovetop over medium-low heat or in the microwave. Add a splash of water or chicken broth to help loosen it if needed.
  • To Freeze. Turkey chili can be frozen for up to 3 months. Let thaw overnight in the refrigerator before reheating.

Meal Prep Tip

Chop all the vegetables up to 1 day in advance, storing them in separate airtight storage containers in the refrigerator.

Recipe Tips and Tricks

  • Bring on the Beans. If you can’t imagine a bowl of chili without beans, have no fear! You can easily incorporate beans into this recipe. Black beans, pinto beans, or kidney beans would be great.
  • Make it Thick. For those who like a thicker chili (me!), don’t add any water in Step 2. You can even simmer your chili a little bit longer if needed.
  • Build Big Flavor. Each step of making this chili is vitally important to creating exceptional flavor. Browning some of the ingredients first (vegetables and turkey) is the secret to amazing chili. Don’t be tempted to take shortcuts!

Ingredients
  

For the Healthy Turkey Chili:

Optional Turkey Chili Toppings:

  • Sliced fresh avocado
  • Thinly sliced jalapeño
  • Shredded cheese
  • Plain non-fat Greek yogurt or sour cream
  • Freshly chopped cilantro

Instructions
 

  • Heat the oil in a Dutch oven or large soup pot over medium heat. Add the garlic, onions, bell peppers, carrots, celery, and sweet potato. Sauté for 5 to 7 minutes, until soft.
  • Add the turkey and cook until browned, 5 to 7 minutes, stirring often to break up the chunks.
  • Once the meat is browned, add 1 1/2 cups water, tomato sauce, diced tomatoes in their juices, chili powder, cumin, paprika, cayenne, salt, black pepper, and red pepper flakes. Bring to a boil, then reduce to a moderate bubble. Let cook, uncovered, until the chili thickens, about 45 minutes, stirring every so often so that the chili does not stick to the bottom. If the chili becomes too thick, add a little water to reach your desired consistency.
  • Toward the end of the cooking time, taste and adjust the seasonings as desired. Add more cayenne pepper for an extra kick and more salt and pepper as needed. Serve hot with desired toppings.

  • Lexi’s original version of the chili calls for slowly simmering it (in lieu of my “moderate bubble”) on the stove for 3 hours, adding more water as needed. Since I started cooking the chili later in the day (ahem, I was running late), I cooked it more quickly, which you will see reflected in the recipe directions.
  • TO ADD BEANS: Add 1 (15-ounce) can black beans and/or 1 (15-ounce) can kidney beans.
  • TO STORE: Refrigerate chili in an airtight storage container for up to 4 days.

Why Are There No Beans in This Turkey Chili?

I’m typically in camp “beans” (reference: Instant Pot Vegetarian Chili, and Crockpot White Chicken Chili), but for this particular turkey chili recipe, I decided to take a walk on the no-bean chili side and omit them. It’s plenty thick, rich, and filling on its own, and I felt that the no-bean route allowed the savoriness of the meat and the depth of the spices to shine. That said, if you are a firm believer that chili should have beans and want to toss in a can of pintos or red kidneys, your healthy turkey chili will still be fabulous.

Can I Make This Recipe Vegetarian?

I haven’t tested the recipe without meat, and I’m afraid it wouldn’t be as flavorful without it. However, my Vegetarian Chili and Instant Pot Vegetarian Chili are great options for those who want meat-free chili.

Is Ground Turkey a Good Substitute for Ground Beef in Chili?

Yes! We love using ground turkey in our chili recipes, as it’s a great source of lean protein and still adds hearty flavor. If you prefer using ground beef in your chili, you can certainly swap it.

Can I Make Turkey Chili in the Crock Pot?

While I haven’t tried it myself, other readers have reported success with it. If you’d like to experiment, I’d suggest following the recipe through step 2 and then transferring over to the slow cooker and adding the remaining ingredients. Similar chili recipes cook for 3–4 hours on low and 4–6 hours on high, but since that depends on the slow cooker, you’ll want to check for doneness earlier than that. The liquid level may need to be adjusted too, as it won’t evaporate as much as it would on the stove.

  2. Definitely beans for us! We like the texture of this great veggie and to us, it isn’t chili without the little guys. However, I’d try this recipe because it has so many other different ingredients that I don’t typically use. I just made some chili this past week and am still using our fresh-roasted-frozen tomatoes from our garden. To be perfectly honest, I just like chili no matter what the recipe! Being in the midwest just means chili and soups in the winter – enough said, huh?

  3. This sounds sooo perfect for a chilly day in Phoenix (don’t laugh but I am “freezing” right now, bundling up under extra blankets at night, shivering in the ’60’s during the day). Anyways, yum! 
    I have bean / no bean rules: if the chili is to be poured over tortilla chips, hotdogs, or baked potatoes – no beans; if the chili is for a meal-in-a-bowl with sides or garnishes – beans. I prefer kidney or black beans in chili. Pinto beans belong in an entirely different dish called Chili Beans (my mom makes these with chorizo and enchilada gravy among other things ?). 5 stars

This sounds so good, I am definitely a bean person. in the chili I make at home I use a can of black bean with a can of light red kidney beans. but my mother in law is a no bean person, I will have to get her this recipe for her to try. When you look at what I know as the original name of the dish, “chile con carne”, I would say that chili should have beans.  I even put beans in a paleo chili recipe.  Part of why I did that was to make it a nutritionally complete one dish meal.  That said, the best way to have chili is the way you prefer it.

