I’ve lost count of the number of times I’ve made this crock pot recipe for shredded buffalo chicken with Greek yogurt sauce since I first shared it last year. In a direct match up between our frequency of eating it and the number of plaid shirts in my closet (my other fall uniform), I might even give it to the healthy buffalo chicken.
If you’ve hung out with me September through March, you know this is not a light statement.
I own A LOT of plaid and somehow keep finding a need to purchase more. A few weeks ago, two of our friends asked me to estimate the number of plaid shirts in my closet. I guessed seven, then went home and counted.
Um, I forgot a few.
Also, do dresses count? Please say no, because I kind of have my eye on this one. It would be so cute with boots!
OK, enough with buffalo check. Let’s get to the buffalo chicken recipe!
Healthy Buffalo Chicken
This Slow Cooker Buffalo Chicken recipe is one of a handful of healthy crock pot chicken recipes on my site that I make over and over.
Ben loves it, I love it, it’s beyond easy, and despite its decadent taste, it’s low calorie too.
Whether you need a low-maintenance weeknight meal or a healthy reset after a particularly indulgent weekend, this Healthy Slow Cooker Buffalo Chicken hits the spot every time.
Why I Love These Buffalo Chicken Sweet Potatoes
I stole the idea to pair buffalo chicken with sweet potatoes from a friend who ordered a side of buffalo dipping sauce with her sweet potato fries at dinner.
At first, I thought it sounded odd, but the combination of the spicy buffalo sauce with the sweetness of the potatoes was addictive. I knew I had to try it at home.
Although I’m no stranger to having fries for dinner, I wanted this slow cooker buffalo chicken to fit a healthy weeknight dinner theme, so I served the shredded chicken over baked sweet potatoes instead. Dynamite!
The baked sweet potatoes gave me the sweet-spicy flavor pairing that I was after but in a lighter, healthier way. They also provide a built-in serving of (unfried) veg.
For maximum simplicity, I made the buffalo chicken in the slow cooker. I poured the buffalo sauce right over the top, and by the time the chicken was ready, it was fall-apart tender.
The final flourish is a blue cheese–Greek yogurt drizzle. If you aren’t into blue cheese, we can’t be friends you can swap for feta cheese or omit the blue cheese completely. These Slow Cooker Buffalo Chicken Sweet Potatoes will still be delicious without it.
In addition to being a tasty weeknight dinner, the healthy Buffalo chicken stuffed sweet potatoes are also easy to multiply for a crowd.
If you have any game watches or football parties on your agenda—events for which the presence of buffalo chicken teeters between “strongly encouraged” and “mandatory”—this recipe is a great way to feed the hungry hoards while leaving a little extra wiggle room in your diet too.

Slow Cooker Buffalo Chicken Sweet Potatoes

Ingredients
For the Slow Cooker Buffalo Chicken:
- 1 ½ pounds boneless skinless chicken breasts (about 3)
- ¾ cup hot sauce such as Frank’s
- 2 tablespoons coconut oil
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- ½ teaspoon ground cayenne
- 4 sweet potatoes
- 1 tablespoon cornstarch mixed with 1 tablespoon water to create a slurry
- Chopped green onions for serving
For the Blue Cheese Yogurt Dressing (omit to make dairy free):
- ½ cup nonfat plain Greek yogurt
- 2 tablespoons milk
- ½ teaspoon white vinegar
- ¼ teaspoon ground black pepper
- ⅓ cup crumbled blue cheese plus additional for serving
Instructions
- Lightly coat a slow cooker with nonstick spray (I used a 6-quart but believe a smaller size would be fine too). Place the chicken in the bottom of the slow cooker.
- Place the hot sauce, coconut oil, salt, garlic powder, and cayenne in a microwave-safe bowl or measuring cup. Microwave until the coconut oil is melted (about 45 seconds), then stir until smooth. If you prefer not to use the microwave, melt the ingredients together in a small saucepan on the stove. Pour the sauce over the chicken. Cover the slow cooker, then cook for 1 1/2 to 2 1/2 hours on high or 4 to 5 hours on low, until the chicken is cooked through and reaches an internal temperature of 165 degrees F. Remove the chicken from crockpot and shred.
- About 30 minutes before the chicken is done, bake the sweet potatoes: Preheat your oven to 400 degrees F. Prick the sweet potatoes all over with a fork, then place them on a foil-lined baking sheet. Bake until the sweet potatoes are tender, about 45 minutes to 1 hour, depending upon the size of your sweet potato. Turn off the oven and leave the sweet potatoes inside to keep them warm.
- Once the chicken is shredded and while the sweet potatoes bake, mix the cornstarch and 1 tablespoon water together to create a slurry. Add it to the cooking liquid in the slow cooker, then whisk to combine. Cover the slow cooker and cook on high for 30 minutes to allow the sauce to thicken, stirring once halfway through. Once thick, return the chicken to the slow cooker and toss to coat.
- For the blue cheese yogurt topping: In a small bowl, whisk together all of the ingredients—Greek yogurt, milk, white vinegar, black pepper, and blue cheese. Split open the sweet potatoes, then top with the crock pot buffalo chicken, a drizzle of the blue cheese dressing, and green onions. Enjoy hot.