  24. I’m a beans in the chili girl and my husband is a no beans guy. One time my hubby thanked me for making him a special batch of no bean chili. I had no clue what he was talking about – I love him but I don’t LOOOVE him enough to make him bean free chili. Once I thought about it for a while,  I’m about 98% sure he was eating pasta sauce!!   33.  You know, I never would have considered making beanless chili until I was introduced to Skyline. I was hesitant… I mean, on top of taking my beans away, I ‘have to’ eat it over spaghetti?!  It was too much to ask. But my skepticism was soon silenced by my embarrassing slurping noises  as I devoured my whole bowl in way too short an amount of time. Oh. Em. Gee. So flipping good!

     That being said, I think skyline chili is it’s own entity, and being such, it can get away with its beanless nature with no real repercussions.  Classic chili will always be beany chili in my cook book. :)

  40. What is chili without beans?? We love them in our chili! Except when preggers… my work had a chili cook off when I was pregnant. I ate so much chili, I landed in the hospital the next day!   48. I’ve made a lot of different chili recipes. This was….hands down…my favorite. I used the turkey plus 1/2 lb of navy beans. It was outstanding! It definitely has a spicy kick so if you are sensitive to spice maybe only 2 tbsps of chili powder.

  51. I’m making your chili right now. It has a lot of spice and although I love it extra spicy my two little ones won’t. Like the heat. I added a teaspoon of honey so try to kill the spice, but now I just taste a little sweet and the spice kicks in on the background. Any suggestions how I can tone down the spice?

    1. Hi Cari, I’d first try adding another can of tomato sauce. You may need to up the other seasonings a little bit to compensate, but it should help dilute the spice a bit. I hope that helps!

  53. Made this last night and it is SO great! My husband was like carrots and celery in chili? But it was AMAZING and anytime I can get extra veggies, I’m all about it.   55. My husband & I made it this weekend (including the sweet potato but no beans) and it was seriously the best chili we have ever made. All of the flavors and ingredients blend so well together! We actually did 1/2 turkey 1/2 bison meat just to try something different and that was yummy also. Topping it with plain greek yogurt makes it so yummy also!
    I kind of liked having it on the stove vs the slow cooker and was pleasantly surprised how everything cooked together so quickly. We will be making this again! It would definitely win a chili contest!

Past that, this recipe is a hit! I wholly recommend the avocado slices. If you are looking for more vitamins, try including spinach or kale into the recipe.

I am definitely going to try again this coming week but I wanted to give an update on what we did with the first batch.. my husband mentioned all the guys on base LOVE spicy food and would probably demolish this dish, since it made about 9 cups (I know because that’s the size of the Tupperware I used), I told him we can’t waste it and to bring it in.. He said it was a HUGE HIT.. I guess they have an annual chili cooking contest and they all asked my husband to make it this year.   77. Adding all the onions, peppers, turkey etc all at once to sautee is impossible. The sweet potatoes don’t even touch the pan because there is so much. I had to do the turkey in a separate pan, and even doing as recommended, two pounds at once is impossible to brown the turkey. This is ridiculous.

I never meant for that to be a problem, and I would suggest trying a larger pot/pan next time. (I typically cook it in a 5.5-quart dutch oven and haven’t had issues getting things to fit.)

If you’d like to experiment, I’d suggest following the recipe through step 2 and then transferring over to the slow cooker and adding the remaining ingredients. Similar chili recipes cook for 3–4 hours on low and 4–6 hours on high, but since that depends on the slow cooker, you’ll want to check for doneness earlier than that. The liquid level may need to be adjusted too as it won’t evaporate as much as it would on the stove. If you do give it a try, I’d love to hear how it turns out!

I stopped including sodium info because it can vary so much depending upon what products you used, and I found a lot of conflicting info online, so ultimately I didn’t feel comfortable publishing it because sometimes it wasn’t even in the ballpark. If you’d like to calculate it yourself, there are lots of free tools online (myfitnesspal.com is popular). I hope that helps!

  134. This is our very favorite chili. I love the flavors and the ground turkey is such dense meat, it is truly satisfying. My husband prefers without the carrots and celery, so I add extra chiles – poblanos and serranos or anaheims – whatever I have on hand. I also add the spices in the first step to cook them down a bit before proceeding with the rest of the recipe. This dish is truly spectacular tasting. No one I’ve served it to guessed it was ground turkey and we all appreciate how remarkably healthy it is. I can have a very generous serving for very few Weight Watcher points, which is a HUGE bonus for me.

  136. Prepare to be blown away by this turkey chili – it is the best I have ever tasted. I simmered it for the full 3 hours for a rich, thick dish with a nice little kick. I took it to a girl’s weekend for the Friday night dinner and we ended up eating it for Saturday’s dinner also with the host gladly keeping the leftovers for a last solo feast after we left!5 stars