- Store leftover buffalo chicken in the refrigerator for up to 4 days or freeze for up to 2 months.
- Feel free to double this recipe to feed a larger group. You may need to adjust the cooking time accordingly.

I LOVE spicy and salty with sweet potatoes. This is such a perfect idea! I also always feel like eating nothing but vegetables after a weekend of splurging and it never happens? Chocolate always wins! These would definitely be a great compromise though!

Instead of using chicken, would it work to throw tofu in the crockpot and cook it the same way for a vegetarian option?
Charlie, this note totally makes my day!!! I’m so happy that you enjoy my recipes. As far as your question, this isn’t something I’d recommend, because I think the tofu would fall apart and become mushy in the crock pot. You could try cooking into according to this method, then tossing it in Buffalo sauce. It would definitely be an experiment though, so use your best judgement.
What size sweet potato did you use to calculate the nutrition information since they vary greatly in size? Recipe looks amazing!

I question the non-fat yogurt and blue cheese as PALEO. Ompliant…. not in anything I’ve been taught about PALEO….. PALEO Is NON-DAIRY……..
Hi Winney! You are correct that the dairy is not Paleo. However, the sauce is completely optional. Simply omit it, and you will still have a delicious and healthy meal.
This looks great! Would it ruin the recipe to omit the cornstarch? (Cornstarch isn’t allowed on Whole30.) Do you have any substitutions for cornstarch?
Analysa, if you omit the cornstarch, the sauce will not be as thick. Is arrowroot starch whole 30 approved? If yes, that’s a great substitute!

Is there a mild alternative to the buffalo sauce? I’m just worried that it will be too spicy for my liking! Other than that, I cant wait to try this recipe!
Hi Alex! You could see if a brand like Frank’s makes a mild red pepper sauce. To be honest, there really isn’t a good swap otherwise. I would suggest cutting down on the amount of Buffalo sauce and seeing if that helps. It’s really not too terribly spicy to begin with, so you can always add less.

Shannon – friends of mine like to use ranch dressing as an alternative to a blue cheese dressing. I LOVE blue cheese, but if you want an alternative, ranch might be an option.

We had these for dinner tonight and they were DELISH! I wanted to share a trick I tried. We are big fans of slow cooker liners in our home. So I spread a piece of foil in the bottom of the SC, placed the scrubbed and poked sweet potatoes on the foil then placed the liner over the potatoes and tucked the edges into the crock edges. This allowed us to eat much quicker after work! I then followed the recipe for the chicken. The one thing I did different with the sauce is we used a sauce that is sold here in NC called Num-Num sauce. It’s a cross between BBQ and buffalo sauce and comes in mild and spicy. I used a little of both then added sriacha to mine before I ate it since I like my food a little spicier than the hubby does. They were great!

Different calculations can vary, depending upon the brands of ingredients that you buy, the size of the vegetables used, etc. I provide this information as a service, rather than a something that is guaranteed to be 100% factually accurate, which again I clarify in the FAQs. If exact calorie counts are important to you, then I recommend that you calculate it yourself using the exact ingredients that you have at home. The information also depends on serving size. For example, if you calculate this recipe with 100% of the blue cheese sauce, it would be higher in calories. The serving size in the nutritional information actually calls for just 2 tablespoons of the sauce. I hope that that is helpful!
Made this for dinner tonight and was very pleased with it. With the amount of chicken I had it made enough for 6 servings, and I gave us each half a sweet potato, based on their size. The recipe came together very nicely. When I was looking for blue cheese, I found a smoked blue, which I bought, and which worked well in the recipe. Next time I make this I would have to use less hot sauce – it turned out hotter than my stomach can take and than my husband prefers. It felt good to use my crockpot for something other than granola and yogurt. Thanks for a keeper recipe. (My rating is less than 5 stars because of the heat level.)

I made this, but I think using frozen chicken was my mistake. Unfortunately the sauce was very watery and didn’t thicken until I added a lot more cornstarch. Would recommend making this with already thawed chicken:)

This is such a creative combo! Brilliant recipe. Being short on time, I made the chicken in the instant pot (6 minutes on HP), using 4 oz buffalo sauce + 4 oz water and about a tablespoon of ranch seasoning I had on hand. I thickened the sauce at the end with cornstarch as I was shredding the chicken. It was delicious and has earned a spot in our regular dinner rotation. Thank you! Your recipes are fabulous.

I have read all the comments and i may be the only one who noted the sauce was too hot!…i used Lillie Q’s Hot Sauce… Is it that much hotter than Frank’s? How can I still achieve the flavor but not so spicy?
Hi Vanessa, I haven’t tried Lillie Q’s hot sauce, so I’m not sure how it compares to Frank’s as far as spiciness goes. Buffalo sauce generally is on the spicier side, but there may be some mild versions of buffalo sauce at the grocery store!

Was just as easy as it was delicious! If looking to cut down on time, try microwaveable sweet potatoes, and replace the dressing with Bolthouse Blue Cheese Dressing (made from Greek yogurt, so same flavor)

What would happen if you left out the coconut oil(if trying to make it lower fat)? Made this recipe last night and LOVED ittttt!!!!
Hi Alexis, the coconut oil helps the sauce coat the chicken, and adding a little oil or butter is common in similar recipes, like hot wings. I haven’t tried the recipe without it, but you could definitely experiment!
Can this be adapated for the stove top? Or could I cook it longer on low if I use frozen chicken? I’d like to do this as a weeknight meal and would need it to sit in the crockpot for about ten hours or just cook it on the stove. Thank you!
Hi Stacy! I don’t recommend frozen chicken, as that can cause food safety concerns. I do think you could cook this on the stovetop though! I would recommend doing the sauce and chicken separately. Reduce the sauce with the cornstarch in a pot, and then toss it with cooked, shredded chicken. She did 6 minutes on high pressure, 4 ounces of buffalo sauce, and 4 ounces water, and then thickened with cornstarch afterward. If you decide to experiment, I’d love to know how it goes!

Love this recipe! Made the chicken in the IP while the sweet potatoes baked in the oven, so easy and delicious. My only regret was not doubling the amount chicken so I had more leftovers!

Hi Andrew, I have not tried this recipe in an Instant Pot, so unfortunately I don’t have any specific guidance to offer. Chicken breasts usually cook in about 7-10 minutes on high/manual, but I can’t guarantee that the sauce is enough liquid for the pot to come to pressure. If you decide to experiment, I’d love to hear how it goes.

I have made this meal more times than I can count (to include for dinner today, yay) and it never disappoints. It is my favorite, most shared, crockpot meal to date. My husband doesn’t typically go for spicy/heat but he also really enjoys this meal (however I’m usually helping myself to the scraps he leaves behind on his plate…I’m telling you, this is my favorite!!). I typically serve this alongside roasted brussel sprouts, broccoli, green beans etc. and am so sad when the leftovers are gone (which is basically when I start scheming a plan to get it back in the dinner rotation ASAP).

I made this for dinner tonight. First recipe from this blog that I’ve tried but will definitely be following and making more. This was delicious. I never woukkd have thought about putting it over sweet potatoes but it evened out the heat perfectly. And the homemade blue cheese dressing to drizzle on top. So, so yummy. This is a staple recipe in our house. We love it so much! And since live in Texas and eat avocados on EVERYTHING, we swap out the dressing for sliced avocados, and it is AMAZING … and it’s a great Whole 30 compliant addition!

The chicken was not ready to be shredded after the hour and a half time. So I just took the chicken out, mixed the starch in and added the chicken back in and shredded when done. Not much of a difference I would think. Yummy!

My husband and I are both home sick and in self-imposed q; therefore, we can’t run to the store for ingredients so I was missing a few.I thawed my chicken and ordered Frank’s hot sauce from Amazon and today I made your Healthy Buffalo Chicken on Sweet Potatoes. I was scared to death about that much hot sauce and cayenne but the flavor is perfect! I just put the shredded chicken back in the pot and am waiting to serve. Hi Bill! I’d suggest making your chicken according to this post for shreddedInstant Pot Chicken and reducing the sauce separately with the cornstarch in a pot, then tossing it with cooked, shredded chicken.
The coconut oil gave it a weird taste. Will sub a little butter next time. Was so surprised it wasn’t too spicy. I did stir a little a Greek yogurt into one portion to suit the taste of one family member who doesn’t do any heat at all.

Hi Jenna! I do think you could cook this on the stovetop. I would recommend doing the sauce and chicken separately. Reduce the sauce with the cornstarch in a pot, and then toss it with cooked, shredded chicken. Christina, I’m afraid that there’s not a swap for classic hot sauce here—I’ve never heard of a more mild version. If you’d like it less hot, I’d simply use less or try to tone it down with some honey and then serve with Greek yogurt to cool it off further.

Peg, you could do regular white potatoes or serve it on a bun or as a lettuce wrap or regular wrap to name a few!
I made this with 5 chicken breasts instead of 3 and just added a little more hot sauce, not much more. Kept all the other ratios the same. I had enough to load up 4 medium sized sweet potatoes and used the leftover chicken and homemade greek yogurt blue cheese dressing to make buffalo chicken dip to serve with some celery. Added half a block of cream cheese and and a big handful of shredded cheese. SO GOOD! Will definitely make again!

Hi Brooke, if you omit the cornstarch, the sauce will not be as thick. Is arrowroot starch whole 30 approved? If yes, that’s a great substitute! Hope this helps!
Very good recipe and will definitely make again! I cooked the sweet potatoes in the slow cooker alongside the chicken. Saves extra steps and a pan. Just wrap each potato in foil, then stack them in one half of the cooker and the chicken on the other half. Mixed all the seasonings, coconut oil and half the Buffalo sauce and pour over just the chicken (it will spread a little but not much since only half the sauce and the foil keeps it off the potatoes). I added the rest of the Buffalo sauce along with the corn starch slurry. The potatoes were done 30 min prior to the chicken, but I left them in with no problem – they just won’t hold a “boat” shape after you cut them (more like an open faced sandwich :) )

Let me start by saying that my husband and I love this recipe. I’ve made it many times in my crock pot but today I was in a pinch and needed to make it in my instant pot. OMG Soo tasty, just like the original recipe but quicker. Here’s what I did. I turned the instant pot on saute to melt the coconut oil like she did in the microwave. I added the remaining ingredients and whisked to combine. Here is the trick…since the recipe calls for 3/4 cup liquid (hot sauce) I added a 1/4 chicken broth/hidden valley mix I had leftover from making ranch chicken for my kiddos. They can’t handle the heat so I made their ranch chicken in the IP before making ours. I then added the chicken and coated with the sauce using a spoon. Set the IP to manual for 10 minutes. I let it natural release for 10 minutes. Shredded the chicken while I set the IP to saute and added the slurry. I saute the sauce with the slurry for 5 minutes stirring often. Added the chicken back to the instant to coat in the sauce. And DELICIOUS 😋 thanks for this healthy tasty recipe!

This is a staple in our house. I’ve been making it for years! My boyfriend is so picky, so I swap out regular potatoes for him. But we do this for meal prep, dinner, lunch, you name it, we eat it. Its delicious! I love loading it with scallions and a dash of cheddar on top, we do ranch instead of blue cheese.

Alright, eating it right now. Used Kerrygold grassfed Irish butter instead of coconut oil, was too scared that it will come out weird ;) had some expensive bio farm raised chicken breasts, so I used those.
Also had to use Frank’s buffalo instead of original since I found out I run our of it. It’s OK I guess since Frank’s buffalo doest have any added fat in it, just butter flavoring. Cooked for 4h 15min on low.
For the topping I mixed some ranch dip mix with 6% greek yoghurt and chives, also chopped some leftover green chillies. Airfried the potato’s.
10/10 delicious. The cornstarch trick in the slowcooker works amazing. The chicken is so damn tender and delicious. While I don’t usually fall for all this “bio”, “natural” etc overpriced stuff, when it comes to chicken it makes absolutely night and day difference.

I am in LOVE with this recipe and it has been thrown into my rotation regularly. I’ve been working on eating healthier, but still love my comfort foods, so this is a great recipe for me. I typically make the chicken in my slow cooker exactly as specified and serve it for dinner that night with sweet potatoes per the recipe. I use a combination of Frank’s wing sauce & Sweet Baby Ray’s buffalo wing sauce. Since it’s just me and my hubby, I do one sweet potato for each of us and there is always plenty of leftover chicken. I really like eating the leftover chicken on it’s own with some pita crackers for lunch (sometimes add some celery & onion to it…buffalo chicken salad, yum!), and I’ve also whipped up buffalo chicken dip quick and easy for football Sundays with the leftover chicken. Super easy and delicious recipe, and love how versatile it is. I usually skip the bleu cheese dressing (not a fan of bleu cheese) and just add some feta cheese and green onions on top. Awesome and husband approved too :)

Absolutely amazing! I followed the exact recipe and the flavor was spot on — not spicy, perfect buffalo flavor, and the Greek yogurt sauce was delish. We’ve made this two weeks in a row because of how good it is!!! I cooked my chicken on low for 8 hours because of work & it was perfectly fine, and my sweet potatoes in the air fryer for 45 min.
